SWEET POTATO, SPINACH AND CHICKPEA BAKE

Number Of Ingredients 13

3 medium onions
6 tablespoons light olive oil
600 g sweet potatoes, cut into chunks
2 red peppers, quartered, de-seeded and cut into thick strips
2 large garlic cloves
2 -3 tsp ras al hanout or moroccan mixed spice
400 g chopped tomatoes
250 ml vegetable stock
400 g chickpeas, drained and rinsed
200 g spinach, fresh or frozen
250 ml sour cream or 250 ml plain yogurt
salt
pepper

Steps:

  • Peel two of the onions and cut each into eight wedges.
  • Pour 4 tbsp of the oil in a large roasting tin.
  • Add the onion, cubed sweet potatoes and peppers and mix well with the oil.
  • Turn the oven to 200c/400F/Gas 6, put the tin in the oven and roast the vegetables for about 35 minutes, turning them half way through.
  • Meanwhile peel and roughly chop the other onion.
  • Heat the remaining 2 tbsp of the oil in a large frying pan and fry the onion until it begins to soften.
  • Add the garlic and spice mix and stir well.
  • Add the tinned tomatoes and their juice, breaking them up if necessary with a wooden spoon. Cook for about 5 minutes.
  • Stir in the stock, then check the seasoning adding salt and a little sugar to taste.
  • Stir in the chickpeas.
  • When the vegetables have been cooking for 35 minutes, pour over the spiced tomatoes and chickpeas and mix well.
  • Turn the oven temperature down to 190C/375F/Gas5 and cook for another 20 to 30 minutes until vegetables are well cooked, turning them half way through.
  • Just before the end of the cooking time, wash the spinach, remove any rough stalks, slice them finely and stir them into the bake.
  • Return the tin to the oven for another 5 minutes.
  • Serve with sour cream or yoghurt.

2 medium onions, chopped
3 garlic cloves, minced
1 tablespoon olive oil
3 cups cooked chickpeas
1 1/2 cups chopped fresh tomatoes (or same amount, tinned)
red pepper flakes (to taste)
1 teaspoon paprika
1 teaspoon oregano
1 (10 ounce) package frozen spinach, chopped and defrosted
1 -2 lemon, juice of (to taste)

Steps:

  • In a large saucepan, over medium heat, saute the onions and garlic in the olive oil until the onions are tender.
  • Add the chickpeas, tomatoes, pepper flakes (to suit your taste), and oregano,and paprika.
  • Cover and simmer for about 18 minutes, stirring occasionally.
  • Add spinach and cook about 7 minutes longer, or until spinach is cooked.
  • Add the lemon juice (I usually like to add the juice of about 1 1/2 lemons. Add the juice of 1 lemon, taste and adjust to your own, personal taste), salt and pepper.

1 tablespoon olive oil
1 onion, chopped
9 ounces fresh spinach
1 (14 ounce) can chickpeas, drained
2 zucchini, grated
2 tablespoons chopped cilantro
2 eggs, beaten
salt
pepper
fresh cilantro
1 1/4 cups flour
1 egg
1 1/2 cups milk
1 tablespoon olive oil
butter, for greasing
2 tablespoons butter
2 tablespoons flour
1 1/4 cups milk

Steps:

  • First make the pancakes. Whisk together the flour, a little salt, the egg, milk and 5 T water to make a fairly thin batter.
  • Stir in the oil.
  • Heat a large griddle, grease lightly and fry the pancakes on one side only, to make 8 large pancakes.
  • set aside while preparing the filling.
  • heat the oil in a frying pan and fry the onion for 4-5 minutes till soft.
  • wash the spinach, place ina pan and cook till wilted, shaking the pan occasionally.
  • chop the spinach roughly.
  • skin the chickpeas: place them in a bolw of cold water and rub them till the skins float to the surface.
  • mash the skinned chickpeas roughly with a fork.
  • add the fried onion, grated zucchini, spinach and chopped cilantro.
  • stir in beaten eggs, season and mix well.
  • place the pancakes, cooked side up, on a work surface and place spoonfuls of the filling down the center.
  • fold one half of the pancake over the filling and roll it up.
  • place in a large buttered ovenproof dish and preheat oven to 350.
  • melt the butter for the sauce in a small pan, stir in the flour, and then gradually add the milk.
  • heat gently for 2-3 minutes, stirring. season with salt and pepper and pour over the pancakes.
  • bake in the oven for about 15 minutes, till golden and then serve garnished with cilantro.

