One 12-ounce bottle hard apple cider
1 1/2 cups beef broth
6 fresh bratwurst sausages (about 1 1/2 pounds total)
1 tablespoon olive oil
1 tablespoon unsalted butter
2 large sweet onions, thinly sliced
Kosher salt and freshly ground black pepper
6 pretzel rolls, split
Spicy brown mustard

Steps:

  • Combine the hard cider, 1 cup of the broth and the bratwurst in a large saucepan, bring to a simmer and gently simmer over low heat for 15 minutes.
  • Meanwhile, heat the oil and butter in a large skillet over medium heat. Add the onions, sprinkle with 1 teaspoon salt and 1/4 teaspoon pepper and cook until just tender, about 5 minutes. Add the remaining 1/2 cup broth and simmer until the onions are browned and completely soft, about 5 minutes more. Keep the onion mixture warm while you cook the bratwurst.
  • Preheat a grill to medium-high heat or heat a grill pan over medium-high heat.
  • Transfer the bratwurst to the grill or grill pan and cook, turning occasionally, until browned, about 10 minutes. Lightly grill the pretzel rolls, cut-side down. Serve the bratwurst topped with the onions and with the pretzel rolls and mustard on the side.

1 teaspoon fennel seed
1 tablespoon Wondra Flour
1/2 teaspoon ground black pepper
4 cups sauerkraut, rinsed, drained, squeezed dry (preferably fresh)
1 large onion, halved lengthwise, thinly sliced crosswise (about 1 pound)
3 large golden delicious apples (peeled, cored, thinly sliced)
6 whole smoked bratwursts, pierced all over with skewer (about 1 pound)
4 bay leaves
1 cup beef broth
2 tablespoons dry vermouth
2 tablespoons ketchup
1 1/2 tablespoons butter, melted
pumpernickel bread or whole grain bread

Steps:

  • Position rack in center of oven; preheat to 400°F.
  • Place caraway seeds and fennel seeds in small resealable plastic bag. Crush seeds with mallet. Add flour and pepper to bag; shake to blend.
  • Spread sauerkraut over bottom of 13x9x2-inch glass or ceramic baking dish. Sprinkle 1/3 of flour mixture over. Arrange onion slices over; sprinkle with half of remaining flour mixture, then lightly with salt. Spread half of apple slices over, then sprinkle with remaining flour mixture. Place bratwurst over apples, then arrange remaining apple slices around bratwurst. Tuck in bay leaves.
  • Mix broth, vermouth, and ketchup in measuring cup. Pour broth mixture evenly over. Cover tightly with foil.
  • Roast bratwurst 45 minutes. Uncover; brush with melted butter. Roast uncovered until edges of apples and sausages begin to brown, about 25 minutes longer. Serve with bread.

4 ounces uncooked spicy bratwursts or 4 ounces other sausage, cut into 3/4 inch slices
1 tablespoon cooking oil
1 small onion, sliced and seperated into rings
2 tablespoons quick-cooking tapioca
1 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon black pepper
1 (14 1/2 ounce) can chunky tomatoes, with garlic and spices, undrained
2 cups hot cooked noodles or 2 cups cooked rice

Steps:

  • Trim fat from beef,Cut into 4 serving size pieces.
  • In a large skillet brown beef and bratwurst on all sides in hot oil.
  • Drain off fat.
  • In a 3-4 qt crock pot place the onion,sprinkle with tapioca,thyme,saltand pepper.
  • Pour undrained tomatoes over onion in cooker.
  • Add beef and bratwurst.
  • Cover and cook on low setting for 10-12 hours.

I concocted this out of ingredients in the kitchen that needed to be used. It turned out to be pretty tasty.

4 very large onions (or bell peppers)
1 lb bulk hot Italian sausage
1 (10 ounce) can petite diced tomatoes
1 cup shredded cheddar cheese

Steps:

  • Select very large onions, 4 inches or so in diamater. Prepare onions by peeling off the papery skin, then slicing off about 1/2 inch from the top of the onions. Trim the root end, taking off the very least amount of flesh possible. Take a very thin slice from the root, just barely enough to help the onion remain standing on that end without toppling over.
  • Using a small, sharp knife and a spoon, hollow out the onions. Leave a wall of onion that is two layers thick at the top. Use the knife to cut into the top of the onion down into the center, leaving the outer 2 layers intact. Use the spoon to scoop the interior flesh out. Use care when you approach the bottom of the onion, the layers are thiner there and you may need to leave a bit more flesh.
  • Finely chop the onion trimmings from one onion. Discard the remaining onion trimmings, or reserve for another use. Set asidethe onion shells.
  • Heat oven to 350 degrees. Prepare a 9x9 baking dish by spraying with non-stick cooking spray.
  • Fry the sausage, crumbling into small bits as it cooks. When the meat is about halfway done, add the chopped onion and continue cooking until the meat is done and the onion tender.
  • Add the can of tomatoes, with their juice. Simmer a few minutes, until the tomatoes are heated through and the juice has blended into the meat.
  • Remove from heat and add the cheese, stir through.
  • Spoon the sausage mixture into the onion shells, packing down tightly. Place the filled onions in the prepared baking dish and place in oven. Bake for 60 minutes, or until the onions are tender and beginning to brown.
  • Sometimes I fill the onions, then refrigerate for another day. The cooking time is about the same. I have also used the same stuffing to fill bell peppers. The peppers bake for a slightly shorter time, about 45 minutes is usually long enough for them to be tender.

