This really is old fashioned! It comes from "The Culinary Arts Institute Encyclopedia of Cooking and Homemaking" which was published in 1940. This wonderful book has been passed down through 4 generations of women in my family. Proof that some of the best stuff is the oldest and simplest.

2 1/2 cups cooked corn (canned is fine)
2 cups diced potatoes
1 tablespoon butter
1/4 cup onion, diced
1/2 teaspoon salt
1/8 teaspoon pepper
1 1/2 cups boiling water
2 cups hot milk
1 tablespoon flour, mixed with
1 tablespoon water

Steps:

  • Combine, in a large pot,all ingredients except milk and flour/water.
  • Cook until potatoes are fork tender.
  • Add milk and flour/water, stirring well.
  • Bring to a boil and allow to cook for 10 minutes.
  • Serve with chopped green onion and shredded cheese as a garnish.

2 tablespoons unsalted butter
4 slices thick-cut bacon, cut into a small dice
2 cups diced peeled sweet potato
2 medium shallots, sliced
2 cloves garlic, chopped
1 small red bell pepper, diced
3 sprigs fresh thyme
1 sprig fresh sage
1 bay leaf
Kosher salt and freshly ground black pepper
1/4 cup all-purpose flour
2 teaspoons yellow curry powder
One 15-ounce can corn, drained
2 cups chicken stock
1 cup heavy cream
1 tablespoon sherry vinegar
1/4 cup minced chives

Steps:

  • In a stockpot or Dutch oven over medium heat, melt the butter. Add the bacon and cook until crispy and most of the fat is rendered, about 8 minutes. Set the bacon aside for later use, leaving the fat in the pot.
  • In the same pot over medium heat, saute the sweet potato, shallots, garlic and bell pepper, stirring frequently, until the shallots are tender and translucent, about 3 minutes. Add the thyme, sage and bay leaf. Season with salt and pepper. Add the flour and curry to the vegetables and stir until incorporated. Cook for another 2 minutes.
  • Add the corn, chicken stock, heavy cream and sherry vinegar. Bring to a simmer and cook, covered, until the sweet potato is tender, another 20 to 25 minutes. Season with salt and pepper.
  • Plate into individual bowls and garnish with the crispy bacon and chives.

6 slices bacon, diced
1 medium onion, chopped
1 cup frozen whole kernel corn
1/2 cup sweet red pepper, chopped
1/2 cup leek, chopped
1 teaspoon fresh thyme, chopped
1 teaspoon fresh marjoram, chopped
2 sweet potatoes, peeled and chopped
2 1/2 cups water
1 (14 1/2 ounce) can chicken broth
2 teaspoons cornstarch
1/2 cup cold water
1/2 cup heavy whipping cream
salt, to taste
black pepper, freshly ground, to taste

Steps:

  • In a Dutch oven, cook bacon until crisp; remove bacon from pan, reserving drippings in pan. Set bacon aside.
  • Cook onion, corn, sweet red pepper, leek, thyme, and marjoram in the bacon drippings over medium-high heat, stirring constantly, until tender.
  • Add sweet potatoes, 2-1/2 cups water, and chicken broth; cook, uncovered for 18 minutes or until sweet potato is tender.
  • In a small bowl, combine cornstarch and 1/2 cup cold water, stirring until smooth. Stir cornstarch mixture into soup.
  • Bring to a boil; cook over medium heat, stirring constantly, until slightly thickened and bubbly.
  • Reduce heat to low; add bacon, whipping cream, salt, and pepper to taste.
  • Cook, uncovered, until thoroughly heated, stirring occasionally. Serve immediately.

2 yellow onions, diced
1 leek, thinly sliced
2 (15 1/4 ounce) cans corn
6 small red potatoes
1 jalapeno pepper, thinly sliced
1 teaspoon cumin
1/4 teaspoon chili powder
2 (15 1/4 ounce) cans creamed corn
1/2 cup milk (to thin the soup)
1 tablespoon fresh thyme

Steps:

  • put a bit of oil in a big stock pan, and add the onions (it will be a lot, i always just run these through the cuisinart to get good thick sections instead of squares and it saves on the tears).
  • cook the onions for ~10 min, until they are clear and a little brown.
  • add the leek and corn, cook for 5 more minute.
  • add the creamed corn and potatoes. if necessary, add milk to thin the soup out a bit and cover the potatoes.
  • stir in the spices.
  • cover and simmer for 20 min, or until the potatoes are cooked through.

