HOMEMADE SAUSAGE
It's impossible to imagine authentic Ukrainian cuisine without homemade sausage. This is an absolutely natural and unique product. Meat (often pork, sometimes beef) and salo (pork fat) are used in order to cook homemade sausage. Pig's gut is stuffed with meat and salo, boiled, and then fried on pan or baked in oven Homemade sausage is traditional Ukrainian dish cooked all around the country. Its recipe is basically the same in all regions, but housewives often add something special to it. For instance, some add cognac to homemade sausage, others never fry it, but leave boiled. Homemade sausage is mostly served as appetizer with piece of brown bread.

Steps:
- 1. Rinse the hog's casing.
- 2. Mince the meat and fat.
- 3. Mince the garlic.
- 4. Stir the garlic, salt, pepper, and meat.
- 5. Fill the hog's casing with mix.
- 6. Tie up the casing's edges in order to keep mince meat inside. Put into fridge for 8 hrs.
- 7. Put sausages into boiling water. Cook for 5 mins.
- 8. Cool the sausage. Heat oven to 200C, bake the sausages for 1.5 hrs or until they have a golden crisp.

Steps:
- Grind pork coarsely, once.
- Bone and chill beef.
- With a very sharp knife, dice 2 pounds beef into 1/4 inch cubes.
- Dice 1/2 pound fat similarly and grind the other 1/2 pound of fat.
- Mix meats and fat in a large bowl.
- Mash peeled garlic with salt in a mortar,and add pepper and allspice.
- Mix all ingredients.
- Add 1 cup water for each 2 pounds of meat, then add whiskey.
- Cook a small sample in a little boiling water.
- Taste and adjust seasoning (be conservative with the salt).
- Wash casing in cold water, rinsing several times.
- Carefully thread 1 yard of casing over a sausage funnel and stuff, taking care not to leave air pockets.
- Do not pack or sausages will burst while cooking.
- Tie ends with string.
- Repeat until all meat is used.
- Refrigerate, loosely covered with towel, for 48 hours.
- Sausage may be smoked (following smoker directions) or cooked fresh.
- TO COOK FRESH, simmer gently in a wide pot one-third full of water until cooked through, about 30-40 minutes.
- Drain, cool, and refrigerate loosely covered.
- TO SERVE, saute in a little fat for color.
- Or serve cold in thin diagonal slices.
- NOTE: Peperivka, cayenne-flavored whiskey, is made by soaking 10 whole red cayenne peppers in a pint of blended whiskey or bourbon for at least 48 hours.
SPICY UKRANIAN SAUSAGE PATTIES (KOVBASA)

- Make sure your meats have been put through a fine grinder. Combine all ingredients thoroughly including seasonings. Pinch off a small piece and fry, to taste for seasoning. Form into 2 1/2-inch patties and saute in oil until brown.
UKRAINIAN SAUSAGE NOODLE CASSEROLE
Make the casserole ahead of time except for baking it, leave in fridge and pop in oven 45 minutes before dinner. I threw this together last night and rather liked it so thought I would post it, Freezes well Make it as hot or as mild as you like. I found 2 tablespoons of hot sauce was just right but I moderated it to 2 tsp cause I know only some like it hot! Even with 2 tbsp I didn't find it too hot .Serve with a green salad and a crispy roll

- In a large skillet heat oil over medium heat, saute the onions for 5 minutes, add mushrooms continue sauting for 4 minutes more.
- Add celery, peppers, green onions, continue to saute for another 3 minutes.
- Add soup& hot sauce, mix well.
- Add sausage & Noodles ,remove from heat.
- Preheat oven to 350F.
- Lightly grease a 9"x9"x3", Pour in the casserole mix.
- Cover and bake for 30 minutes, remove cover& sprinkle on the onion flakes.
- Return to the oven for 15 minutes to brown the flakes and finish cooking.
- Serve Hot.
BEEF AND BULGUR PATTIES
These clever patties are bulked up with cracked bulgur wheat so you only have to buy half a pound of ground beef. Don't forget to save room for the cucumber and pomegranate side salad.

- Place the bulgur and 1/2 teaspoon salt in a medium bowl and add the boiling water. Soak until tender but slightly chewy, 20 minutes. Strain to remove any excess moisture.
- Heat a large nonstick skillet with 2 tablespoons of the olive oil over medium heat. Add the onions, 1/4 teaspoon salt and a pinch of black pepper. Cook, stirring, until soft and starting to brown, about 4 minutes. Add the cumin and allspice, and stir until very fragrant and the onions are evenly coated in the spices, about 1 minute. Transfer the onions to a large bowl to cool. Carefully wipe out the skillet to use again later.
- Mix together the hummus, yogurt, 1 teaspoon of the lemon juice and 1/2 teaspoon salt.
- Add the bulgur, ground beef, 1 1/4 teaspoons salt and 1/4 teaspoon pepper to the onions. Gently mix together and form 4 patties, each just under 1/2-inch thick.
- Heat the reserved skillet with 1 tablespoon of the olive oil over medium heat. When the oil starts to shimmer, add the patties, making sure to leave some space between them. Cook until the patties are cooked through, 5 to 6 minutes per side.
- Toss together the greens, pomegranate seeds, cucumber, the remaining 1 tablespoon lemon juice, the remaining 1 tablespoon olive oil and salt and pepper to taste in a large bowl. Divide the patties and salad among four plates. Serve each with pita and a dollop of the yogurt sauce.
