1-1/4 pounds pork tenderloin
2 tablespoons soy sauce
1 tablespoon cornstarch
1/4 teaspoon salt
1/4 teaspoon sugar
1/4 teaspoon ground ginger
1/4 teaspoon cayenne pepper
1 medium onion, thinly sliced
1 medium carrot, julienned
1 garlic clove, minced
2 tablespoons vegetable oil
1 package (6 ounces) frozen snow peas, thawed
Boston lettuce leaves or hot cooked rice
Toasted sesame seeds, optional

Steps:

  • Cut the pork into 1/8-in. wide slices; cut each slice into 3-in. strips. In a bowl, combine the soy sauce, cornstarch, salt, sugar, ginger and cayenne. Add pork; toss to coat and set aside. , In a large skillet or wok, stir-fry onion, carrot and garlic in oil until crisp-tender. Remove with a slotted spoon and keep warm. , In the same skillet, stir-fry pork over medium-high heat until browned and no longer pink. Add onion mixture and peas; heat through. Serve in lettuce cups or over rice. Sprinkle with sesame seeds if desired.

3/4 pound boneless pork
For the Marinade:
2 teaspoons Chinese rice wine
1 teaspoon soy sauce
Pinch of salt
Pinch freshly ground black pepper
For the Sauce:
2 tablespoons hoisin sauce
1 teaspoon soy sauce
4 tablespoons water
For the Dish:
3 1/2 tablespoons oil for stir-frying, or as needed
2 slices ginger
6 ounces fresh snow peas
1/4 teaspoon chile paste, optional

Steps:

  • Gather the ingredients.
  • Cut the pork into 1/2-inch cubes.
  • Add the marinade ingredients and marinate the pork for 20 minutes.
  • In a small bowl, mix together the hoisin sauce, soy sauce, and water. Set aside.
  • Heat the wok over medium-high to high heat. Add 2 tablespoons oil to the heated wok. When the oil is ready, add the pork. Stir-fry until it changes color and is nearly cooked through. Remove from the wok.
  • Heat 1 1/2 tablespoons oil in the wok. Add the ginger and stir-fry until aromatic (about 30 seconds).
  • Add the snow peas. Stir-fry for 1 minute.
  • Season with salt, sugar, or soy sauce if desired, and stir-fry for 1 more minute.
  • Push the snow peas up to the sides of the wok. Add the sauce in the middle. Heat briefly, then mix in with the snow peas.
  • Add the pork back into the wok. Stir in the chile paste if using. Cook for another 30 seconds and serve hot.

2 tablespoons soy sauce
1 tablespoon cornstarch
1 tablespoon water
1 lb pork tenderloin, cubed
1 lime, juiced
1 tablespoon soy sauce
2 tablespoons rice vinegar
1 teaspoon cornstarch
3 teaspoons dark sesame oil
1 tablespoon peanut oil
3 teaspoons minced fresh gingerroot
2 green chili peppers, chopped
1/2 cup julienned carrot
1/2 cup sugar snap pea, julienned
2 teaspoons chili oil
1/4 cup chopped green onion
1/4 cup finely chopped peanuts

Steps:

  • In a medium bowl, mix 2 tablespoons soy sauce, 1 tablespoon cornstarch and water.
  • Wisk together until smooth then stir in the pork cubes.
  • Cover and refrigerate for 30 to 45 minutes.
  • In another bowl combine the lime juice, 1 tablespoon soy sauce, vinegar, 1 teaspoon cornstarch and sesame oil.
  • Mix together and set aside.
  • Remove pork and marinade from refrigerator.
  • In a large fry pan or wok heat peanut oil until hot.
  • Stir in ginger and chile pepper and saute for 1 minute.
  • Then stir in pork with marinade, carrots, and sugar peas and stir-fry for 6 to 8 minutes or until pork is tender.
  • Pour in lime mixture, reduce heat and simmer until sauce thickens, approximately 6 to 8 minutes.
  • Remove from heat and stir in hot chile oil, green onions and peanuts.

