ANISE SPICED MULLED WINE

One 750-milliliter bottle Cabernet Sauvignon
2 cups apple cider
1/4 cup brandy
1/4 cup agave syrup
2 pods star anise
2 cinnamon sticks
2 oranges
1 lemon

Steps:

  • Combine the wine, cider, brandy, agave, anise and cinnamon in a saucepan.
  • Zest the oranges into long strips, then juice them, along with the lemon.
  • Bring the wine mixture to a simmer, then let simmer for 8 minutes. Turn the heat off and stir in the juices.
  • Divide the orange strips among 8 to 10 warm mugs, then ladle the wine into them.

Wine-based cocktails require particular attention to balance, so neither the wine nor the spirits overwhelm the flavors. In this seasonal drink from Davio's Northern Italian Steakhouse in New York (where it is called Mull It Over), a pair of unlikely bedfellows, cabernet sauvignon wine and bourbon, are in total harmony, united by the bitter and sweet accents of amaro and cassis. Sip it by the fire.

1 1/2 ounces bourbon
1/4 ounce amaro, preferably Nonino
1/2 ounce crème de cassis
Dash ground nutmeg
1 1/2 ounces cabernet sauvignon

Steps:

  • Fill a copper Moscow Mule mug or rocks glass with ice cubes. Add the bourbon, amaro, cassis and nutmeg and stir 20 seconds until cold. Top off with wine.

1 quart red wine
1 cup rum or 1 cup brandy
2 cups water
1 vanilla bean, cut lengthwise in half
10 cardamom pods
5 cloves
1 cinnamon stick
2 teaspoons whole allspice
2 teaspoons orange zest (Or use a whole orange cut in 1/2)
1 teaspoon lemon zest, grated use the whole lemon cut in 1/2
3 dried hibiscus flowers (optional)
sugar, to taste
almonds, blanched
raisins
cranberries

Steps:

  • Bring the wine, port, water, vanilla, cardamom, cloves, cinnamon, allspice, orange peel or whole orange cut in half, lemon peel or whole lemon cut in half, hibiscus flowers and sugar to a simmer in a nonreactive saucepan.
  • Or place in a slow cooker on low for 1-2 hours.
  • Simmer the mixture slowly for 15 minutes.
  • Strain and place into Heat resistant punch bowl or keep in crock pot and keep on low.
  • Place 1 blanched almond and several raisins or fresh cranberries in the bottom of each punch glass.
  • Pour the warm wine mixture over and serve.

1 tablespoon whole black peppercorns
2 whole star anise
3 cinnamon sticks
One 1-inch piece fresh ginger, sliced
3 large strips orange zest
3 large strips lemon zest
Two 750-ml bottles red wine
3/4 cup honey

Steps:

  • In the basket of a coffee percolator place the allspice berries, peppercorns, star anise, cinnamon sticks, ginger and citrus zest. Pour the wine and honey into the percolator. Attach basket, cover and let percolate for 1 to 2 hours. Serve hot.

4 cloves
2 strips lemon zest, pared using a vegetable peeler
4 tbsp caster sugar

Steps:

  • Put the red wine, cinnamon, star anise, cloves, lemon zest and sugar in a large pan. Cook on a low heat for 10 mins.
  • Remove from the heat and cool, leaving to infuse for about 30 mins.
  • To serve, heat without boiling, stir in the sloe gin (if using, see tip below) and pour into mugs or heatproof glasses.

1 cup brandy
1 cup sugar
1 medium orange, sliced
1 medium lemon, sliced

1/2 teaspoon whole peppercorns

  • Bring red wine, brandy, sugar, cloves, lemon zest, cinnamon sticks, and star anise to a simmer in a saucepan, covered, over high heat.
  • Remove from heat; steep for 10 minutes. Strain through a fine sieve. Ladle into 4 mugs; garnish with fresh lemon-zest strips.

  • Place the first 4 ingredients together in a saucepan over a medium heat and stir frequently until the sugar is fully melted. Keep a close eye on the pan - the sugar can (and will!) burn very easily.
  • When the sugar is melted, pour in the red wine, grapefruit juice and orange juice. The sugar will probably solidify at the bottom of the pan. Just carry on stirring and it will melt again eventually.
  • When the sugar has melted, leave the wine to gently simmer for around 15 minutes to give the flavours time to infuse.