Another untried entree from the Australian Vegetarian Society posted for the 'Zaar World Tour. The addition of yogurt to the stew should make this a delightfull creamy entree. I have modified the recipe a bit to match how I'm more likely to prepare it. cooking time is estimated.

2 tablespoons dried coconut
1 tablespoon almonds, chopped
2 tablespoons fresh ginger, grated
1 tablespoon ground coriander
2 -3 teaspoons olive oil
3 garlic cloves, minced
1 onion, chopped
1 lb spinach, well cleaned, trimmed and finely chopped
1 tablespoon dried mint
1 pinch paprika
1 (14 1/2 ounce) can chickpeas, drained and rinsed
1 tablespoon poppy seed
1 cup low-fat yogurt or 1 cup nonfat yogurt
1 pinch ground pepper

Steps:

  • Wash spinach and chop finely (no thick stems).
  • Before you begin cooking, combine the coconut, almonds, corriander and ginger in a mini-chopper or food processor and pulse until you have a coarse to medium fine paste. Reserve.
  • In a large non-stick skillet over medium heat, add oil onions and garlic. Cook 2-3 minutes until onions soften taking care not to burn the garlic.
  • Add the spinach, paprika, mint and a few teaspoons of water. Cook until the spinach is tender. Stir to mix.
  • Add the drained chickpeas and the blend from the chopper. Stir to mix. Cook until everything is hot and the spice blend has begun to release its flavors into the dish. Season with pap.
  • Add the yoghurt and poppyseeds and lower to a simmer. Season with salt and pepper to taste. Cook an additional 3-5 minutes until the ragout is fully heated, without curdling the yoghurt.
  • Serve over rice.

1 tbsp vegetable oil
1 red onion, sliced
2 garlic cloves, chopped
½ finger length piece fresh root ginger, shredded
2 mild red chillies, thinly sliced
½ tsp turmeric
¾ tsp garam masala
1 tsp ground cumin
4 tomatoes, chopped
2 tsp tomato purée
400g can chickpea, rinsed and drained
200g baby spinach leaves
rice or naan bread, to serve

Steps:

  • Heat the oil in a wok and fry the onion over a low heat until softened. Stir in the garlic, ginger and chillies and cook for a further 5 mins until the onions are golden and the garlic slightly toasted.
  • Add the turmeric, garam masala and cumin, stirring over a low heat for a few secs. Tip in the chopped tomatoes and add the tomato purée, then simmer for 5 mins.
  • Add the chickpeas to the pan with 300ml water (fill the can three-quarters full). Simmer for 10 mins before stirring in the spinach to wilt. Season and serve with rice or naan.

2 tbsp mild curry paste
1 onion, chopped
400g can cherry tomatoes
2 x 400g cans chickpeas, drained and rinsed
250g bag baby leaf spinach
squeeze lemon juice
basmati rice, to serve

Steps:

  • Heat the curry paste in a large non-stick frying pan. Once it starts to split, add the onion and cook for 2 mins to soften. Tip in the tomatoes and bubble for 5 mins or until the sauce has reduced.
  • Add the chickpeas and some seasoning, then cook for 1 min more. Take off the heat, then tip in the spinach and allow the heat of the pan to wilt the leaves. Season, add the lemon juice, and serve with basmati rice.
