3 teaspoons corn starch
1 teaspoon salt
1 tablespoon rice wine
½ teaspoon white pepper
1 tablespoon soy sauce
1 stalk scallion, shredded
2 slices ginger
4 chicken thighs, chopped into bite-sized pieces
vegetable oil, as needed for frying
2 tablespoons szechuan peppercorn
5 red chilis, chopped
50 dried red chilis, whole
4 slices ginger
1 stalk scallion, chopped
⅓ cup peanuts
½ teaspoon sugar
½ tablespoon rice wine
1 tablespoon sesame oil
scallion, chopped for garnish

Steps:

  • Combine marinade ingredients in a bowl, add the chopped chicken. Marinate for 10 minutes.
  • In about 1 ½ inch (4 cm) of oil, fry the chicken until browned and crispy. Remove and set aside.
  • Heat oil in a wok or a large pan. Add the Szechuan peppercorn and dried red chilies. Fry until fragrant.
  • Add the rest of the dried red chilies, ginger, scallion, and peanuts. Fry for a minute.
  • Add the fried chicken pieces, sugar, rice wine and sesame oil. Toss to coat.
  • Garnish with chopped scallions.

This is out of my "Hot Barbecue" cookbook. It says that if you omit the green onions and cilantro you can make a large batch of the marinade and it will keep indefinitely in the refrigerator, just add the green onion and cilantro to the portion that you use that day. It is excellent on spareribs and firm-fleshed fish. Serve with fried rice and a salad. The cooking time does not include marinating time.

2 frying chickens, cut into pieces
3 tablespoons chinese rice wine (or dry sherry)
3 tablespoons hoisin sauce
3 tablespoons soy sauce
2 tablespoons oyster sauce
2 tablespoons red wine vinegar
1 tablespoon sesame oil
1 tablespoon Asian chili sauce
2 tablespoons sugar
1 tablespoon garlic, finely minced
1 tablespoon ginger, very finely minced
2 green onions, minced
1/4 cup fresh cilantro stem, chopped

Steps:

  • Rinse the chicken pieces, pat dry, and place in a bowl.
  • Combine the marinade ingredients and mix well.
  • Add the marinade to the chicken and coat the pieces evenly.
  • Cover and refrigerate for at least 30 minutes or up to 8 hours.
  • To grill: Heat grill to medium temperature and brush the cooking rack with oil, then lay the chicken skin-side up in the center of the rack.
  • Cover the grill and regulate the heat so that it remains at a medium temperature.
  • Grill the chicken for about 12 minutes on each side.
  • The chicken is done when the breasts register 160° and the thighs register 170° on a meat thermometer.
  • As the chicken cooks, brush on the remaining marinade.
  • To roast: Preheat the oven to 425°.
  • Roast the chicken until the juices run clear when the meat is prodded deeply with fork, about 30 minutes.
  • During roasting, brush with the marinades.

Awesome as an appetizer OR a meal. I saw this on the Food Network one Sunday morning and I just had to jot down the recipe to try it out; it looked absolutely divine! Since I haven't made it myself yet, I am unsure as to how many servings it is. From what it looked like on TV, I am estimating it will make about 18 lettuce wraps.

2 boneless skinless chicken breasts
oil, for cooking
1 lemon, juice of
2 tablespoons butter
bibb lettuce or iceberg lettuce
1 daikon radish, julienned
2 carrots, julienned
1/2 cup green onion, diced
1/4 cup bean sprouts
1/2 cup szechuan sauce (check in your Asian grocery aisle)
1 tablespoon Chinese five spice powder
1/4 teaspoon cayenne pepper
1 pinch sea salt
1 pinch cracked black pepper

Steps:

  • In a small bowl, mix the 5 spice powder, cayenne pepper, sea salt, and black pepper together. Set aside.
  • Slice the chicken breasts in half lengthwise, and pound out in between two sheets of plastic wrap. This is to ensure even cooking.
  • Sprinkle on spice mixture evenly on both sides of the chicken breasts, lightly patting "rub" onto the chicken.
  • Heat oil in pan over medium high/high heat and fry chicken until lightly browned. (If your breasts are pounded out thin, it should not take too long to cook.) Put a little bit of butter (about 1/2 tbsp) on the top of each chicken breast, and drizzle lemon juice as well, for extra flavor. Flip chicken breasts over to cook the other side and repeat process.
  • Once the chicken has been fully cooked, remove from heat and place onto a platter and allow to rest for 10-15 minutes.
  • While the chicken is resting, prepare the slaw mix. Peel and wash your carrots and daikon radish. If you have a mandolin, you may use that to slice the carrots. Otherwise, thinly slice the carrots and daikon into julienned strips.
  • In another bowl, combine the carrots, daikon, diced green onions, bean sprouts, and Szechuan sauce together.
  • Thinly slice the chicken breasts. You can either slice them into strips or dice them, depending on your preference.
  • Arrange a little of the slaw mix and the chicken onto each bib lettuce cup. If you are unable to find bib lettuce, you can try using regular iceberg lettuce cups instead.
  • If you are serving this as an appetizer, it should serve about 4-6 people.

