SPINACH AND FETA NOODLE KUGEL
This spanakopita-inspired version of noodle kugel is loaded with spinach, onions, herbs and feta. If you're looking for a new take on a classic holiday dish or a simple vegetarian side, here's your answer.

- Preheat the oven to 350 degrees F. Spray a 9-by-13-inch glass baking dish with cooking spray.
- Bring a large pot of salted water to boil and cook the egg noodles until al dente according to package instructions. Drain the noodles, drizzle with 1 tablespoon of the olive oil and set aside in a large bowl.
- Heat the remaining 2 tablespoons olive oil in a large skillet over medium heat. Add the onion and scallion whites and cook, stirring occasionally, until translucent and softened, about 7 minutes.
- Add the garlic to the skillet and cook, cooking frequently, until softened, about 2 minutes. Mix in the scallion greens and spinach and cook until spinach is warmed through, about 3 minutes. Season with 2 teaspoons salt and several grinds of pepper. Pour into the bowl with the cooked noodles and gently mix to incorporate the spinach mixture.
- Mix the eggs, cream, sour cream, 2 cups of the feta, dill, parsley, nutmeg, 1 teaspoon salt and several grinds of pepper in a medium bowl. Pour into the bowl with the noodles and gently mix until evenly incorporated. Transfer the noodle mixture to the prepared baking dish and sprinkle the top with the Parmesan and remaining 1 cup feta. Bake, rotating halfway through, until the top is golden brown and the custard is set, about 45 minutes. Let cool for 10 minutes before serving.
SPINACH AND FETA PUFF PASTRY BITES

- Preheat the oven to 375 degrees F.
- Thaw frozen spinach in microwave according to package directions or by running under warm water. Drain spinach, squeezing the excess liquid from it. In a bowl, mix the spinach, feta, garlic, pepper, and nutmeg together.
- Flour a clean, dry countertop or other flat working surface. Lay out the puff pasty on the floured surface. Flour the top of the dough. Roll out the puff pastry until it is half as thick (about 1/8-inch) and about 24 by 12 inches. Trim edges to size if necessary. Cut into 3-inch strips crosswise and lengthwise, making 32 (3-inch) squares. Make sure the squares are well floured then stack them in a little pile.
- Fill a little dish with some room temperature water. Imagine each square you work with is separated in half by a diagonal. Place a couple teaspoons of filling in the top half. Dip a finger into the water and moisten the edges of the top half with water. Fold the bottom half to meet the edges of the top half. Use a fork to seal the edges.
- Place finished pockets on a nonstick baking sheet and bake about 15 minutes until golden brown and puffy. Serve warm.

SPANAKOPITA - GREEK SPINACH-FETA STRUDEL
Easy to prepare, but "complex" in taste. Serve with e.g. sour cream dip/sauce (sour cream, cream cheese, salt, pepper, garlic and parsley). You can either use puff pastry for a richer outcome and taste or phyllo-sheets (about 4). If you don't like your Spanakopita in strudelshape, use phyllo sheets and a buttered casserole and proceed "lasagna-like" (first and last layer = buttered phyllo sheets)

Steps:
- Heat oil in a large frying pan (or skillet) and add chopped onion and minced garlic (adjust amount to your taste).
- Let fry until translucent.
- Add chopped spinach and let wilt.
- Season with nutmeg, vegetable broth granules, salt and pepper.
- Add ricotta cheese and stir to dissolve.
- Crumble walnuts to mixture.
- Add feta cubes and stir again.
- Let spinach filling cool for a couple of minutes.
- Meanwhile heat oven to 175°C and cover a baking tray with baking paper.
- Place puff pastry on baking tray and brush sides with melted butter.
- Pour cooled spinach mixture on pastry and cover two thirds of the pastry with mixture, leave half inch wide edges on the sides and bottom.
- Fold in bottom and sides and roll pastry to a strudel, seam side down.
- Brush with the rest of the melted butter.
- Bake for about 25minutes at 175°C until golden brown. After 15 minutes sprinkle strudel with sesame seeds.

- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
- Mix spinach, Parmesan cheese, cottage cheese, sour cream, shallots, 1 egg, garlic, salt, black pepper, and nutmeg together in a bowl until filling is well-mixed.
- Roll puff pastry onto a clean work surface, a little thinner at the edges. Transfer to the prepared baking sheet.
- Spoon the filling down the middle length of the pastry sheet. Crack 1 egg into a cup but do not beat it. Brush the edges of the puff pastry with egg white and close the pastry around the filling. Close the ends of the roll and carefully turn it over so the seam is on the bottom.

- Preheat oven to 350°F (180°C). Thaw spinach in microwave according to the directions on the package. Stir and set aside to cool.
- While spinach is being defrosted and cooling, finely chop onion and garlic. Heat one tablespoon olive oil in a large frying pan over medium heat. Fry onion & garlic in olive oil until translucent. Remove from heat.
- Using your hands, squeeze the excess water from the spinach and add the spinach to the pan. Stir in dill, salt & freshly ground pepper to taste. Cut feta into small cubes. Stir feta into the spinach mixture. Add about half of the beaten egg and stir together. Reserve the rest of the egg.
- Line baking sheet with parchment paper. Unroll the puff pastry on your baking sheet, leaving it on the paper it is rolled up with. Spread the spinach filling over the pastry, leaving 1/2 inch free all around the edges. Use your hands to distribute the mixture evenly.