3 bell peppers (any color, seeded and sliced)
2 yellow onions (peeled, halved, and sliced)
14 oz. smoked sausage (such as kielbasa, sliced diagonally into 1/2 inch pieces)
15 oz. canned diced tomatoes
kosher salt (to taste)
black pepper (to taste)
1/2 cup water
1 tablespoon honey
1/4 teaspoon crushed red pepper (more or less depending on spice preference)
2 tablespoons fresh cilantro (chopped, plus more for serving)
cooked rice, quinoa, cauliflower rice, or other grain (for serving (optional))

Steps:

  • Melt butter (1 tablespoon) with olive oil (1 tablespoon) over medium-high heat in a large skillet.
  • Add peppers, onions, and sausage, with a pinch of salt. Stir to coat in oil and salt, then sauté for about 20 minutes, stirring only every 5 minutes or so in order to develop good color. It will seem like too much, but don't worry- the vegetables will cook down a lot.
  • Meanwhile, cook up rice/quinoa for serving, if necessary.
  • Once peppers and onions are softened and browned, add the water (1/2 cup) to the pot, stirring with a wooden spoon to scrape up any browned bits from the bottom of the pot.
  • Add the honey (1 tablespoon), crushed red pepper (1/4 teaspoon), and canned diced tomatoes with their juices. Stir and turn heat to low. Continue cooking until some of the liquid has evaporated and you are left with a thick sauce.
  • Turn off heat and stir in cilantro (2 tablespoons). Season with salt and pepper to taste.
  • Serve over cooked rice or other grain or grain substitute, garnished with extra cilantro if desired.

You can also use linked brats jsut the same! We love this with gravy, rice/spaetzle and red cabbage... It is definitely one of our monthly must haves!

1 large onion, sliced thick
1 tablespoon minced garlic clove
1 tablespoon butter
20 ounces beer (we prefer Budlight)
1 teaspoon salt

  • In a skillet over medium heat Saute the garlic and butter for approx one minute.
  • Add in the onions, salt, pepper, and enough beer to cover the bottom of the pan.
  • Cook the onions over medium heat until tender and caremelized.

  • Once the bratwurst are cooked add the onions and remaining beer to the pan. Cook over medium heat until the beer has reduced to a thicker sauce with the onions.

1/2 teaspoon garlic powder

1 (14-ounce) package Beddar with Cheddar Johnsonville fully cooked sausage, (cut into slices)
1 medium onion (peeled and chopped)
1/2 green bell pepper (seeded and chopped)
1/2 red bell pepper (seeded and chopped)

Steps:

  • Preheat oven to 450 degrees.
  • Place potatoes slices on a baking sheet, spreading out as much as possible.
  • Combine melted butter, olive oil, garlic powder, and paprika in a small bowl. Reserve 1 tablespoon and drizzle rest on potatoes. Toss to coat. Season to taste with salt and pepper.
  • Place in oven for 30 minutes, stirring halfway through.
  • On a second baking pan, combine sausage slices, onion, and peppers. Toss with the butter mixture that was set aside. Place in oven for 20 minutes, stirring halfway through.
  • If potatoes do not get browned enough, place under broiler for about 3 minutes.
  • Combine potatoes with sausage, onions, and pepper and serve.

3 cloves garlic, smashed
2 ribs celery, cut into 1-inch dice
2 onions, cut into 1-inch dice
1 small fennel bulb, top and tough middle stalk removed, cut into 1-inch dice
Extra-virgin olive oil
Kosher salt
2 cups tomato paste
2 cups hearty red wine
1 pound spicy Italian sausage, casings removed
1 pound sweet Italian sausage, casings removed
2 bay leaves
1 bunch fresh thyme, tied with butcher's twine
3/4 cup red wine vinegar
1 1/2 tablespoons sugar
1 tablespoon kosher salt
2 to 3 really good shots hot sauce, such as Tabasco
1 red onion, sliced into very thin rings
1 large bag corn tortilla chips
1/2 to 3/4 cup freshly grated Parmigianino
1/2 to 3/4 cup grated fontina cheese
1 packed cup arugula, chopped
1/2 cup mascarpone cheese (4 ounces)

