- In a small skillet, saute onion in butter until tender. In a 5-qt. slow cooker, combine the onion, milk, soups, corn, Creole seasoning and garlic powder. , Cover and cook on low for 3 hours. Stir in shrimp and cream cheese. Cook 30 minutes longer or until shrimp are heated through and cheese is melted. Stir to blend.

LOW COUNTRY SHRIMP CHOWDER

- Heat the butter in a large pot over medium-high heat. Add the scallion whites, celery and bell pepper and cook, stirring occasionally, until the vegetables are crisp-tender, about 4 minutes. Add the flour and Old Bay Seasoning and cook, stirring, until the flour is lightly toasted, about 1 minute. Add the milk, 6 cups water and the rice. Bring to a rapid simmer, then reduce the heat to medium and cook until the rice is tender, about 15 minutes. Add the corn to the pot and cook 3 minutes. Stir in the shrimp and cook until they curl and turn opaque, about 3 more minutes. Season the chowder with salt and pepper and stir in the sherry. Ladle into bowls and top with the scallion greens.
SPICY SHRIMP CHOWDER
I love chowders, shrimp and spice, so what is not to like about this soup. I like to add a dollop of my "house salsa", which is a mixture of habeneros and chipotles in adobo sauce. It is also in this cookbook. Be careful though, it is really hot, but lots of flavor.

- In a large soup pot, fry bacon over medium heat, until browned. Transfer bacon to a paper towel to drain.
- Remove all but 2 tablespoons bacon fat.
- Sauté onion, celery, chiles, and garlic for 5 minutes or until limp. Add chicken broth and potatoes to the soup pot.
- Cover and simmer over medium-low heat for 15 minutes, or until potatoes are tender.
- Transfer soup to blender, and puree until smooth. Put pureed soup back in soup pot.
- Stir in shrimp, cilantro, and bacon. Bring the soup to a simmer.
- Simmer until shrimp are bright pink. Do not overcook. Season with salt and pepper.

I fixed this soup one New Year's Eve and had family over. My cousin's husband came up to me and hugged my neck and said he HAD to have the recipe. He said he had eaten a soup that tasted exactly like this one on his honeymoon 15 years ago and has been craving it ever since and this night his craving was finally satisfied after all those years...

Steps:
- Melt a stick of real butter into a pot.
- Add 1 - 2 teaspoons of liquid crab boil - to your taste (found in the spice aisle at the supermarket)
- Add 1 full bunch of green onions - greens and whites chopped
- Add 1 medium onion - chopped
- Cook until onions are soft
- Add 1 lb. of peeled and deveined raw shrimp. Cut into bite size pieces or you can leave them whole.
- Add 1 can of condensed cream of potato soup
- Add 1 can of creamed corn
- Add 1 can of whole kernel corn - drained
- Add 1 pint of half & half
- Simmer on medium-low for about 20 - 25 minutes until heated through

- 1. You can use a high sided sautee pan or a pot either way. Melt butter in saucepan. Sautee chopped onions and celery in melted butter on low/med. heat until onions are done. Be careful not to burn onions. They should look fairly clear.
- 2. In small bowl blend all dry ingredients with a whisk (peppers, thyme, marjoram and baking mix).
- 3. If shrimp is frozen thaw in colander sitting inside large bowl in cold water. Warm water will make the mushy! They shouldn't take long to thaw.
- 4. Open cans of crab and clams and drain then place in a bowl together.
- 5. Once onions and celery are ready add milk and cream of potato soup. Cook on med. heat until piping hot. Stir occassionally so as not to burn milk.
- 6. Once mixture is hot dip a small amount out and add to dry mixture and blend with whisk. Then add blended mixture to soup and whisk until blended. You may notice some little bits of mixture but they will go away on their own.
- 7. Once blended into soup add crab, clams and shrimp. Once shrimp turns pink the soup is done. This will take only a moment or so. Remove from heat and dig in! ENJOY!

ANN PACHETT'S SPICY SEAFOOD CHOWDER
Steps:
- Heat oil in heavy large pot over medium-heat. Add onion, celery, and green pepper; sauté until tender, about 5 minutes. Add garlic; sauté 1 minute. Add basil, thyme, oregano, and dried crushed red pepper; sauté 1 minute. Stir in bottled clam juice and tomato sauce; bring to boil. Reduce heat to medium-low and simmer until slightly thickened, about 30 minutes. (Broth can be prepared 1 day ahead. Refrigerate uncovered until cold, then cover and keep refrigerated. - Peel shrimp; place shells in Dutch oven or stockpot. Coarsely chop shrimp; refrigerate until ready to use. Add broth, water, onions, celery and thyme to Dutch oven. Bring to boil; cover. I got the inspiration for this creation while watching one of my least favorite chefs, Email Lagross (who, by the way, is one of only a handful of chefs in the world who has such rare spices as "papa reeka" and "cardamin" in his pantry) on TV. As I watched him standing back and throwing spices, from about 6 feet away, into (or "inside of", in Lagross-speak) the pot, I said to myself, "Self! This is a freakin' cooking show, not basketball tryouts!" Fortunately, since I am not schizo, "self" did not answer "me". Are you with me so far?

Steps:
- In a heavy stockpot, over medium-high heat, cook the bacon or pancetta until most of the fat is rendered, about 8 minutes.
- Stir in the scallions, onion, celery and carrots.
- Sauté for about 2 minutes until the veggies start to wilt.
- If desired, season lightly with salt and pepper (be careful since the bouillon/stock and Old Bay seasoning are salty you can adjust later).
- Add the bay leaves, thyme, Tabasco and Old Bay.
- Stir in the flour and cook for 2 minutes.
- Add the potatoes and stir in the bouillon or stock.
- Bring to a gentle boil and then reduce heat to simmer.
- Simmer until the potatoes are just fork tender, about 10 to 12 minutes.
- Add the heavy cream and bring just to a simmer no hotter or the soup may stick to the bottom.
- Add the shrimp and simmer for 2 to 4 minutes until the shrimp are just turning opaque.
- Stir in the parsley, taste the soup and adjust seasonings if necessary.
- Eat it.
