2 (12 ounce) cans tuna fish (thoroughly drained)
1 carrot (chopped)
3 shallots (peeled and chopped)
1 lemon, rind of (grated)
1/2 lemon, juice of
1 small jalapeno pepper (seeded and finely chopped)
3 stalks celery (chopped)
1 roma tomato (chopped)
1 pinch fresh coarse ground black pepper
1 small green bell pepper (chopped)
4 tablespoons canola oil mayonnaise (high oleic if possible)
3 tablespoons sweet pickle relish
6 large romaine lettuce leaves (cut in half)
12 slices whole wheat bread (toasted whole grain)

Steps:

Combine everything in a large bowl except for the lettuce and bread. Put lettuce and tuna salad on toasted bread, and enjoy.

This is similar to classic tuna fish salad but with a kick. My boyfriend made this when we were out of relish and decided to substitute with jalapenos. It was awesome! I added the relish back in to give it a sweetness along with the spiciness.

1 (12 ounce) can tuna, drained
¼ cup Cheddar cheese crumbles
8 slices jarred jalapeno pepper, diced, or more to taste
2 tablespoons mayonnaise, or to taste
1 tablespoon pickle relish
1 tablespoon lemon juice
½ teaspoon ground black pepper
8 slices bread, toasted

Steps:

Stir tuna, Cheddar cheese, diced jalapeno, mayonnaise, relish, lemon juice, and pepper together in a bowl. Spread tuna mixture on a slice of toast and top with remaining slice to make a sandwich.

Combine the first 6 ingredients, tuna through garlic powder, and 1/3 cup of mayo. Then salt to taste. Add more red pepper flakes till you get your desired heat.
Spread one teaspoon of mayo on one side of the bread. Place mayo side down on the skillet—top with a slice of cheddar cheese, then tuna, and then another slice of cheddar cheese. Spread mayo on another slice of bread, and add on top of the cheese, mayo side up. Repeat to make the 3 other sandwiches.
