1 large yellow onion (diced (about 2 cups))
1 medium bell pepper (red, yellow, or orange, diced)
6 garlic cloves (minced (or 3/4 teaspoon garlic powder))
1⅓ pounds ground turkey or chicken (90 to 93 percent lean)
One 15-ounce can white beans (drained and rinsed)
One 28-ounce can diced tomatoes with liquid
¼ cup tomato paste (no salt added)
One 14-ounce can pumpkin puree
1 cup reduced-sodium chicken or vegetable broth
2 tablespoons chili powder
1 tablespoon cocoa powder
1½ teaspoons ground cinnamon (or 1 tablespoon pumpkin pie spice)
2½ teaspoons ground cumin
1 teaspoon kosher salt
½ teaspoon ground black pepper
½ teaspoon cayenne pepper (optional)
4 cups baby spinach leaves
Avocado (optional)
Sour cream or Nonfat plain Greek yogurt (optional)
Cilantro (optional)

Steps:

  • Liberally coat a large pot or Dutch oven with oil spray and warm over medium-high heat.
  • Add the onion and bell pepper and sauté, stirring occasionally, for about 7 minutes, or until the onion softens.
  • Add the garlic, stir everything together, and cook until fragrant, about 30 seconds.
  • Add the ground turkey or chicken. Use a spatula or large spoon to break up the meat as it cooks. Continue to cook about 6 to 7 minutes, until fully cooked.
  • Add the beans, diced tomatoes, tomato paste, pumpkin puree, broth, chili powder, cocoa powder, cinnamon (or pumpkin pie spice), cumin, black pepper, and optional cayenne pepper, and stir.
  • Reduce heat and simmer for 20 to 30 minutes, stirring occasionally.
  • Right before serving, add the spinach and mix throughout.
  • Enjoy the chili with desired toppings, such as avocado, nonfat plain Greek yogurt, cilantro, and salsa.

3 tablespoons olive oil
1 onion (finely chopped (1 cup))
2 large carrots (chopped (1 ½ cups))
2 stalks celery (chopped)
2 garlic cloves (chopped)
1 tablespoon ground coriander
1 tablespoon ground paprika
1 teaspoon ground cumin
½ teaspoon crushed red chili
½ teaspoon freshly ground black pepper
1 ½ pounds ground turkey thigh
2 tablespoons chopped fresh thyme, rosemary or sage (or a mixture of one or more)
1 15-ounce can unsweetened pumpkin purée
2 15-ounce cans cannellini beans, drained
2 cups low-sodium chicken or vegetable broth
Kosher salt
½ cup heavy whipping cream (optional)

Steps:

  • Pour the oil into a 4 or 5 quart soup pot or Dutch oven and place over medium heat. Add the onion, carrots and celery and cook until the vegetables are softened, stirring occasionally.
  • Add the garlic and all the spices through the black pepper, stirring to coat in the oil. Add the turkey and cook until it's no longer pink, stirring and breaking the meat up with a spoon, about 8 minutes.
  • Add the herbs, pumpkin, beans, broth and 2 teaspoons salt. Bring to a simmer, partially cover and cook 20 minutes, adjusting the heat so it doesn't boil.
  • Remove from the heat and stir in the cream, if using. Taste and adjust the seasoning if needed. Serve warm in bowls.

2 lbs Ground Turkey

1 teaspoon Salt
1 15 ounce can Pumpkin Puree
2 15 ounce cans Cannelini Beans (drained)
2 cups Chicken Broth
1/2 cup Heavy Cream

Steps:

  • Place a large stock-pot or 4 or 5 quart Dutch Oven over medium-high heat and heat the olive oil. Add the onion and carrots and cook until softened, about 5 minutes.
  • Add the garlic and spices and toss to coat, cook an additional 1 minute.
  • Push the vegetables to the side and add the ground turkey using a wooden spoon to break apart. As the meat browns break it into small pieces and cook until no longer pink, about 8 to 10 minutes.
  • Mix in the thyme, salt, pumpkin puree, cannelini beans, and chicken broth and bring to a simmer. Reduce heat, and slightly cover the pot with the lid and cook for 25 minutes.
  • Remove the pot from the heat and stir in the heavy cream.