2 chicken breasts
1 teaspoon ginger
3 tablespoons soy sauce
2 tablespoons oil
1 carrot
1/2 pepper
75 g sugarsnap peas
4 spring onions
50 g bean sprouts
100 g peanuts
2 chilies
1/2 teaspoon sugar
1 tablespoon vinegar

Steps:

  • Whisk the ginger and soy sauce, pour over the chicken to coat every piece. Chill for at least 1 hour.
  • Heat 1/2tbsp oil in a wok or deep frying pan. Stirfry the nuts over a high heat for 1 minute or until golden. Drain from the pan with a slotted spoon. Set aside.
  • Lower the heat to medium-high and add 1tbsp of oil. Add the chicken and marinade and stirfry for 3 minutes. Drain the chicken and set aside.
  • Add the remaining oil to the pan. Stir fry the carrot and pepper for 2 minutes. Add the sugarsnap peas and spring onions, stirfry for 1 minute, then add the beansprouts and stirfry for a further minute.
  • Return the chicken and nuts to the pan and add the chillies. Sprinkle over the sugar and vinegar and toss everything over the heat for 2 minutes until hot and the chicken is cooked through. Serve immediately with egg fried rice.

1 lb chicken breast, cut into thin strips (boneless, skinless)
2 teaspoons orange zest (finely grated)
1 tablespoon cornstarch (plus 2 tsp.)
2 tablespoons reduced sodium soy sauce
1/2 cup orange juice
1/3 cup reduced-sodium chicken broth
2 teaspoons honey
1 teaspoon sesame oil (dark)
1/4 teaspoon red pepper flakes
2 teaspoons canola oil
1 tablespoon fresh ginger, finely grated
2 garlic cloves, sliced
1/2 bunch broccoli, cut into florets (3 cups)
2 carrots, thinly sliced on the diagonal

Steps:

  • Cook rice according to package directions, omitting salt and fat.
  • Meanwhile, combine chicken, orange zest, 1 tablespoons cornstarch and 1 tablespoons soy sauce in a large bowl and toss to coat. Combine orange juice, broth, honey, sesame oil, pepper flakes, remaining 2 teaspoons cornstarch and remaining 1 tablespoons soy sauce in small bowl.
  • Heat 1 teaspoons canola oil in wok or large nonstick skillet over medium high heat until very hot. Add chicken and stir fry until lightly browned, about 3 minutes; transfer to a plate. Return skillet to heat and add remaining 1 teaspoons canola oil. Add ginger and garlic; stir fry until fragrant, about 15 seconds. Stir in broccoli and carrots and stir fry until broccoli is bright green, about 2 minutes. Pour in orange juice mixture; bring to a boil and cook until thickened, about 1 minute. 1 (3/4 inch thick) slice fresh ginger, crushed
1 teaspoon Sichuan peppercorns
¼ cup soy sauce
¼ cup chile oil
2 tablespoons white sugar
¼ teaspoon monosodium glutamate (MSG)
¼ teaspoon Sichuan peppercorn oil
6 spring onions (white parts only), cut into 3/4-inch pieces
1 teaspoon toasted sesame seeds, or to taste

Steps:

  • Bring a large pot of water to a boil; add chicken and cook for 2 to 3 minutes. Drain and discard water.
  • Bring a large pot of fresh water to a boil; add chicken, ginger, and peppercorns. Add more water if needed to cover chicken completely. Cover and cook over high heat until chicken is no longer pink and juices run clear, 35 to 45 minutes. Drain and discard water.
  • Horizontally chop chicken into 3/4-inch pieces, cutting through the bone and skin. Vertically chop into 3/4-inch squares; transfer to a bowl.
  • Combine soy sauce, chile oil, sugar, MSG, and Sichuan peppercorn oil in a bowl to form a sauce; pour over chicken and toss well. Garnish with spring onions and sesame seeds.
