SPICY RICOTTA WAFFLES

4 tablespoons (1/2 stick) unsalted butter
1 3/4 cups all-purpose flour
2 1/2 teaspoons double-acting baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
Generous pinch cayenne pepper
1 cup ricotta
2 large eggs
1 1/4 cups milk
Salsa, (homemade or store-bought) as an accompaniment
Cilantro, for garnish

Steps:

  • Preheat your waffle iron. Preheat your oven to 200 degrees so you can hold the finished waffles until serving time. Melt the butter and reserve. In a medium-size bowl, whisk together the flour, baking powder, baking soda, salt, and pepper to combine. In a large bowl, beat the ricotta for 1 minute with a mixer until the mixer leaves tracks. Don't worry if it's not completely smooth. Add the eggs and beat for another minute. When the combination is smooth and shiny, add the milk. Turn the dry ingredients into the bowl with the ricotta mixture and whisk gently to combine. Stir in the melted butter. Lightly butter or spray the grids of your waffle iron, if needed. Brush or spray the grids again only if subsequent waffles stick. Spoon out 1 cup of batter for a Belgian waffle maker (or the amount recommended by your waffle maker's instructions) onto hot iron. Spread the batter evenly over the grids with a metal spatula or wooden spoon, stopping right before the edge. Close the lid and bake until pale golden and lightly crisped. Put finished waffles in a single layer on a baking sheet, cover loosely with aluminum foil, and keep in the preheated oven while you make the rest of the batch.

1 3/4 cups all purpose flour
1 1/4 cups yellow cornmeal
1 tablespoon baking powder
1 teaspoon sugar
1 teaspoon plus 1 teaspoon for chili salt
2 cups milk
3 tablespoons vegetable oil
2 large eggs
1 lb lean ground chuck
1 chopped onion
1 chopped green bell pepper
2 cloves minced garlic
2 tablespoons chili powder
1 tablespoon ground cumin
1 tablespoon fresh ground black pepper
2 (15 oz) cans ranch-style beans
1 (15 oz) can tomato sauce
1 (15 oz) can drained niblet corn
1 (10 oz) can diced tomatoes and green chiles
shredded, for garnish cheddar cheese
for garnish sour cream
for garnish fresh cilantro

Steps:

  • Preheat waffle iron according to manufacturer's instructions.
  • In a large bowl, combine flour, cornmeal, baking powder, sugar and salt. Add milk, oil, and eggs; stirring until smooth. Pour batter onto hot waffle iron and bake in batches. Set aside and keep warm.
  • Serve with Spicy Chili. Garnish with shredded Cheddar, sour cream and chopped fresh cilantro.
  • Spicy Chili:
  • In a large Dutch oven over medium-high heat, brown ground chuck, until beef is crumbly. Stir in onion, bell pepper, garlic, chili powder, cumin, salt and pepper.
  • Stir in beans, tomato sauce, corn, diced tomatoes and green chiles. Reduce heat and simmer 30 minutes uncovered, stirring occasionally.

2 cups Bisquick baking mix
1 1/3 cups milk
2 tablespoons begetable oil
1 egg
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves

Steps:

  • Beat all ingredients with ingredients. Until well blended.
  • Pour by scant, 1 cup batter onto a hot waffle iron, greased.
  • Bake until steaming slows and waffle is golden brown, remove carefully.
  • Makes three 9 inch waffles.

5 large eggs, divided
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon pepper
1/4 teaspoon chili powder
1-3/4 cups refrigerated shredded hash brown potatoes
1 small onion, finely chopped
1/4 cup canned chopped green chiles
2 tablespoons salsa
2 tablespoons canola oil
1/2 cup shredded cheddar-Monterey Jack cheese
Optional toppings: Salsa, guacamole, sour cream and minced fresh cilantro

Steps:

  • In a large bowl, whisk 1 egg, salt, cumin, pepper and chili powder. Stir in potatoes, onion, green chiles and salsa. Bake in a preheated waffle iron coated with cooking spray until golden brown and potatoes are tender, 8-12 minutes., In a large skillet, heat oil over medium-high heat. Break remaining eggs, 1 at a time, into pan. Reduce heat to low. Cook to desired doneness, turning after whites are set if desired. Remove from heat. Sprinkle with cheese; cover and let stand 3 minutes or until melted., Serve eggs with waffles and toppings of your choice.
