This recipe spiced up boring breakfast sausage when I spent summers cooking three daily meals for my father and his crew. Lamb can also be used in place of the pork.

1 pound fresh, ground pork sausage
1 tablespoon crushed red pepper
1 ½ tablespoons ground cumin
3 cloves garlic, finely chopped
salt to taste

Steps:

  • In a bowl, mix together with your hands Pork sausage, red pepper, cumin, garlic and salt. Form patties. Fry in a skillet over medium heat until well done.

A little spicy and a little sweet, these sausage patties are simple to make and easily customizable with your favorite seasonings. The sausage has a mild heat level; double the red pepper flakes for a medium to hot heat level. Make a batch each Sunday for easy breakfasts throughout the week.

1 pound ground pork
2 tablespoons pure maple syrup
1 teaspoon salt
1 teaspoon dried sage
½ teaspoon onion powder
½ teaspoon ground black pepper
½ teaspoon red pepper flakes
¼ teaspoon ground marjoram
¼ teaspoon ground coriander
1 pinch ground cloves
1 tablespoon olive oil

Steps:

  • Combine pork, maple syrup, salt, sage, onion powder, black pepper, red pepper flakes, marjoram, coriander, and cloves in a bowl; mix well. Form into 10 small patties.
  • Heat olive oil in a large skillet over medium heat. Working in batches, add patties, and fry until no longer pink in the center and the juices run clear, 3 to 4 minutes per side. An instant-read thermometer inserted into the center should read at least 160 degrees F (73 degrees C).

2 pounds coarsely ground fresh pork butt, chilled
1/2 pound coarsely ground fresh pork fat (available at butcher shops), chilled
2 large garlic cloves, minced and mashed to a paste with 2 teaspoons salt
2 teaspoons black pepper
1 tablespoon dried sage, crumbled
3 tablespoons minced fresh thyme leaves or 1 tablespoon crumbled dried, plus, it desired, fresh thyme sprigs for garnish
1/2 teaspoon cayenne, or to taste
2 tablespoons vegetable oil

Steps:

  • In a bowl combine well the pork butt, the pork fat, the garlic paste, the pepper, the sage, the thyme leaves, and the cayenne and chill the mixture, covered, overnight. Divide the mixture into 16 balls and flatten each ball into a 1/3-inch-thick patty. In a large skillet heat the oil over moderate heat until it is hot but not smoking, in it fry the patties in batches for 4 minutes on each side, or until they are golden brown and no longer pink within, and drain them on paper towels. Transfer the patties to a serving plate and garnish them with the thyme sprigs.

1/2 cup fresh breadcrumb
1 small onion, finely chopped
1 garlic clove, minced
1 1/2 teaspoons chili powder
1/2 teaspoon hot pepper sauce
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried oregano
1/4 teaspoon cinnamon
1/4 teaspoon ground cumin
1/4 teaspoon clove

Steps:

  • In large bowl, beat egg until foamy.
  • Add pork, breadcrumbs onion, garlic, chili powdeer, hot pepper sauce, salt and pepper, oregano, cinnamon, cumin and cloves.
  • Mix well.
  • Divide mixture into 8 equal portions.
  • Form into patties.
  • Place on roasting rack.
  • Cover with paper towel and microwave on HIGH for 2 minutes.
  • Turn patties over.
  • Microwave covered with paper towel at HIGH for 3 minutes or until cooked through, rotating rack once.

This delicious sausage can be stuffed into casings or formed into patties. I use a wide-mouth canning jar ring and lid to make the patties. Place the ring, top down on the counter. Lay a piece of plastic rap on top of it. With an ice cream scoop, place the sausage into the ring. Lay another piece of plastic wrap on top and smash down with the lid. Perfect size for muffin, egg, cheese and sausage sandwich.