1/4 cup chopped cilantro
3 tablespoons vegetable oil
1 pound ground pork

1/2 cup chicken stock

Steps:

  • Combine the chiles, garlic and cilantro in a small bowl and mix well. Heat the oil in a wok, swirling to coat the surface, add the chili mixture and stir-fry until garlic is aromatic, about 1 minute. Add the pork and stir fry, stirring often, until meat is cooked, about 5 minutes. Add the oyster sauce, fish sauce, sugar and chicken stock, toss and stir to combine and heat thoroughly. Stir in the basil leaves and immediately serve over rice.

1 teaspoon cornstarch
1 tablespoon soy sauce
1 teaspoon soy sauce
12 ounces lean pork loin, cut into thin strips
3 tablespoons black bean chili sauce
1 teaspoon black bean chili sauce
1/2 cup chicken stock
1 teaspoon sugar
3 tablespoons peanut oil or 3 tablespoons palm kernel oil
2 Japanese eggplants, cut in 1/2 and sliced diagonally into 1/2-inch sections
1 medium red onion, thinly sliced
1 red bell pepper, thinly sliced
2 garlic cloves, minced
2 green jalapenos, thinly sliced (or to taste)
2 cups jasmine rice
1 1/2 cups coconut milk, can use low-fat
1 1/2 cups chicken stock
1/2 teaspoon salt
1/2 teaspoon pepper
3 -4 scallions, sliced thinly on a bias

Steps:

  • Stir together the cornstarch and soy sauce and pour over the pork strips. Stir to combine and set aside.
  • Stir together the black bean chili sauce, chicken stock and sugar. Set aside until ready to use.
  • Preheat the wok over medium-high to high heat and add 2 tablespoons of the oil. Swirl quickly to coat the sides of the pan with the oil. Add the eggplant and cook until tender, stirring frequently, 3 to 4 minutes. Remove with a slotted spoon and set aside on a plate lined with paper towels. Add the remaining tablespoon of oil and swirl again to coat all sides. Cook the onions, stirring, until slightly tender, 1 to 2 minutes. Add the bell peppers and cook until tender, 1 to 2 minutes. Add the garlic and cook for 5 to 10 seconds. Add the red and green jalapenos and cook for 30 seconds.
  • Return the eggplant to the wok and add the pork. Cook, stirring, until pork is no longer pink, 2 to 3 minutes. Add the black bean mixture and bring to a boil. Cook, stirring, until everything is well coated with the sauce and heated through.
  • To make rice, in a medium saucepan combine the jasmine rice with the coconut milk, chicken stock, salt and pepper. Bring to a boil, reduce heat to a simmer, cover, and cook for 20 minutes. Remove from the heat and let sit, undisturbed for 5 minutes. Add the scallions and fluff the rice with a fork. Serve immediately.

3 tbsp sesame oil
350g lean pork mince
350g egg noodles
thumb-sized piece ginger, peeled and chopped, or 1½ tbsp ginger purée
3 garlic cloves, crushed, or 1 tbsp garlic purée
320g stir-fry veg (we used 2 x 160g bags of mangetout, baby sweetcorn, beansprouts, carrots and peppers)
4 tbsp low-salt soy sauce
2 tsp cornflour
4 tbsp sweet chilli sauce

Steps:

  • Heat the oil in a wok or frying pan. Add the mince, break it up with a spoon and fry over a high heat for about 8 mins until browning. While the meat cooks, boil a kettle, then pour the hot water over the noodles. Set aside for 5-10 mins to soften.
  • Add the ginger, garlic and veg to the pan and stir-fry for 2-3 mins. Mix 1 tbsp soy sauce with the cornflour to make a paste. Add the remaining soy sauce, the chilli sauce and 2 tbsp water. Drain the noodles and add to the pan with the sauce. Cook until the sauce coats the noodles, adding a splash of water if needed, then serve.
