CRISP PICKLED GREEN BEANS

Crisp Pickled Green Beans image

This recipe is from my Grandmother's cookbook she made to pass to all her grandchildren. They come out very, very crisp with a wonderful dill flavor. The red pepper flakes give them a nice punch. They are much better than the recipes that call for cooking the beans first.

Provided by Jani Whitsett

Categories     Side Dish     Sauces and Condiments Recipes     Canning and Preserving Recipes     Pickled

Time 1h10m

Yield 48

Number Of Ingredients 7

2 ½ pounds fresh green beans
2 ½ cups distilled white vinegar
2 cups water
¼ cup salt
1 clove garlic, peeled
1 bunch fresh dill weed
¾ teaspoon red pepper flakes

Steps:

  • Sterilize 6 (1/2 pint) jars with rings and lids and keep hot. Trim green beans to 1/4 inch shorter than your jars.
  • In a large saucepan, stir together the vinegar, water and salt. Add garlic and bring to a rolling boil over high heat. In each jar, place 1 sprig of dill and 1/8 teaspoon of red pepper flakes. Pack green beans into the jars so they are standing on their ends.
  • Ladle the boiling brine into the jars, filling to within 1/4 inch of the tops. Discard garlic. Seal jars with lids and rings. Place in a hot water bath so they are covered by 1 inch of water. Simmer but do not boil for 10 minutes to process. Cool to room temperature. Test jars for a good seal by pressing on the center of the lid. It should not move. Refrigerate any jars that do not seal properly. Let pickles ferment for 2 to 3 weeks before eating.

Spicy Cajun Pickled Green Beans and Carrots image

You'll find these pickled green beans everywhere in New Orleans, especially in bloody marys! These are super easy, they pack a punch, and are great for snacking, for sandwiches, and of course, bloody marys.

Provided by Elizabeth Lindemann

Categories     Pickles

Time 10m

Number Of Ingredients 13

1/2 lb. fresh green beans (trimmed)
2 carrots (sliced into "green bean" size)
1 clove garlic (sliced)
1 bay leaf
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/4 teaspoon cayenne pepper
1/4 teaspoon celery seed
1/4 teaspoon whole black peppercorns
1 cup white vinegar
1/2 cup water
1 tablespoon sugar
1 tablespoon kosher salt

Steps:

  • Fit as many green beans and carrots as you can into a jar, vertically.
  • Add the garlic and bay leaf to the jar, using a chopstick or something similar to slide them down the sides of the jar.
  • Add oregano, thyme, cayenne pepper, celery seed, and peppercorns directly to the jar.
  • Bring vinegar, water, sugar, and salt to a boil in a small saucepan to make a brine, stirring to make sure sugar and salt are dissolved.
  • Pour brine over vegetables in jar, making sure to cover all the vegetables and fill to the top.

SPICY PICKLED GREEN BEANS

Spicy Pickled Green Beans image

not set

Provided by BigOven Cooks

Categories     Side Dish

Time 30m

Yield 4

Number Of Ingredients 8

3 lb Young green beans (up to 4 lb)
4 Red chiles Long; thin (fresh or dried)
4 large cloves Garlic
1 tablespoon Peppercorns (white; black, green)
1/4 cup Loosely-packed fresh dill (or 4 tablespoons dried dill)
2 1/2 cups Water
2 1/2 cups White wine vinegar
1/4 cup Salt

Steps:

  • Trim and remove string from the beans. Rinse well and set aside. Sterilize jars and lids in boiling water. When jars are cool enough to handle, fill each upright with beans until they are snug. Insert chiles and garlic cloves preferably around outside so they can be seen (both for decorative reasons and also to alert that they are spicy). Divide peppercorns and dill among jars. Separately bring the water, vinegar and salt to a boil in a non-reactive sauce pan. Ladle the hot brine over the beans leaving about 1/2-inch head space. Wipe jar edge clean and screw on sterilized lid and band according to manufacturers instructions. Process in a boiling water bath for 12 minutes. Remove and allow to cool completely at room temperature away from drafts. Check lids to make sure proper seal has been attained. Store for at least one month before using to allow flavors to develop. This recipe yields 4 pints.

SPICY GARLIC & DILL PICKLED BEANS RECIPE

Spicy Garlic & Dill Pickled Beans Recipe image

Time 30m

Number Of Ingredients 7

4½ lbs. green beans, washed, trimmed and cut into jar-length pieces
3 Tbsp. pickling salt
3 cups water
3 cups white vinegar
6 cloves of garlic
1½ tsp. dried chilli flakes (divided) OR 6 fresh or dried chilli peppers
6 fresh heads of dill seed

Steps:

  • Prepare your canner and jars.

  • In a saucepan, bring salt, water and vinegar to a boil over medium high heat. Heat, stirring until salt has completely dissolved.
  • Remove jars from the canner and place one clove of garlic, ¼ teaspoon of dried chilli flakes OR one whole chilli pepper and one head of dill in each hot jar.
  • Pack each jar full of beans until you can't pack any more in. Then, cover with hot vinegar brine, leaving a ½ inch of headspace at the top.
  • Jostle jars gently to allow any trapped air bubbles to escape. Wipe rims, place lids on top and screw bands down to fingertip tight.
  • Process jars in a boiling hot water bath for 10 minutes. Then remove canner lid and wait another five minutes before removing jars. Allow to cool completely before storing in a cool dark place.

