Steps:
- Prepare the shrimp: In a large, shallow bowl, combine the shrimp with the olive oil, oregano, thyme, basil, and salt, turning to coat and flavor well. Marinate for 30 minutes in the refrigerator.
- Heat a skillet or a saute pan large enough to hold the shrimp in 1 layer, and spoon 1 tablespoon of the oil from the marinade into the skillet. Carefully arrange the shrimp in the skillet and, over high heat, saute just to color, 30 to 40 seconds per side. (Do not overcook, as it will continue to cook on top of the pizza dough.) Remove with a slotted spoon and set aside to cool. Season lightly with salt before arranging on the pizza dough.
- Place a pizza stone on the middle rack of the oven and preheat the oven to 500 degrees F. On a lightly floured surface, stretch or roll out the dough to 4 (8-inch) rounds, with the outer border a little thicker than the inner circle. Brush each of the rounds with the chili oil.
- Layer the pizza: Start with the mozzarella, then the Fontina, tomato, onion, shrimp, goat cheese, and red and yellow peppers. Gently slide the pizza onto the baking stone and bake until the crust is golden brown, about 10 to 12 minutes.
- Transfer the pizza onto a firm surface and cut into slices with a pizza cutter or a very sharp knife. Serve immediately.
- In a small bowl, dissolve the yeast and honey in 1/4-cup warm water.
- In a mixer fitted with a dough hook, combine the flour and the salt. Add the oil, the yeast mixture, and the remaining 3/4 cup of water and mix on low speed until the dough comes cleanly away from the sides of the bowl and clusters around the dough hook, about 5 minutes. (The pizza dough can also be made in a food processor fitted with the steel blade. Pulse once or twice, add the remaining ingredients, and process until the dough begins to form a ball.)
- Turn the dough out onto a clean work surface and knead by hand 2 or 3 minutes longer. The dough should be smooth and firm. Cover the dough with a clean, damp towel and let it rise in a warm spot for about 30 minutes. (When ready, the dough will stretch as it is lightly pulled).
- Divide the dough into 4 balls, about 6 ounces each. Work each ball by pulling down the sides and tucking under the bottom of the ball. Repeat 4 or 5 times. Then on a smooth, unfloured surface, roll the ball under the palm of your hand until the top of the dough is smooth and firm, about 1 minute. Cover the dough with a damp towel and let rest 15 to 20 minutes. At this point, the balls can be wrapped in plastic and refrigerated for up to 2 days.
- Yield: 4 (8-inch) pizzas

RIGATONI WITH SAUSAGE, SPINACH, AND GOAT CHEESE
While this recipe is delicious as is, you can do a couple of things to give it even more flavor. Use a combination of spicy and sweet sausage instead of just sweet and--something I do almost every time I use goat cheese--use a fork to mix into it 1/2 teaspoon each of chopped fresh parsley, chives, and thyme.

Steps:
- Bring a large pot of salted water to a boil. Heat the oil in a large saute pan over medium-low heat. Add the onions and a pinch of salt and cook until translucent, about 4 minutes. Add the sausage and use a fork to crumble the sausage into the pan. Increase the heat to medium-high, and fully cook the sausage, adding some of the pasta water to deglaze the pan.
- Cook the rigatoni until just shy of al dente. Before draining, reserve about 1 cup of the cooking water.
- Add the pasta to the pan with the sausage, reserving the cooking liquid, and add the parsley. Add the spinach and tomatoes and cook, tossing, until the spinach has wilted. Add some of the reserved cooking liquid, if needed. Remove from the heat. Crumble the goat cheese with a fork and add it along with the Parmigiano-Reggiano. Add a bit more of the cooking liquid if needed and serve.

- Heat the oven to 425 degrees F. If using a pizza stone put it in the oven before turning on the heat.
- In a large bowl, dissolve yeast and sugar in warm (110 degree F) water. The temperature is right when it just barely feels warm to your finger. Water that is too hot will kill the yeast.
- Add flour, olive oil and salt and stir together (or use a stand mixer with the dough hook) until a soft dough forms. If dough is to wet mix in an additional flour a teaspoon at a time until no longer sticky. If too dry, mix in additional water a teaspoon at a time.

- In a medium saucepan, whisk together the tomato paste, water and olive oil. Add the rest of the ingredients. Heat over medium heat until it gets hot, then reduce to low and simmer on the stove for about 15 minutes. Turn off the stove and let the sauce sit and cool while you make the rest of the pizza.
- Pour water into a small bowl and sprinkle the yeast on top. Let it stand for a couple of minutes to let the yeast dissolve. In a food processor, mix the remaining dough ingredients, along with yeast water. Turn on the processor and process until the dough comes together and forms a sticky ball. Dump the ball out onto a floured surface and knead it with your hands until it's smooth. If it's super sticky, add a little bit of flour to get it smooth. Put the kneaded dough ball into a large greased bowl, cover it with plastic wrap, and let it rise in a warm place until it doubles (at least an hour). Punch down the dough with your fist after it has risen. Roll out the dough into a pizza shape and place it on a pizza pan. I used a nonstick pizza pan, but you can also use a pizza stone with cornmeal sprinkled on top.
- Preheat your oven to 450 degrees F. Bake the pizza crust for 15 minutes, then remove it from the oven and add your toppings. Spoon pizza sauce on top and then sprinkle it with bacon and goat cheese (or whatever you want). Then put it back into the oven for 10 or 15 more minutes until the crust is lightly browned (like the pictures above). Add the spinach on top after it comes out of the oven.
