CRISPY PAN SEARED SALMON

This 15-minute crispy pan seared salmon will quickly become a go-to dinner! Prepared Mediterranean-style and served with a simple arugula salad. Be sure to read all the tips in the post above.

Number Of Ingredients 8

1 lb boneless salmon fillet (4 fillets about 4 oz each, skin on)
Kosher salt and pepper
1 ½ tbsp dry oregano
1 tbsp garlic powder
¾ tsp paprika
Extra virgin olive oil
Zest of 1 lemon + Juice of 1 ½ lemon
5 oz baby arugula to serve along

Steps:

  • Pat salmon dry on both sides and sprinkle with kosher salt and black pepper.
  • Make seasoning mix & season salmon. In small bowl, mix together the dry oregano, garlic powder and paprika. Season the flesh side of the fish with this spice mixture.
  • Sear the Salmon. In a large cast iron skillet, heat 2 tbsp extra virgin olive oil over medium-high heat until shimmering but not smoking. Reduce the heat to medium-low and add one salmon fillet, skin-side down, and press the top with the back of a fish spatula for about 10 seconds (this prevents the skin from curling up.) Add the remaining salmon fillets, one at a time, pressing each with the spatula for 10 seconds. Cook for about 4 minutes. If skin resists lifting (or if it's sticking to the pan), allow the fish to cook for a little bit longer until you are able to lift up easily (no more than 6 minutes in total). Using the spatula and a fork to assist in flipping, flip the fish to the flesh side to cook for about 15 seconds or so. ( Salmon is ready when it registers 110°F (43°C) in the very center for rare, 120°F (49°C) for medium-rare, or 130°F (54°C) for medium, 5 to 7 minutes total.)
  • Remove salmon from heat and immediately add lemon juice and lemon zest.
  • Make arugula salad. In a bowl, add the baby arugula. Season with salt and add juice of ½ lemon and extra virgin olive oil. Toss to combine.
  • Serve salmon with arugula salad (or any of the sides or salads suggested in the post). Enjoy!

These sweet and spicy fillets pan sear to perfection for a quick and healthy dinner recipe.

4 8 oz salmon fillets (center cuts)
2 tsp. olive oil
1 tsps. smoked paprika (or normal paprika)
1 tsp. garlic powder
¾ tsp. fresh ground black pepper (more or less to taste)
½ tsp. cayenne pepper (more or less to taste)
¼ cup honey
4 cloves garlic (minced or chopped)
1 tbsp. lemon juice
½ tsp. onion powder
2 tbsps. water
⅓ cup soy sauce (Low-sodium)
½ tsp. chili flakes (more or less to taste)
1 tbsp. olive oil
1½ tsp. corn starch
½ tsp. ginger powder (optional)
Green Onion (optional)
Toasted Sesame Seeds (optional)
Lemon wedges (optional)

Steps:

  • Remove the skin from the salmon. Slice them into 8 oz pieces and pat them dry.
  • In a small bowl stir together paprika, garlic powder, fresh ground pepper, and cayenne pepper. Season both sides of the salmon with this seasoning.
  • In a small bowl or cup, mix together the sauce ingredients: honey, garlic, water, lemon juice, soy sauce, onion powder, cornstarch and ginger powder, chili flakes, and 1 tbsp. of olive oil to make the sauce. Set aside for cooking.
  • Bring a large nonstick skillet over medium heat. Add 2 Tbsps. of olive oil. Place the salmon in the pan and sear for 5 minutes without moving. Flip and cook on the other side for 5 minutes.
  • Pour the sauce into the pan and let the sauce and salmon cook together 2-3 minutes, or until the sauce thickens up. Scoop up some of the sauce and glaze the salmon as it cooks.
  • Remove from heat and garnish with sesame seeds, chopped green onion, and lemon wedges before serving.

2 teaspoons minced garlic (2 cloves)
1 tablespoon (canned) chopped chipotle pepper in adobo sauce
1 tablespoon freshly squeezed lime juice
1/4 cup jarred roasted red peppers, seeded and chopped
1 cup good mayonnaise, such as Hellmann's
Kosher salt and freshly ground black pepper
4 (6-ounce) boneless, skinless, center-cut salmon fillets
Good olive oil
1 lime, quartered, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • For the aioli, chop the garlic and chipotle pepper together on a cutting board to make a coarse paste. Place the paste in a food processor, add the lime juice and roasted red peppers, and purée. Add the mayonnaise, 1/4 teaspoon salt, and 1/4 teaspoon black pepper and process until smooth. Set aside.
  • For the salmon, place a large (12-inch), dry cast-iron skillet over high heat for 5 minutes. Place the salmon fillets on a board, pat dry with paper towels, and rub all over with olive oil. With the fillets rounded side up, sprinkle them with 1 1/2 teaspoons salt and 3/4 teaspoon black pepper.
  • Place the salmon in the skillet rounded side down and cook over medium-high heat for exactly 2 minutes without moving! Using a large metal spatula, turn the fillets rounded side up and place the skillet in the oven. Roast for 3 to 4 minutes, until the centers are rare. Cover the pan loosely with aluminum foil and allow the salmon to rest for 3 to 4 minutes for medium-rare or 5 minutes for medium. Serve the salmon hot with the aioli and a wedge of lime for squeezing.

4 wild salmon fillets (each about 6 ounces and 1 3/4 inches thick), skin on, rinsed and patted dry
Coarse salt and freshly ground pepper, to taste
1/4 teaspoon chili powder
Pinch of ground, cinnamon
3 tablespoons sesame oil

Steps:

  • Sprinkle both sides of each salmon fillet with salt, pepper, chili powder, and cinnamon.
  • Heat oil in a large saute pan over medium-high heat. Add salmon, skin side down, and cook until skin is crisp, browned, and releases easily from pan, 3 to 4 minutes. Flip salmon, and cook to desired doneness, 2 to 3 minutes for medium-rare.

I made this salmon to accompany "Zataran's Black Beans and Rice". It was a quick and easy fix for a busy workday dinner. The salmon turns out juicy on the inside, crispy and brown on the outside and spicy from the combination of seasonings. If you desire to tone it down a notch, cut the amount of cayenne pepper in half. I served each filet atop one serving of "Black Beans and Rice".

2 tablespoons olive oil
1/4 teaspoon garlic powder