QUICK PICKLED GREEN BEANS

Quick Pickled Green Beans image

Homemade quick pickled green beans are a delicious snack or accompaniment. They're easy to make with pantry ingredients. Add spicy pickled green beans to a cheese board, cocktails (like a Bloody Mary or Caesar), or eat them straight from the jar! Perfect for entertaining. Chili peppers are optional.

Provided by bri

Categories     Sauce Condiment     Side Dish     Snack

Time 10m

Number Of Ingredients 7

12 oz fresh green beans ((trimmed))
1¼ cups boiling water ((for brine, more for blanching, see note 1))
2½ teaspoons fine sea salt ((more for blanching))
1 teaspoon granulated sugar ((or cane sugar))
1¼ cups white vinegar
2 cloves garlic, minced
1 fresno or jalapeno pepper, thinly sliced

Steps:

  • Blanch green beans: Bring a large pot of salted water to a boil over medium-high heat. Meanwhile, fill a large bowl with ice water. Add green beans to boiling water and cook until bright green and barely tender, 30 to 45 seconds (see note 2). Use tongs to transfer beans to ice water. Let cool, in ice water, for 2 minutes. Drain in a colander.
  • Make brine: Combine boiling water, salt, and sugar (see note 1). Stir until dissolved. Add vinegar.
  • Assemble: To 1 (1L) mason jar, add garlic and chili (if using). Add drained green beans, then pour in brine. (If the brine is not covering the green beans, add equal parts water and vinegar until covered.) Cover with a lid and refrigerate overnight. Green beans are ready to eat when they dull in color and taste tangy.

SPICY PICKLED GREEN BEANS

Spicy Pickled Green Beans image

These snappy, spicy, garlicky beans are tasty on a relish tray, nestled alongside a hot dog, or used as a stirrer for a Bloody Mary. A blend of crushed red pepper and cayenne creates a well-rounded heat.

Provided by Marisa McClellan

Time 45m

Yield 24

Number Of Ingredients 8

2 cups apple cider vinegar
2 cups water
2 tablespoons pickling salt
6 cloves garlic, crushed
3 teaspoons dill seed
1 ½ teaspoons crushed red pepper
¾ teaspoon cayenne pepper
2 pounds fresh green beans, trimmed

Steps:

  • Submerge 3 pint jars on a rack in a large pot of water. Cover and bring to a rolling boil, then reduce heat to low to keep jars warm until ready to fill.
  • Combine vinegar, water, and pickling salt in a saucepan and bring to a boil.
  • Working with one jar at a time, remove empty jars from canning pot and add 1/3 of crushed red and cayenne peppers to each. Pack green beans into jars, leaving 1/2 inch for headspace.
  • Slowly pour hot brine over beans, leaving 1/2 inch for headspace. Use a clean wooden chopstick to work air bubbles out of jars. Slip in additional beans if space allows; check headspace again and add more brine if necessary to bring to 1/2 inch from top.
  • Wipe jar rims, apply lids and bands (not too tightly), and return jars to canning pot. Cover pot and return water to a rolling boil. Process for 10 minutes. Turn off heat, remove pot lid, and let jars stand in the cooling water 5 minutes to help ensure a good vacuum seal.
  • Move jars to a folded kitchen towel or wooden cutting board to cool completely before checking seals. Any unsealed jars should be refrigerated and eaten promptly. Store sealed jars in a cool, dark place. Sealed jars are shelf-stable at least 1 year.

  • Trim the beans if necessary to make sure that they will fit in the jars you have. It is important that they stay submerged in the pickling liquid.
  • Combine the water, vinegar, sugar and salt in a pot. Stir and bring to a simmer. While that is coming up, prepare your jars for canning. Place the rack in the canning pot and add enough filtered water to the pot to easily cover the size of jar you are preserving in. Bring the pot to a simmer. Add three tall 500 milliliter glass jars to the water to pasteurize. In a small pot, put the lids and cover with filtered water and bring to a simmer to pasteurize as well. Place a towel on the surface where the jars will land and have the jar lifter, canning funnel, magnetic wand and headspace gauge ready.
  • Working with one jar at a time, remove a jar from the boiling water using the jar lifters. Drop in two cloves of garlic and a pinch of chili flakes. Add as many green beans as you can into the jar making sure that they don’t surpass a centimeter below the top of the jar. Using a canning funnel, fill with the jars with pickle brine until the first notch on the headspace gauge, about 0.5 centimeters. Wipe the rim with a moist towel, add a lid then screw a ring on finger-tight. Using the jar lifters again, carefully place the jar back in the pot and remove the next one. Repeat until all of the jars are filled and boil with the lid on to pasteurize for five minutes. Remove the lid and carefully remove the jars and place them on the towel again. Gently press the center of the lid to check and make sure the seal has held properly.
