SPICY SLOW COOKER PINTO BEANS



Spicy Slow Cooker Pinto Beans image

This makes a lot of beans--a 7-quart slow cooker's worth! This is not fast cooking, but low and slow. And it's not a low-calorie/low-fat meal. My mother started this recipe and was a staple in our home growing up. My brother has perfected it and shared it with us. Serve with anything you desire. In our home, it's tortillas and eggs! These freeze well and reheat/refry beautifully.

2 pounds dried pinto beans, sorted and rinsed
2 large jalapeno peppers, stemmed
4 large cloves garlic
2 smoked ham hocks, or more to taste
1 large onion, cut into large chunks
2 tablespoons salt
1 ½ tablespoons cayenne pepper, or to taste
1 ½ tablespoons ground black pepper
1 teaspoon smoked paprika
1 pound thick-cut bacon, cut into 1-inch pieces
2 (7 ounce) cans chopped green chile peppers

Steps:

  • Place pinto beans in a 7-quart slow cooker and add enough water to cover. Allow to soak for 3 to 4 hours.
  • Combine jalapeno peppers and garlic in a food processor; puree into a paste.
  • Drain beans and return to the slow cooker. Stir in jalapeno-garlic paste. Nestle ham hocks among the beans. Sprinkle onion chunks, salt, cayenne, pepper, and paprika over the beans. Place bacon and green chiles on top.
  • Cover and cook on Low for 10 hours. Remove ham hocks. Cool slightly; shred the meat.
  • Return meat and fat to the slow cooker. Stir for a few minutes to incorporate fat into the beans and give liquid a creamy consistency. Turn off or keep warm until ready to serve.

You won't believe the flavor of these spicy pinto beans! Pinto beans and jalapenos cook together in the slow cooker and make a creamy and decadent side dish.

16 oz. dried pinto beans (no need to presoak)
1 cup diced yellow onion
1-2 jalapeno peppers (sliced)
2 tsp. chili powder
1/2 tsp. onion powder
1/2 tsp. garlic powder
1/4 tsp. pepper
32 oz. container chicken broth ((can use vegetable broth))
2 cups water
1/4 tsp. salt (or more to taste)

Steps:

  • Rinse and drain the beans, discard any dirt clumps or rocks. Add to the slow cooker.
  • Add the onion, jalapenos, chili powder, onion powder, garlic powder, pepper, chicken broth and water to the slow cooker with the beans. Wait to add the salt.
  • Cover and cook on HIGH 6-7 hours. Do not open the lid while they cook, or they will not get tender.
  • When the cooking time is done mash about 1/4 of the beans with a potato masher right in the slow cooker. Or you can put a scoop in a bowl and mash with a fork and add back to the slow cooker. This will make the beans creamy, which the slow cooker can't do since the simmer is so low. Add salt to taste, I usually use 1/4 tsp.
  • Serve as a side dish or as a main with tortillas or cornbread. Enjoy!

¾ green bell pepper, diced
2 celery ribs, chopped

1 pound Black Forest ham, cubed
1 teaspoon ground cumin, or to taste

2 bay leaves
1 tablespoon lard
5 cups chicken broth, or as needed to cover

Steps:

  • Cover pinto beans with water in a large bowl; allow beans to soak overnight.
  • Place onion, green bell pepper, celery, garlic, Black Forest ham, soaked pinto beans, cumin, oregano, bay leaves, and lard in a slow cooker.
  • Pour enough chicken broth into the slow cooker to cover the other ingredients.

1 pound dried pinto beans, rinsed and picked over (see Cook's Note)
48 ounces low-sodium chicken broth (or one 32-ounce carton plus 2 cups water)
One 8-ounce jar mild or hot diced pickled jalapeños
2 tablespoons dried oregano
1 tablespoon ground cumin
3 cloves garlic
2 dried bay leaves
1/4 cup cilantro leaves plus 1/4 cup chopped cilantro stems, optional
Kosher salt
3/4 cup shredded sharp Cheddar or crumbled Cotija or queso fresco
1 lime, cut into wedges

Steps:

  • Put the beans, chicken broth, pickled jalapeños and brine from the jar in a 4-to-7-quart slow cooker. Stir in the oregano, cumin, garlic, bay leaves, cilantro stems if using and 1 teaspoon salt. Cover and cook on high until the beans are tender but still hold their shape, 8 to 10 hours.
  • Remove and discard the bay leaves. Use the back of a spoon to smash the garlic cloves, then stir them into the beans. Serve topped with the cheese, cilantro leaves and lime wedges.

I make these in a pressure skillet, a shallow version of a pressure cooker. The beans are soupy, but you can cook them a little longer in the open pan to reduce the liquid if you prefer thicker "juice". I use Herdez salsa casera for this.
