SPICY APPLESAUCE
We have an apple-picking party every year. It's a bushel of fun, and I always look forward to cooking a batch of this easy applesauce seasoned with cinnamon, cloves and allspice. -Marian Platt, Sequim, Washington

Steps:
- In a Dutch oven, combine all ingredients; bring to a boil. Reduce heat; simmer, covered, 25-35 minutes or until apples are tender, stirring occasionally. Remove from heat; mash apples to desired consistency. Serve warm or cold. Freeze option: Freeze cooled applesauce in freezer containers. To use, thaw in refrigerator overnight. Serve cold or heat through in a saucepan, stirring occasionally.

20 MINUTE NO SUGAR PINK APPLESAUCE
This 20 Minute Pink Applesauce recipe adds the perfect hint of sweetness to every meal, whether it's a holiday feast or simple weeknight dinner ~ and just look at that pretty rosy color!

Steps:
- Wash the apples well. Do Not Peel! Chop them into 1 inch pieces, discarding the core.
- Put the apples, cider, cinnamon and cloves into a heavy soup pot. Bring to a simmer, cover, and cook over medium heat for about 20 minutes, stirring often, until the apples are soft.
- Remove the spices, and then puree the apples in a food processor. I did this in batches so as not to overload the processor. You can puree the apples to a super smooth consistency, or keep some texture. I chose to retain a little bit of texture in mine.
- Refrigerate the sauce until needed. It will keep for a week in the refrigerator.
PINK APPLESAUCE
Yield Makes about 4 cups

- In a large heavy saucepan combine the apples, 1/2 cup water, the lemon juice, and the sugar, bring the liquid to a boil, and simmer the mixture, stirring occasionally, for 25 minutes, or until the apples are very tender. Force the mixture through a food mill fitted with the fine disk into a bowl.
- Serve the applesauce warm or chilled.
PINK APPLESAUCE
Martha Stewart developed this recipe when she discovered that lemon juice reacts with red-skinned apples and turns them pink. Use the reddest apples you can find and adjust the amount of sugar according to the sweetness of the apples. Enjoy!

- Quarter the apples, do not peel, and remove the seeds and cores. Place apples in a bowl, add the lemon juice, and toss thoroughly to coat.
- Place the apples, sugar, and 1 cup water in a heavy saucepan. Cover pot, and let simmer over low heat, about 30 minutes, or until the apples break down to a saucelike consistency.
- Remove pot from heat, uncover, and allow apples to cool slightly. Using a rubber scraper, gently push apples through a food mill or wire sieve. Discard the skins. Refrigerate until ready for use.

A food mill separates the apples from their peels, but allows the rosy color of the skins to remain in this simple pink applesauce recipe.

- Peel, core, and cut the apples into 1 1/2-inch pieces; place in a medium saucepan with sugar and 1/4 cup apple juice. Cook over medium-low heat, stirring, until apples are soft enough to mash, 50 to 60 minutes.
- Add the remaining cup of apple juice, and continue to cook until the apples are very soft and break down, about 30 minutes. Using wooden spoon, stir to break large pieces. If applesauce gets too dry, add more juice, 1/4 cup at a time as needed. Remove saucepan from heat, and whisk apples until smooth. Stir in cinnamon, nutmeg, and cloves. Serve at room temperature.

- Combine first 4 ingredients in heavy large Dutch oven; bring to boil over high heat. Reduce heat to medium; cover and simmer until apples are tender, about 20 minutes. Uncover and cook until mixture is thick, stirring frequently, about 10 minutes longer. Mash apples slightly with potato masher until chunky applesauce forms. Stir in sugar and spices. Cool. Add more lemon juice if desired. Transfer to bowl; cover and chill overnight. (Can be made 2 days ahead. Keep refrigerated.)

- Preheat oven to 375 degrees F.
- Grease 9-inch square pan.
- In a medium bowl, combine flour, baking soda, cinnamon, nutmeg, and cloves.
- In a large bowl, beat brown sugar and oil at medium speed until blended.
- Add applesauce and mix well.
- Add flour mixture all at once; beat on low speed.
- until well blended.
- Stir in raisins and nuts.
- Spoon batter into prepared pan.
- Bake 20 to 25 minutes or until lightly browned.
- Cool completely on wire rack.
- Cut into squares.
- Serve plain, dusted with powdered sugar, or frosted with whipped topping, if desired.
