SPICY SAUSAGE MEATBALL SAUCE
I threw together three favorite veggies and spicy sausage for this incredible sauce that makes our mouths water the whole time it's cooking. Besides serving this with pasta (refrigerated tortellini is best), we've had it with brown basmati rice, as "sloppy subs" on toasted Italian rolls and as a "stew" with garlic bread. -Ann Sheehy, Lawrence, Massachusetts

SPICY SAUSAGE MEATLOAF PATTIES WITH ITALIAN BARBECUE SAUCE
I was making my annual Christmas Pasta for the holiday and my mom and I bought duplicate meats so we had lots of leftover hot and sweet sausage and ground beef. Well, the next day, this recipe was born.

- Mix ground beef and sausages with egg, bread crumbs, cheese, and cooled vegetables. Form 4 large oval shaped patties no more than 1 1/4 inches thick then drizzle with extra-virgin olive oil. Place in the oven on a cookie sheet and bake 17 to 18 minutes, until cooked through.
- Heat a medium sauce pot over medium high heat. Add a drizzle of EVOO to the pan and the pancetta. Let the pancetta crisp up a bit and render fat, then add onions and garlic and cook until tender, 8 to 10 minutes. Add a splash of red wine to deglaze the pan. Stir in the beef stock and tomatoes and season sauce heavily with coarse black pepper. Add Worcestershire and hot sauce and reduce heat to warm.

SPAGHETTI SAUCE WITH MEATBALLS
This is my own recipe and never published before. I usually just dump everything in the pot without measuring it, but decided that if I wanted to post it, I had better measure so that others can at least have a starting point. Tweak it to your own tastes by adding either spicy or sweet Italian sausage. I like the bite of spicy. The spices listed here are approximate. Taste often and add more as needed. Just remember, that although you can add spices all day long, you can never remove them once they are in the sauce so add a little at a time, simmer a short time, taste and add more if desired. Make the recipe your own in the comfort of your kitchen by taking liberties with it. I won't mind in the least. It is what I would do if this recipe was posted by you. Note: The meatballs will feel dry due to the breadcrumbs while mixing. It will take some effort to mix, but do not add egg to the mix. Just keep squeezing the mixture through your fingers until all the cheese and bread crumbs are incorporated into the meat. You will not need the egg to bind them.

ITALIAN SAUSAGE MEATBALLS
I developed this recipe as I was reviewing many other meatball recipes. The spices in the sweet Italian sausage give it the extra kick. These meatballs can be frozen for use later. Or used immediately in your favorite sauce. These are also a great appetizer with dipping sauce.

This is a recipe that I put together on the spur of the moment cause I didn't have any pizza sauce in my pantry. It actually turned out wonderful. If you like meaty and spicy medium sauce you will enjoy this on your pizza or even on a plate of spaghetti.

- Remove the skins from the sausages (discard the skins), then break each sausage into thirds. Heat 1 tbsp oil in a sauté pan and, when hot, add the sausages. Brown all over, then remove and set aside. Chop the onion, crush the garlic, then add to the pan with the paprika and a splash more oil. Reduce the heat and fry gently for 5-6 minutes until the onion has softened.
- Add the chopped tomatoes and red wine vinegar and bring to a gentle simmer. Return the sausages to the pan and cook, stirring frequently, until the sauce reduces and thickens. Taste and adjust the seasoning.
- Meanwhile cook the rice. Put it in a pan and fill with cold water to just over 1cm above the top of the rice. Add some salt and put over a high heat until boiling. Simmer the rice for 1 minute, then turn the heat to low. Cover the pan and cook for 15-20 minutes until tender.
- Stir the herbs into the rice along with some seasoning. To serve, add another splash of oil to the sausage pan, then divide the sausages and rice among 4 plates.
