20 MINUTE NO SUGAR PINK APPLESAUCE
This 20 Minute Pink Applesauce recipe adds the perfect hint of sweetness to every meal, whether it's a holiday feast or simple weeknight dinner ~ and just look at that pretty rosy color!

- Wash the apples well. Do Not Peel! Chop them into 1 inch pieces, discarding the core.
- Put the apples, cider, cinnamon and cloves into a heavy soup pot. Bring to a simmer, cover, and cook over medium heat for about 20 minutes, stirring often, until the apples are soft.
- Remove the spices, and then puree the apples in a food processor. I did this in batches so as not to overload the processor. You can puree the apples to a super smooth consistency, or keep some texture. I chose to retain a little bit of texture in mine.
- Refrigerate the sauce until needed. It will keep for a week in the refrigerator.
SPICY APPLESAUCE CAKE
This is my favorite applesauce cake! I use our home- made chunky applesauce when apples are in season. If needed, put in food processor to break up big pieces and drain as needed. This is a yummy, moist cake. Add a dollop of whipped cream or creamy frosting and it becomes an even better dessert.

- 1. Except for sugar: whisk all dry ingredients together in large bowl, set aside.
- 2. Cream butter and sugar, then add lightly beaten eggs, dry ingredients, and applesauce beat until mixed well. Stir in nuts, chips and raisins.
- 3. Pour into greased 9x13 pan. Combine topping ingredients and sprinkle over batter. Bake at 350 degrees for 35-40 minutes or until tests done.

- Preheat oven to 350 degree F (175 degrees C). Line a mini muffin pan with paper liners.
- In a large bowl, cream together the butter or margarine and sugar. Add eggs, and beat until smooth. Blend in cinnamon, allspice, baking powder, and baking soda. Alternately add in a half cup of applesauce, one cup of flour, remaining applesauce, and remaining flour. Stir until just blended together. Pour batter into muffin cups 2/3's of the way full.
- Bake in preheated 350 degree F (175 degrees C) oven for 17 minutes.

- Peel, core, and cut the apples into 1 1/2-inch pieces; place in a medium saucepan with sugar and 1/4 cup apple juice. Cook over medium-low heat, stirring, until apples are soft enough to mash, 50 to 60 minutes.
- Add the remaining cup of apple juice, and continue to cook until the apples are very soft and break down, about 30 minutes. Using wooden spoon, stir to break large pieces. If applesauce gets too dry, add more juice, 1/4 cup at a time as needed. Remove saucepan from heat, and whisk apples until smooth. Stir in cinnamon, nutmeg, and cloves. Serve at room temperature.

- Preheat the oven to 350 degrees F. Adjust the racks to the center of the oven. Spray a Bundt pan with nonstick spray.
- Whisk together the flour, baking soda, cinnamon, salt, ginger, cloves and nutmeg in a large bowl. Beat together the butter and brown sugar in a separate bowl with an electric hand-held mixer until light and fluffy, about 4 minutes. Add the eggs, one at a time, until incorporated. PORK CHOPS WITH SPICY APPLESAUCE
Steps:
- Make the Pork Chops: Preheat oven to 425 degrees F. Sprinkle both sides of pork chops with salt and pepper.
- Heat large skillet over medium-high heat; add vegetable oil. Place chops in skillet; cook 3 minutes per side.
- Transfer to oven and bake 6 to 8 minutes or until internal temperature reaches 145 degrees F for medium-rare (or 160 degrees F for medium). Transfer chops to serving platter and let rest 3 minutes before serving.
- Meanwhile, make the Spicy Applesauce: Heat olive oil in medium pot over medium-high heat. Add apples and cook 5 minutes, stirring occasionally. Add brown sugar, vinegar, red pepper flakes, cayenne, salt and pepper; cook an additional 5 minutes, stirring occasionally. Remove from heat and stir in rosemary. Serve pork chops with warm applesauce.