1 tablespoon vegetable oil
1 cup chopped onion
½ cup chopped green bell pepper
½ cup chopped yellow bell pepper
1 clove garlic, minced
1 pound ground turkey

2 tablespoons olive oil
Grated Cheddar or Monterey Jack cheese, for serving
2 cups chopped yellow onion
Chopped green onions, for serving
2 tablespoons minced jalapeno
2 tablespoons minced garlic
2 1/2 pounds ground turkey
2 tablespoons Emeril's Southwest Essence, recipe follows
1 2/3 tablespoons chili powder
2 teaspoons kosher salt
1/2 teaspoon ground cumin
1/4 teaspoon dried oregano, crumbled
1 bay leaf
3 tablespoons cornmeal
3 cups low-sodium chicken broth
2 (10-ounce) cans Ro'tel Diced Tomatoes and Green Chiles (original), undrained
2 (4-ounce) cans diced green chiles, undrained
1 tablespoon finely chopped fresh cilantro stems
1/4 cup heavy cream
2 tablespoons finely chopped fresh cilantro leaves
1 tablespoon ground coriander
2 tablespoons chili powder
1 teaspoon cayenne pepper
2 teaspoons ground cumin
2 tablespoons paprika
1 tablespoon garlic powder

Steps:

  • In a large kettle, soak beans in cold water to cover by 2 inches overnight. Drain beans in a colander and return to kettle with enough water to cover by 2 inches. Cook beans at a bare simmer until just tender, about 1 hour, and drain in a colander.
  • In a skillet, heat the oil and saute the onion and jalapeno until soft and beginning to caramelize, 4 minutes. Add the garlic and cook, stirring, for 2 minutes. Add the ground turkey, Southwest Essence, chili powder, salt, cumin, oregano, and bay leaf and cook, stirring occasionally, until turkey is browned and cooked through, 6 minutes. Add the cornmeal and cook, stirring, for 2 minutes. Add the chicken broth, canned tomatoes, canned chiles, and cilantro stems and stir to combine. Bring to a boil, reduce heat to a simmer, and cook, uncovered, for 45 minutes, stirring occasionally. After it has cooked for 30 minutes, add the cooked beans. Add the heavy cream and cilantro leaves and cook, stirring occasionally, for 15 minutes longer.
  • Serve the chili in deep bowls, garnished with dollops of sour cream, grated Cheddar cheese, and green onions to taste.
  • Combine all ingredients thoroughly.

Healthy White Bean Turkey Chili image

I decided to get back on Weight Watchers and was googling recipes. I found one for white bean turkey chili, but decided to put my own spin on it. It is so good, hearty, and has a nice creamy and smoky taste. I only used one teaspoon of red pepper flakes because I was going to be serving it to my 2.5 year old. I was shocked she actually had like 4 hearty bites and was dipping her spoon in the liquid and slurping it up. This is a huge feat for my very picky eater. My hubby said it was a keeper. Also, I used two pounds regular ground turkey and one pound extra lean ground turkey. This recipe can also be OAMC and you could probably get 2 or 3 dinners out of it, depending on your family size. You could also use your slow cooker, just brown the turkey and your spices in a skillet, then transfer the rest of the ingredients into the slowcooker for the exception of the half and half. I would add that 30 minutes before serving. Enjoy! If you are counting points, there is 12 servings. We had hearty helpings, so I would say 6 to 8 servings if you are not restricting your portions.

2 medium yellow onions, chopped

  • Add the spices and cook for another 2 minutes. (If using fresh sage, do not add until the very end.).
  • Add the ground turkey and cook all the way through, until meat is white.
  • Stir in the chicken stock and half and half.
  • If you are using fresh sage, add it at this point.
  • Lower the heat to low, and let the flavor incorporate, about 30 to 45 minutes, stirring occasionally.
  • Serve with low fat cheddar or Mexican style cheese, low fat sour cream, chopped onion, and/or chopped fresh cilantro for garnish.
