A traditional Southern dish, red rice gets its color from lots and lots of tomatoes - nearly two pounds of canned tomatoes, in this recipe. Spice, smoky sausage, and sweet shrimp mingle in this dish to create a perfectly balanced meal.

4 tbsp. unsalted butter
1/4 c. bacon fat
1 small yellow onion, diced
2 1/2 celery ribs (with inner leaves included), diced
2 garlic cloves, minced
2 (14 1/2-ounce) cans organic plum tomatoes, drained and chopped
2 c. chicken stock
2 tbsp. homemade Hot Pepper Vinegar
2 bay leaves
2 chiles (such as chiles de arbol), chopped
3/4 tsp. dried thyme
1 tsp. freshly ground pepper
Kosher salt, to taste
2 c. Carolina Gold or basmati rice
1 lb. shrimp, peeled and deveined
1 lb. smoked sausage (such as andouille), grilled and sliced into 1/2-inch thick pieces

Steps:

  • In a large skillet over medium-high heat, melt together half the butter and half the bacon fat. Add onion, celery, and garlic and sauté until tender, about 5 minutes. Add tomatoes, chicken stock, vinegar, bay leaves, chiles, thyme, and pepper and reduce heat to medium-low; simmer for about 15 minutes. Season with salt.
  • In a large cast-iron skillet over medium heat, melt together remaining butter and bacon fat and sauté rice until opaque, 5 to 6 minutes. Add 4 cups tomato mixture and cook, covered, on very low heat, about 30 minutes. Turn off heat and allow rice to rest, covered, for 5 more minutes.
  • In a separate pan, sauté shrimp in remaining tomato mixture until tender, about 5 minutes; then add grilled sausage. Fluff rice with a fork and combine with shrimp-and-sausage mixture.

½ cup water
½ yellow onion, diced

1 carrot, diced
2 cloves garlic, minced
¼ cup chicken broth
½ teaspoon salt
¼ teaspoon pepper

Steps:

  • Heat oil in a large skillet over medium-high heat.
  • Add shrimp to skillet and season with Chesapeake Bay seasoning.
  • Cook shrimp 3-4 minutes, or until opaque. Remove from skillet and set aside.
  • Heat oil in a large skillet over medium-high heat.
  • Add sausage to skillet.
  • Cook until browned, turning links frequently.
  • Reduce heat to medium-low and add water to skillet.
  • Cover and simmer for 12 minutes. Remove from skillet and set aside.
  • Add onions and bell peppers to the same skillet and cook for 2 minutes.
  • Add chopped sausage, zucchini, corn, and carrot and cook for additional 2 minutes.
  • Stir in shrimp and garlic.
  • Pour chicken stock into pan and stir until well-incorporated.
  • Add salt and pepper.
  • Remove from heat.
  • Top with parsley and serve over rice if desired.

1 tablespoon olive oil
1 pound sausage, such as kielbasa or andouille, sliced
1 pound smoked ham, cubed
1 tablespoon butter
1 medium onion, diced
1 cup diced celery
1 green bell pepper, cored and diced
1 red bell pepper, cored and diced
1 cup seeded and diced tomato
3 garlic cloves, minced
1 jalapeno pepper, seeded and minced OR 1/2 teaspoon cayenne
2 teaspoons diced fresh oregano
1 teaspoon diced fresh thyme
2 tablespoons tomato paste
6 cups chicken stock, preferably homemade
3 cups long-grain rice, rinsed
3 bay leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
6 to 8 dashes hot sauce, optional (recommended: Tabasco)
1/2 cup chopped scallions, divided
3/4 cup chopped fresh parsley, divided
1/4 cup freshly squeezed lemon juice
1 pound medium shrimp, deveined (20 to 24 count)

Steps:

  • Heat the oil in a large Dutch oven or black iron pot over medium heat, add the kielbasa and saute for 8 to 10 minutes, until browned. Remove the kielbasa to a bowl, and set aside. Add the ham to the same pot and cook 8 to 10 minutes, until lightly browned. Remove to the bowl with the kielbasa, and set aside. Add the butter, onion, celery and peppers to the same pot and saute for 8 to 10 minutes, until the onion is translucent. Add the tomato, garlic, jalapeno or cayenne, oregano, thyme, and tomato paste and cook until all the vegetables and herbs are blended well. Add the stock and bring to a rolling boil. Stir in the rice, and add the sausage, ham, bay leaves, salt, pepper and hot sauce. Return to a boil, reduce the heat to low and simmer, covered, for 20 minutes. Add 1/4 cup of the scallions, 1/4 cup of the parsley, the lemon juice and the shrimp, and stir well. Cover the pot, remove it from the heat and allow the jambalaya steam, for 15 minutes, before serving.
  • Garnish with the remaining 1/4 cup scallions and 1/2 cup parsley, and a dash of hot sauce, if desired.

1 pound 21-25 shrimp (cleaned and peeled)
1 pound Andouille sausage
Grapeseed or olive oil
Cajun seasoning
2 packages of Veetee Dine In Rice - Basmati (White Long Grain, Brown Rice or Red Beans and Rice New Orleans Style)

Steps:

  • Season your shrimp with Cajun seasoning. Don't be shy. I like Slap Yo Mamma, which is HOT! Choose the seasoning you enjoy.
  • Heat a non-stick skillet with just about 2 TBS oil over med-high heat. When hot add your shrimp (cook in batches so as not to crows the shrimp, add more oil when necessary).
  • Cook the shrimp through until pink about 2 minutes per side. Place on a plate tented with foil.
  • Slice your sausage into bite-sized pieces and saute until browned a bit. Add more oil if necessary.
  • Meanwhile cook your Veetee Dine In Rice in your microwave or wok according to the packages directions.
  • Assemble your meal by placing the shrimp, sausage and any juice remaining in the pan over your rice and enjoy!

1 cup uncooked rice
3/4 cup medium shrimp, peeled and deveined
1 tablespoon shaoxing wine (Chinese rice wine) or 1 tablespoon dry sherry
salt & freshly ground black pepper
1/4 cup vegetable oil
5 Chinese sausage, boiled 5 minutes, thinly sliced on the diagonal (lop chong)
1/2 inch piece fresh ginger, peeled, minced
3 eggs, lightly beaten
3 green onions, thinly sliced
2 -4 tablespoons sesame oil

Steps:

  • Combine rice and water in a bowl and swish with your hands until water is cloudy. Drain and repeat several times until water is clear. Combine the rice with 11/4 cups water and cook, covered, over medium heat until tender, 25 to 30 minutes. Fluff and set aside.
  • Combine shrimp and wine in a bowl and let stand 5 minutes. Heat vegetable oil in a skillet and stir-fry sausages and ginger for 4 to 5 minutes. Add shrimp and stir-fry just until partially pink, about 1 minute.
  • Add cooked rice to skillet and mix gently. Form a well in the middle and pour in the eggs. Let them set a bit, then scramble by stirring occasionally. When they are soft set, stir them into the rice. Season with salt and pepper.
  • Spread out the rice and let cook, undisturbed, until a crust forms, about 1 minute. Break up the crust and stir, then cook until another crust forms. Repeat 2 or 3 times. Stir in green onions and sesame oil.

Steps:

  • In a large pot, sauté onions, sliced sausage and seasoned salt in olive oil and butter until onions are softened.

  • On a large rimmed baking sheet, place 6 ounces sliced andouille sausage and 1 ½ cups sliced yellow onion. Drizzle with 1 tablespoon olive oil and ½ teaspoon Creole seasoning. Toss to coat well. Bake in the preheated oven until the sausage blisters and the onions are softened for about 8 minutes.
  • Meanwhile, in a bowl, toss 12 ounces large peeled, deveined raw shrimp with 1 teaspoon Creole seasoning and the remaining 1 tablespoon olive oil.
  • Remove the baking sheet from the oven and arrange the seasoned shrimp in an even layer over the sausage mixture. Return to the oven, and bake until pink for about 4 minutes.
