TOMATO BACON CORN SALAD



Tomato Bacon Corn Salad image

4 ounces bacon (4 to 6 slices), chopped
2 shallots, finely chopped
3 cups fresh corn kernels, about 3 ears of corn or frozen
1 cup halved cherry tomatoes
2 fresh bird's eye chilies or 1 serrano pepper, minced
2 teaspoons fish sauce
1⁄2 cup chopped fresh cilantro leaves
Juice of 1 lime
1 avocado, chopped
Kosher salt and freshly ground black pepper

Steps:

  • In a wok or large skillet set over medium-high heat, add the bacon and cook, stirring, until it is very crisp, and the fat has rendered, about 10 minutes. Remove the bacon with a slotted spoon and set aside. Pour the bacon fat out from the skillet until about 2 tablespoons remain. Return the pan to medium-high heat, add the shallots to the bacon fat, and cook, stirring, until soft, about 3 minutes. Add the corn and continue cooking, stirring occasionally, until the corn begins to brown, about 6 minutes. Stir in the tomatoes and chiles. Add the crispy bacon and fish sauce and remove from the heat. Then add the cilantro, lime juice and avocado. Gently toss to combine. Taste and season with salt and pepper. Serve warm, chilled or at room temperature.

one package firm tofu (14-ounce, drained and patted dry, cut into four slices)
1 teaspoon sesame oil
2 teaspoons sesame seeds
kosher salt
1 lb oz shredded cabbage (Napa and or or red cabbage)
2 Persian cucumbers, thinly sliced on the bias
2 stalks celery, thinly sliced on the bias
kernels from 2 ear of corn
1/2 cup shaved coconut flakes, toasted
basil leaves, for serving
cilantro leaf, for serving
lime wedge, for serving
3/4 cup roasted cashews
3 tablespoons olive oil
1 1/2 tablespoons rice wine vinegar
1 1/2 teaspoons sesame oil
1/3 cup packed chopped cilantro leaf
1 1/2 teaspoons sambal oelek chili paste
3/4 teaspoon honey
kosher salt

Steps:

  • For the Salad:.
  • Preheat broiler.
  • Place tofu slices on a rimmed baking sheet. Drizzle each slice with 1/4 teaspoon sesame oil and 1/2 teaspoon sesame seeds. Season tops with salt. Transfer to broiler and cook until sesame seeds are toasted and tofu pieces are golden on the edges, about 8 minutes.
  • In a large bowl, combine cabbage, cucumber, celery and corn. Toss with enough Spicy Cashew Dressing to coat and divide among 4 serving plates. Top with coconut, basil, cilantro and one piece of tofu. Serve with lime wedges and additional dressing.
  • For the Spicy Cashew Dressing:.
  • Combine cashews, olive oil, rice wine vinegar, sesame oil, cilantro leaves, sambal, honey and 3 tablespoons water in the bowl of a blender. Alternatively, you can use a stick blender and put all ingredients in a glass measuring cup. Blend until smooth. Season to taste with salt. Dressing can be kept up to 1 week in the refrigerator.

1 (12 ounce) bag frozen corn
1 cup chopped red bell pepper
1/2 cup finely chopped red onion
1/4 cup finely chopped fresh cilantro
3 tablespoons lime juice
1 -2 tablespoon Thai sweet chili sauce
1 -2 tablespoon sugar
cucumber
bean sprouts
snow peas
edamame beans

Steps:

  • Bring a saucepan of water to boil on high heat. Add corn; cook 2 to 3 minutes or until heated through. Drain well.
  • Place corn in a large bowl. Add bell pepper, red onion and cilantro; toss well.
  • Mix lime juice, chili sauce and sugar in small bowl until sugar is dissolved.
  • Pour over the corn; toss well.
  • Let stand at least 1 hour to allow flavors to blend.

1 tablespoon vegetable oil
1 tablespoon low-sodium soy sauce
1 tablespoon balsamic vinegar
1 tablespoon fish sauce
1 tablespoon chili-garlic sauce
1 tablespoon fresh lime juice
1 ½ teaspoons seasoned rice vinegar
¼ teaspoon white sugar
½ (16 ounce) package farfalle (bow-tie) pasta
½ cup frozen peas, thawed
¼ cup shredded carrots
¼ cup thinly sliced red bell pepper
3 tablespoons thinly sliced green onions
2 tablespoons chopped fresh cilantro
2 tablespoons dry-roasted peanuts
½ teaspoon crushed red pepper flakes, or to taste
4 wedges lime

Steps:

  • Whisk sesame oil, vegetable oil, soy sauce, balsamic vinegar, fish sauce, chili-garlic sauce, lime juice, rice vinegar, and sugar for dressing together in a small bowl until well combined. Set aside.
  • Bring a large pot of lightly salted water to a boil. Cook bow-tie pasta at a boil, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
  • Drain pasta, rinse with cold water, and return to the pot. Drizzle dressing over the pasta, stir gently to combine. Add peas, carrots, bell pepper, green onions, cilantro, peanuts, and red pepper flakes; stir until well combined.

Spicy Corn and Shishito Salad image

In this recipe, shishito peppers are sliced, lightly sautéed, then tossed with raw summer corn and a cumin-lime vinaigrette for a summer salad that's crunchy, smoky and a little spicy. Traditionally used in Japanese and Korean cooking, shishitos are small, thin-skinned green peppers that have become increasingly popular in the United States. They are typically mild in flavor, but the occasional pepper packs a spicy punch. If you can't find them, use diced green bell peppers in their place. Finally, cilantro-averse cooks can substitute fresh mint.

3 1/2 tablespoons olive oil
2 tablespoons fresh lime juice
1/4 teaspoon ground cumin
Kosher salt
1/3 cup diced red onion
1 garlic clove, minced
3 cups fresh corn kernels (from 4 to 6 ears of corn)
6 ounces shishito peppers, stemmed and cut crosswise into 1/4-inch slices, or green bell peppers, stemmed and diced
1 large jalapeño, seeds and ribs removed, diced
1/4 cup grated Cotija or crumbled feta cheese (optional), or to taste
1/4 cup chopped fresh cilantro leaves and tender stems, plus more to taste

Steps:

  • In a small bowl, whisk 2 tablespoons olive oil with the lime juice, cumin and 3/4 teaspoon salt. Stir in the red onion and garlic and set aside until ready to use. (Do this step first so the onions and garlic have time to mellow slightly in the dressing.)
  • Place the corn kernels in a large bowl and set aside. In a medium (10-inch) sauté pan, heat the remaining 1 1/2 tablespoons olive oil over medium heat. Add the shishitos, jalapeño and a pinch of salt and cook, stirring occasionally, until the peppers are tender and beginning to brown, 4 to 6 minutes.
  • Add the peppers and dressing to the bowl with the corn and toss well. Add the cheese, if using, and toss. Garnish with cilantro.
