1 tablespoon Spicy Salt, recipe follows
3 ounces tequila
2 ounces freshly squeezed lime juice
1 ounce Simple Syrup, recipe follows
1/2 to 1 teaspoon orange liqueur
1/4 cup kosher salt
Finely grated zest of one lime
1/4 teaspoon ancho chile powder
1/4 teaspoon chipotle chile powder
Combine the salt, lime zest, ancho chile powder and chipotle chile powder in a small bowl.

Combine the sugar and 1 cup water in a small saucepan. Cook over low heat, stirring, until the sugar dissolves. (Alternatively, heat in the microwave.) Let cool. Store in a sealed container in the refrigerator for up to 1 month.

Steps:

Put the Spicy Salt on a plate. Dip the rim of a chilled margarita glass into the mixture to coat the edge. Fill a cocktail shaker with ice. Add the tequila, lime juice, Simple Syrup and orange liqueur. Cover and shake until mixed and chilled, about 30 seconds. (In general, the drink is ready by the time the shaker mists up.) Strain the margarita into the prepared glass.

1/2 cup strawberry puree (frozen can or fresh strawberries, pureed)
1 cup tequila
2 limes, juiced
Splash Triple Sec
Splash simple syrup (equal amounts sugar and water heated until sugar dissolves, then cooled)

Steps:

Combine in a blender, ice, strawberry water, tequila, lime juice, Triple Sec and simple syrup. Puree until smooth. Pour into rocks glasses and serve.

In a shaker, add strawberries, jalapeño and a few small cubes of ice. Muddle vigorously until strawberries and jalapeños are well macerated.
Add tequila, agave nectar, triple sec, and fresh lime juice to the shaker. Top with more ice and shake well, about 10 to 15 seconds.
Double strainer (using the standard strainer and cocktail tea strainer) into desired glass. Top with fresh ice.
Optional: For a sugar rim, rub the edge of the glass with a lime wedge prior to straining the cocktail into the glass. Dip the glass into turbinado sugar on a flat plate.
