2 lbs boneless pork chops, cut into 1-inch cubes
1 cup fat-free Italian salad dressing
1 tablespoon honey
2 tablespoons dried red pepper flakes
1 large red bell pepper, cut into 1-inch pieces
1 large green bell pepper, cut into 1-inch pieces
1 large onion, cut into 1-inch pieces
24 (6 inch) wooden skewers (soak in water for 30 minutes before using or in Garlic Herb: Infused Skewers (#4))

Steps:

  • Place pork cubes in zip lock bag; add salad dressing, honey, red pepper flakes peppers and onions. Seal bag; refrigerate for at least 1 hour to overnight to marinate.
  • Thread pork, peppers and onion on skewers. Discard marinade. Place kabobs on greased broiler pan and broil 5 inches from heat, or grill over medium-hot coals, for about 5 minutes per side.

1 lb pork tenderloin, cut into one-inch cubes
1 cup margarita mix (OR 1 cup lime juice 4 teaspoons sugar)
1/4 cup tequila
1 teaspoon ground coriander
2 garlic cloves, minced
1 large orange bell pepper, cut into 1-inch cubes
2 ears corn, cut into 8 pieces
2 tablespoons butter, softened
1 lime, juice and zest of
1/2 teaspoon brown sugar
1 tablespoon minced fresh parsley

Steps:

  • Soak skewers in water for 60 minutes or make Recipe #227473 .
  • Combine margarita mix, tequila, coriander, and garlic. Place pork cubes in heavy zip lock bag; pour marinade over to cover. Marinate for at least 30 minutes.
  • Blend together well the butter, lime juice and zest, sugar and parsley; set aside. Thread pork cubes onto skewers, alternating with pieces of corn and pepper. Grill over hot coals, basting with butter mixture, for 15-20 minutes,turning frequently.

1/2 cup vegetable oil
1/4 cup chopped onion
3 tablespoons lemon juice
1 tablespoon minced fresh parsley
1 garlic clove, minced
1/2 teaspoon salt
1/2 teaspoon dried marjoram
1/8 teaspoon pepper
2 pounds boneless pork, cut into 1-inch cubes
CUCUMBER YOGURT SAUCE:
1 cup plain yogurt
1/2 cup chopped cucumber
1 tablespoon chopped onion
1 tablespoon minced fresh parsley
1 teaspoon lemon juice
1/8 teaspoon garlic salt
Pita bread

Steps:

  • In a resealable plastic bag or shallow glass container, combine the first 8 ingredients; add pork and toss to coat. Seal or cover and refrigerate overnight. , Meanwhile, combine sauce ingredients; cover and refrigerate for several hours. Drain pork and discard marinade; thread pork on skewers, leaving a small space between pieces. , Grill, uncovered, over medium heat for 8-10 minutes or until the meat is no longer pink, turning frequently. Serve in pita bread with sauce.

1 lb boneless pork loin roast or 1 lb tenderloin, cut into 1 1/2-inch cubes
1/4 cup reduced sodium soy sauce
2 tablespoons rice vinegar
1 tablespoon fresh ginger, grated
1 teaspoon dijon-style mustard or 1/2 teaspoon Chinese five spice powder
1 small red pepper or small orange sweet bell pepper, cut into 1-inch squares*
6 ounces shiitake mushroom caps or 6 ounces white mushroom caps, halved if needed*
1 small zucchini, halved lengthwise and cut into 3/4-inch pieces*
1/4 cup pepper jelly or 1/4 cup orange marmalade, melted
8 skewers

Steps:

  • In a self-sealing plastic bag combine cubed pork, soy sauce, vinegar, ginger and Dijon-style mustard (or Chinese Five Spice); seal bag and refrigerate for 1 to 4 hours.
  • Prepare medium-hot fire with charcoal or preheat gas to medium high.
  • Remove pork from marinade, reserving marinade. Thread pork, sweet peppers, mushrooms, and zucchini alternately onto 8 skewers. Brush or drizzle with reserved marinade. Grill kabobs directly over fire, turning to brown evenly, for 5 minutes. Brush kabobs with the melted jelly. Continue to grill for 3 to 10 minutes more or until tender. Let rest 3 minutes before serving.
  • *Kabob ingredients don't need to be limited to the vegetables listed. There are several ways to customize kabobs; try incorporating cherry tomatoes, broccoli (precooked until crisp-tender), pineapple chunks (fresh or canned), yellow summer squash, red onion wedges, baby carrots (precooked until crisp-tender), halved tiny new potatoes (precooked until tender) or try adding fresh sprigs of herbs.

1/2 cup soy sauce (or low-sodium soy)
1/4 cup lime juice or 1/4 cup lemon juice
1/4 cup creamy peanut butter
2 tablespoons brown sugar
2 garlic cloves, minced
1 teaspoon crushed red pepper flakes
1/4 teaspoon ground ginger (or fresh minced)
1 pork tenderloin, cut into 1 inch cubes (about 1 pound)
2 medium green peppers, cut into 1 inch pieces

Steps:

  • In a large bowl, combine the first seven ingredients and mix well.
  • Set aside 1/2 cup for basting; cover and refrigerate.
  • Pour remaining marinade into a large resealable plastic bag or shallow container.
  • Add pork and turn to coat.
  • Seal or cover and refrigerate for 2-3 hours, turning occasionally.
  • Drain and discard the marinade.
  • On metal or soaked wooden skewers, alternate pork and green peppers.
  • Grill, uncovered, over medium heat for 6 minutes, turning once.
  • Baste with reserved marinade.
  • Grill 8-10 minutes longer or until meat juices run clear, turning and basting frequently.
