5 cups thinly sliced red potatoes (about 7 large potatoes)
1/4 cup water
3 tablespoons butter
1/4 cup chopped onion
1/4 cup all-purpose flour
2 cups whole milk
1 cup shredded cheddar cheese
1 teaspoon salt
1 cup chopped fresh spinach
1 tablespoon diced pimientos
4 bacon strips, cooked and crumbled

Steps:

  • In a 2-qt. microwave-safe dish, combine potatoes and water. Cover and microwave on high for 5-6 minutes or until potatoes are tender, stirring twice. Drain; set potatoes aside. , In a large microwave-safe bowl, heat butter on high until melted, about 15 seconds. Add onion. Microwave, uncovered, for 30-60 seconds or until tender, stirring once. , Whisk in flour until blended. Gradually stir in the milk. Cook, uncovered, on high for 1-1/2 minutes; stir. Cook 2-3 minutes longer, stirring every minute, or until sauce is thickened and bubbly. Stir in cheese and salt. Pour over potatoes. Add spinach and pimientos; mix well. , Microwave, uncovered, on high for 1-2 minutes or until heated through, stirring once. Sprinkle with bacon.

1 small onion, diced

½ teaspoon dried thyme

1 ½ pounds baby spinach, roughly chopped
1 cup half-and-half
1 ½ cups shredded Swiss cheese, divided
¾ cup dry bread crumbs
3 tablespoons butter, melted

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Heat oil in a large skillet over medium heat and cook onion until soft and translucent, about 5 minutes. Season with salt, pepper, and thyme. Sprinkle flour over onion mixture and cook until a thick paste forms, about 1 minute.
  • Place spinach in a large soup pot and cover. Heat on low until spinach begins to wilt, about 4 minutes. Turn heat off and add half-and-half, 1 cup Swiss cheese, and the onion mixture. Stir to combine and transfer to a 9-inch gratin dish.
  • Combine breadcrumbs and remaining 1/2 cup cheese in a bowl. Pour melted butter over the top and stir to combine. Evenly spread breadcrumb mixture over the spinach.
  • Bake in the preheated oven uncovered for 20 minutes. Let cool for 5 minutes before serving.

1 cup heavy cream

  • Preheat the oven to 425 degrees F. Melt the butter in a heavy-bottomed saute pan over medium heat. Add the onions and saute until translucent, about 15 minutes. 2 tablespoons melted butter
1/4 teaspoon salt, divided

Steps:

  • Preheat oven to 350°F Wash potatoes; cut into 1/4 inch slices.
  • Arrange half of slices in greased medium baking dish.

¼ cup chopped green onion
¼ cup all-purpose flour
2 cups milk

1 tablespoon diced pimento pepper
4 slices cooked bacon, crumbled

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place potatoes into a large pot, cover with water, and bring to a boil. Cook potatoes until tender and still firm, about 15 minutes; drain and set aside to cool.
  • Melt butter in a saucepan over medium heat; cook and stir green onion in the hot butter until softened, 1 to 2 minutes. 100g baby spinach
3 x 400g cans cannellini beans , drained
300g cherry tomatoes , halved
2 tbsp olive oil
1 lemon , zested and juiced
6 tbsp soft cheese
4 tbsp pesto
150g breadcrumbs
40g parmesan , grated
3 tbsp pine nuts
6 salmon fillets, skin removed
crusty bread , to serve (optional)

Steps:

  • Divide the spinach between six individual baking dishes (make sure the dishes are safe to use from the freezer to the oven). Spoon over the beans and tomatoes and drizzle with the oil. Scatter over a little of the lemon zest and squeeze over some juice, then season well. Toss everything together with your hands, like you would a salad.
  • Mix the soft cheese and pesto together in one bowl, and the breadcrumbs, parmesan and pine nuts in another. Season the salmon fillets and lay one in each dish, then spread the soft cheese mix over the fillets. Scatter with the cheesy breadcrumbs, pressing onto the salmon (it's okay if it also gets on the veg and beans a little).
  • If you want to cook straightaway, heat the oven to 200C/180C fan/gas 6 and bake for 20-25 mins, or until the salmon is cooked through and the crumbs are golden.
  • Alternatively, cover the dishes well and freeze for up to two months - it's a good idea to write the name of the dish and the cooking instructions on the lid. To cook from frozen, uncover and bake for 30-35 mins at 200C/180C fan/gas 6.
  • Serve the gratins with some crusty bread for mopping up the juices, if you like.
