Zucchini, corn, and onions combined with chopped bacon and cheese. A quick and easy way to use some fresh veggies from your garden!

4 slices bacon
2 cups chopped zucchini
1 ½ cups fresh corn kernels
1 small onion, chopped
1 pinch pepper
¼ cup shredded Monterey Jack cheese

Steps:

  • Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Reserve 1 tablespoon of drippings. Drain bacon, chop, and set aside.
  • Heat the bacon drippings in the skillet over medium heat. Saute the zucchini, corn, and onion until tender but still crisp, about 10 minutes. Season with pepper. Spoon vegetables into a bowl, and sprinkle with chopped bacon and shredded cheese.

2 medium zucchini, cut into 1/2-inch slices
1/4 cup water
1 can (15-1/2 ounces) hominy, drained
1 can (15-1/4 ounces) whole kernel corn, drained
1 jalapeno pepper, seeded and chopped
1/2 teaspoon salt
1 cup shredded pepper Jack cheese

Steps:

  • In a 1-1/2-qt. microwave-safe dish, combine zucchini and water. Cover and microwave on high for 1-1/2 minutes; drain. Stir in the hominy, corn, jalapeno and salt. Cover and microwave on high for 2-3 minutes. , Sprinkle with cheese. Cook, uncovered, on high for 1-2 minutes until cheese is melted and vegetables are tender. Let stand for 2 minutes before serving.

¼ cup butter
½ small white onion, finely diced
3 small zucchinis, diced
3 ears corn, husks and silk removed
sea salt to taste
freshly ground black pepper to taste

Steps:

  • Heat butter in a skillet over medium heat, stirring occasionally, until lightly browned, 1 to 2 minutes. Cook and stir onion in the melted butter until translucent, about 5 minutes. Cut kernels from the ears of corn. Add zucchini and corn; cook and stir until zucchini is tender, about 8 minutes. Season with sea salt and pepper.

8 ears fresh corn
1 red pepper
1 orange pepper
2 jalapeno pepper
1 large onion
3 tablespoons butter
Salt and freshly ground black pepper
1 tablespoon sugar
Freshly chopped tarragon leaves, to taste

Steps:

  • Preheat grill over medium-high heat.
  • Quick hit corn on grill to get a bit of color. Strip kernels off cob.
  • Fine dice the peppers and onion. Place the butter into a saute pan over medium-high heat. Once melted, cook the peppers and onions until tender. Add sugar, salt and pepper, to taste. Add corn. Add tarragon at end.

4 -6 zucchini, sliced
1 -2 yellow squash, sliced
1 can stewed tomatoes or 1 can diced tomato
1 -2 can tomato sauce (this just depends on how much sauce you want)
1 large onion, thinly sliced (I prefer white onions)
2 -3 cloves garlic, minced
1 -2 tablespoon crushed red pepper flakes
1 -2 tablespoon olive oil
salt and black pepper
1 bell pepper, diced (optional)

Steps:

  • In a large sauce or soup pan, heat oil and sautee garlic and onion.
  • Add the remaining ingredients (quantity to taste) and let simmer for a minimum of half an hour (the longer the better) stirring occasionally.
  • Serve as a side dish or over pasta noodles.
  • Parmesean cheese sprinkled on top is very tasty but will add to the calories and fat content.
  • Note: I have never really measured while making this, I just throw it all together for the most part, so please add more or less of every item to your liking.