I have tried many corn chowder recipes and created this using fresh summer corn. I used Peaches and Cream corn but any fresh corn will do. My five-year-old gives it two thumbs up. Easy recipe to change up if you want. Add carrots for another pretty color.

9 ears fresh sweet corn, husks removed
8 strips bacon, diced
2 tablespoons vegetable oil
1 cup diced onion
1 cup diced celery
1 medium red or yellow bell pepper, diced
3 cloves garlic, roughly chopped
1 medium jalapeno pepper, seeded and minced
6 cups chicken stock
6 medium russet potatoes, peeled and cut into 1/2-inch dice
1 cup half-and-half
4 tablespoons chopped fresh oregano
1 teaspoon ground cumin
kosher salt and freshly ground black pepper to taste
¼ cup sour cream, or to taste
¼ cup shredded Cheddar cheese, or to taste

Steps:

  • Cut the corn from the cobs. Take the back of a large knife and scrape it against the cobs to extract as much of the "milk" as you can. Set both aside in a bowl.
  • Cook bacon in a saute pan over medium-high heat, turning occasionally, until crispy, 8 to 10 minutes. Remove with a slotted spoon and drain on paper towels.
  • Heat oil in a stockpot over medium-high heat. Add onion, celery, bell pepper, garlic, and jalapeno; saute until translucent, about 5 minutes. Add chicken stock and potatoes; bring to a low boil.
  • Lower heat to a simmer and cover the pot. Cook until potatoes are just about tender, 8 to 10 minutes. Add corn kernels and any accumulated "milk," half-and-half, oregano, and cumin. Simmer until corn is tender, about 10 minutes. Season with salt and pepper.
  • Ladle into bowls and garnish with sour cream and Cheddar cheese.

This is a vegetarian recipe I found in "1001 Lowfat Vegetarian Recipes". It has become a winter staple in my house.

2 cups fresh corn or 2 cups frozen corn
1 medium chopped onion
1 tablespoon olive oil
2 cups vegetable stock, I use vegetable bouillon
2 cups unpeeled cubed potatoes
1/2 cup sliced celery
1/2 teaspoon dried thyme
1 3/4 cups skim milk
salt and pepper, to taste

Steps:

  • Saute the corn and onion in the olive oil in a large saucepan for around 5 -8 minutes.
  • Process half of the vegetable mixture and all the stock until smooth.
  • Add potatoes, celery, and thyme. Boil. Reduce heat and simmer until the vegetables are tender, 10-15 minute
  • Stir in milk, and cook until hot, 2-3 minutes.
  • Season with salt and pepper.
  • Note: For thicker soup, add a mixture of 2 to 3 tablespoons of flour and 1/3 cup of water. Heat soup to boiling; stir in flour mixture and boil, stir constantly until thickened, about 1 minute.

3 slices bacon, coarsely chopped
1 cup onion, coarsely chopped
1 cup red pepper, coarsely chopped
1 cup leek, coarsely chopped
1 teaspoon fresh thyme or 1/2 teaspoon dried thyme leaves
1 teaspoon fresh marjoram, chopped or 1/2 teaspoon dried marjoram
1/2 teaspoon salt
1/2 teaspoon black pepper, freshly ground
2 medium sweet potatoes, peeled, cut into 1/2 inch chunks (1 lb.)
1 cup fresh corn or 1 cup frozen corn
6 cups chicken broth
3 cups water, divided use
2 teaspoons cornstarch
1/2 cup half-and-half or 1/2 cup milk
2 cups cooked chicken, cut in chunks

Steps:

  • In stock pot, sauté bacon over medium heat until crisp and browned.
  • Remove bacon and set aside.
  • Add onion, red pepper, leek, thyme, marjoram, salt and pepper to bacon drippings.
  • Sauté for 10 minutes, stirring occasionally.
  • Add sweet potatoes, corn, chicken broth and 2 1/2 cups water to mixture in stock pot.
  • Cook until sweet potatoes are tender (approx. 15 to 20 minutes).
  • Mix cornstarch and 1/2 cup water and stir into soup.
  • Heat to boiling, stirring constantly and cook until thickened.
  • Reduce heat to low, stir in half and half or milk, bacon and cooked chicken.
  • Garnish with fresh thyme, if desired.
