Adapt this recipe for easy overnight oats to suit your tastes. You can add dried fruit, seeds and nuts, grated apple or pear, or chopped tropical fruits - the perfect healthy breakfast.

¼ tsp ground cinnamon
50g rolled porridge oats
2 tbsp natural yogurt
50g mixed berries
drizzle of honey
½ tbsp nut butter (we used almond)

Steps:

  • The night before serving, stir the cinnamon and 100ml water (or milk) into your oats with a pinch of salt.
  • The next day, loosen with a little more water (or milk) if needed. Top with the yogurt, berries, a drizzle of honey and the nut butter.

1/3 to 1/2 cup liquid such as dairy milk, almond, cashew or coconut milk
1/3 to 1/2 cup old-fashioned rolled oats
1/3 to 1/2 cup yogurt, optional
1 teaspoon chia seeds, optional but highly recommended
1/2 banana, mashed, optional
Serving suggestions: fruit (fresh or dried), nuts, nut butter, seeds, protein powder, granola, coconut, spices, citrus zest and vanilla extract

Steps:

  • Add the desired amounts of milk, oats, yogurt, chia seeds and banana to a jar or container and give them a good stir. Refrigerate overnight or for at least 5 hours.
  • In the morning, add additional liquid if you'd like. Once you achieve the desired consistency, top with fruit, nuts, nut butter, seeds, protein powder, granola, coconut, spices, zest or vanilla extract.

200g jumbo porridge oats
50g chia seeds
600ml unsweetened almond milk , plus 8 tbsp
2 tsp vanilla extract
125g punnet raspberries
100g almond yogurt
250g punnet blueberries
20g flaked almonds , toasted

Steps:

  • Tip the oats and seeds into a bowl and pour over the milk and vanilla extract. Leave for 5-10 mins for the oats to absorb some of the liquid.
  • Reserve 16 raspberries, then add the remainder to the oats and crush them into the mixture. Spoon into four tumblers or sundae dishes, then top with the yogurt and both lots of berries. Cover and chill overnight or until needed. To serve, pour 2 tbsp almond milk over each and scatter with the almonds.

1 cup oats
2 cups Greek yogurt
1 tablespoon nut butter
1 tablespoon protein powder (try egg protein powder or whey)
1 mashed banana
1 cup milk or 1 cup almond milk
1 tablespoon cinnamon

Steps:

  • Mix all ingredients in a large Mason jar and let sit in the fridge overnight.
  • Serve cold the next day or warm in the microwave for 30 seconds. Top with more cinnamon, to taste.

Flavoured like a bakewell tart, the combo of cherry and almond is classic. If you can't get cherries, try using frozen raspberries instead. I love the flavour of almond so I add in almond extract but you can leave this out if you don't like it.

1 cup frozen pitted cherries
2 tablespoons granulated sugar
1 tablespoon water
1/4 cup sliced almonds
2/3 cup old fashioned oats
2/3 cup milk, of choice (cow's, almond, soy, rice...)
1/4 teaspoon almond extract
2 tablespoons almond butter

Steps:

  • Heat the cherries, sugar and water in a small pot over a medium heat. Once the mixture starts to bubble, turn the heat down to low and let simmer and soften for 10 minutes. Take off the heat and mash slightly with the back of a fork.
  • Toast the flaked almonds in a small skillet over a medium heat, stirring constantly, until lightly browned. Pour into a bowl and set aside.
  • In a medium bowl, mix the oats, milk, almond extract, almond butter and half of the cooked cherries together. The almond butter may not fully mix in but that's fine.
  • Divide between two bowls or mason jars, top with the remaining cooked cherries and store in the fridge overnight.
  • In the morning, top with the toasted, flaked almonds and serve.