Steps:

  • For the ragu: Put the garlic, celery, onions and fennel in a food processor and puree to a coarse paste.
  • Coat a wide, deep pan with olive oil. Add the pureed veggies, season with salt and bring to medium-high heat. Cook the veggies until all the liquid has evaporated and they begin to stick to the pan - you want to brown the crap out of these guys until crud starts to form on the bottom of the pan. Stir occasionally to scrape up the brown bits, and then let the crud form again. Be patient here and don't rush it, this is where the big flavor develops; it will take up to 30 minutes.
  • When the lovely brown crud has formed and been scraped down a couple of times, add the tomato paste, stirring to combine. Let it start to brown a little and continue stirring for 2 to 3 minutes. There's not much liquid at this point to keep things from burning, so be careful and move fast. Add the wine, stir to combine and scrape up any remaining brown bits. Cook until about half the wine has evaporated, 4 to 5 minutes.
  • Add both the spicy and sweet sausage and, using a spoon to break it up, cook until the meat is brown (this is where another round of big brown flavors is formed, so take your time), 10 to 15 minutes.
  • Add enough water to the pan to cover the meat by about 1/2-inch. Stir to combine well, and then add the bay leaves and thyme bundle. Taste, season with salt and taste again; it's by no means done, but it should taste good. Bring the sauce to a boil (BTB) and reduce to a simmer (RTS). Continue cooking, checking occasionally, for 3 hours, tasting, seasoning and adding more water as needed.
  • For the pickled onions: In a medium bowl, combine the red wine vinegar with 1/2 cup cold tap water. Stir in the sugar, salt and hot sauce.
  • Add the sliced onions and let sit for at least 1 hour. To assemble: Preheat the oven to 350 degrees F. On a large platter, spread out a layer of tortilla chips. Spoon a layer of the ragu over the chips. Cover with a layer of Parmigianino and fontina cheeses. Place in the oven until the cheese melts, 5 to 10 minutes.
  • Remove from the oven, sprinkle a layer of arugula over the top and finish with a large dollop of mascarpone cheese. A gooey cheesy treat. Delish.

  • Stir in the crushed red peppers to the Bratwurst Onions and Peppers.
  • Add One cup of water to the Bratwurst and onion mixture
  • Simmer Mixture for 10 to 15 minutes
  • Serve

This soup is probably my mom's favorite thing that I've ever made. The funny thing is, it's inspired by her guilty pleasure: the Olive Garden. I can see why she likes it, though-it's hearty, with bright green kale, homemade sausage, and a little Parmesan to take the savory flavor to a whole new dimension.

1 1/3 tablespoons fennel seeds
1 pound pork shoulder, boneless, cubed
1 tablespoon Espelette pepper
1 teaspoon red pepper flakes
Salt, to taste
2 tablespoons olive oil
5 cloves garlic
1 onion, diced
1 onion, diced
2 cloves garlic
7 cups chicken stock
3 Yukon Gold potatoes, peeled
1 tablespoon sherry vinegar
1 bunch kale, stems removed, roughly chopped
olive oil
Parmesan

Steps:

  • For the sausage: Heat a dry skillet and toast the fennel seeds until fragrant. Add toasted fennel to the pork along with the Espelette pepper, red chili flakes and a big pinch of salt. Toss and set aside. Over high heat, coat the bottom of a soup pot or Dutch oven with olive oil. Position the meat grinder over the pot. Add 5 whole garlic cloves and the onions to the meat mixture. Turn the grinder on high and run the sausage mixture through the grinder. Use the plunger if needed to push the meat through and into the heated soup pot to brown.
  • For the soup: When the sausage has begun to brown and caramelize, add the onions and garlic, roughly chopped, to the pot. Stir the sausage mixture so it doesn't stick to the bottom; then add olive oil and cook 2-3 more minutes. Add the stock and a pinch of salt, scrape the bottom of the pot with a wooden spoon, and cover. Bring to a rolling boil over high heat.
  • As the soup comes to a boil, thinly slice the potatoes on a mandoline. Stir them into the soup, making sure the slices come apart. Add plenty of freshly ground black pepper and another pinch of salt. Cover, bring back to a rolling boil, and continue to let boil for 20 minutes.
  • Finish the soup: Reduce heat to low and remove lid. The potatoes should be broken down and the soup thickened. Adjust the seasoning with salt and pepper; then stir in the vinegar. Pull the fibrous stem out of the kale leaves and discard; roughly chop the leaves and add to the soup to wilt. Ladle into bowls and serve with more pepper, salt, a drizzle of olive oil, and a fresh grating of Parmesan.
