4 pounds pork shoulder, diced
3 tablespoons olive oil
4 red onions, finely chopped
6 cloves garlic, crushed
1/4 cup plus 1 teaspoon smoked paprika
Six 14-ounce cans chopped tomatoes
Four 14-ounce cans black-eyed peas, drained and rinsed
2 cups coconut water
6 ounces dark chocolate
1/2 pound basmati rice, cooked
4 small avocados, sliced
1 bunch fresh cilantro, chopped

Steps:

  • Preheat the oven to 400 degrees F.
  • Preheat an ovenproof saute pan with a lid over high heat.
  • Working in batches, brown the pork on all sides in 2 tablespoons oil, then transfer to a bowl.
  • Heat the remaining tablespoon oil in the pan, then cook the onions, about 5 minutes. Add the garlic and smoked paprika and cook for an additional 30 seconds.
  • Add the chopped tomatoes, black-eyed peas, coconut water and the pork and bring to a simmer, stirring well. Cover and transfer to the oven. Bake, stirring occasionally, until pork is tender, about 1 1/2 hours.
  • Stir in the chocolate until it has melted. Serve with the basmati rice, avocado slices and cilantro.

4 bone-in pork chops (1/2 inch thick; about 5 ounces each)
Kosher salt and freshly ground pepper
1/4 cup plus 2 tablespoons medium-hot red enchilada sauce
1/2 teaspoon chipotle chile powder
2 tablespoons plus 1 teaspoon extra-virgin olive oil, plus more for the pan
1 small red onion (1/2 thinly sliced, 1/2 chopped)
2 tablespoons fresh lime juice
1/2 cup roughly chopped fresh cilantro leaves, plus 2 teaspoons minced stems
1 15-ounce can black beans, not drained
8 small corn tortillas
1 avocado, sliced

Steps:

  • Preheat a large grill pan or grill over medium-high heat. Rub the pork chops with 3/4 teaspoon salt and a few grinds of pepper in a large bowl. Add 1/4 cup enchilada sauce, the chile powder and 2 teaspoons olive oil. Rub all over the pork and set aside at room temperature. Toss the sliced red onion with the lime juice and a pinch of salt in a medium bowl; set aside.
  • Heat the remaining 5 teaspoons olive oil in a saucepan over medium heat. Add the chopped red onion and cook, stirring, until softened, 3 to 4 minutes. Add the cilantro stems and remaining 2 tablespoons enchilada sauce and cook, stirring, until mostly dry, 2 minutes. Add the beans and their liquid along with 1/2 cup water; bring to a simmer. Mash about one-third of the beans against the side of the pan with a spoon. Cook until the sauce coats the beans, 10 minutes; season with salt and pepper.
  • Meanwhile, lightly char the tortillas on the grill pan, about 1 minute per side. Stack and wrap in a kitchen towel to keep warm.
  • Lightly oil the grill pan. Grill the pork chops until marked and cooked through, about 2 minutes per side. Divide the pork chops, beans, tortillas and avocado among plates. Season the avocado with salt and pepper. Toss the cilantro leaves with the sliced red onion, then add to the plates.

Gonzalo Guzmán is the chef at Nopalito, a Mexican restaurant with two locations in San Francisco. His bright take on frijoles puercos, or pork and beans, is inspired by a version he once tasted in northern Mexico. It involves butter beans simmered with chile and onion until tender and plump, mixed up with crumbled chorizo and scrambled eggs. The result is a delicious, one-pot meal with a fresh garnish of cheese and herbs, and it makes for an ideal breakfast, lunch or dinner, ideally with a stack of warm tortillas on the side.

6 ounces (1 cup) dried butter beans
1 white onion, halved
3 cloves garlic, peeled
1 dried guajillo chile
1 teaspoon kosher salt
1 tablespoon olive oil
2 slices bacon, chopped
1/2 teaspoon chile powder
8 ounces Mexican chorizo, casings removed
6 eggs
Queso fresco, crumbled
Cilantro leaves, chopped
Spring onions, sliced
1 pickled jalapeño, sliced

Steps:

  • In a large pot, combine beans with 5 cups water, half the onion, the garlic and chile. Bring to a boil, then reduce to a simmer, and partly cover the pot with the lid. Cook until the beans are completely tender, 1 to 1 1/2 hours, adding more water if it reduces below the level of the beans. Fish out and discard the garlic, onion and chile; it's fine if a few small pieces remain. Season with salt while the beans are hot.
  • Chop the other half of the onion. Add oil to a large skillet over medium heat with the bacon, and sauté until the onion is soft and the bacon has rendered some fat, about 5 minutes. Add chile powder and chorizo, breaking up the sausage into small pieces with a spoon, until it's cooked through.
  • Break eggs into pork mixture, and stir to scramble. Once the eggs are cooked through, stir in the beans and bean cooking liquid, and simmer gently 5-10 minutes. Add a splash of water if needed, so some chile-stained broth bubbles just below the surface of the beans. Taste, and adjust seasoning with salt. Garnish generously with crumbled queso fresco, cilantro, spring onions and pickled jalapeño.

STIR-FRIED GREEN BEANS WITH PORK AND CHILES

In this fast, piquant weeknight meal, ground pork and green beans are stir-fried with plenty of ginger, garlic and chiles, and seasoned with soy sauce and coriander seeds. A big splash of rice-wine vinegar right at the end adds a hit of acidity, which balances the pork's richness. Serve this over rice or rice noodles to help absorb all the salty, spicy sauce. Slices of fresh tomato add a sweet juiciness that works well here. But if you don't have a ripe tomato, feel free to leave it out.

Steps:

  • Return pan to heat and add more oil if it looks dry. Stir in green beans, cook until they are crisp, tender and bright green, 1 to 3 minutes. Stir in chiles, ginger, garlic, coriander seeds and remaining 1/4 teaspoon salt. Cook, stirring frequently, until fragrant, about 1 minute longer.
  • Return pork to skillet, along with chopped cilantro, vinegar, soy sauce and sugar. Stir briefly to combine, then scrape into a serving platter.
  • Sprinkle more vinegar and soy sauce on top to taste, then top with more chopped cilantro. Serve with rice, and sliced tomato, if you like.

1 package (16 ounces) dried pinto beans, soaked overnight

2 cans (4 ounces each) chopped green chilies
Pepper to taste
5 medium carrots, sliced
4 celery ribs, sliced

Flour tortillas, warmed

Steps:

  • In a stockpot, combine the first eight ingredients; cover with water. Bring to a boil. Reduce heat; simmer, covered, 3 to 4 hours or until meat and beans are tender., Remove pork; cool slightly. Stir carrots, celery and tomatoes into bean mixture; return to a boil. Reduce heat; simmer, covered, until vegetables are crisp-tender. Add zucchini; cook 8-10 minutes longer or until crisp-tender., Meanwhile, remove pork from bone; discard bone. Cut pork into bite-size pieces; return to pot and heat through. Serve with tortillas., Freeze option: Freeze cooled pork mixture in freezer containers. To use, partially thaw in refrigerator overnight. 4 ounces Mexican chorizo (about 2 links)
Canola oil, for greasing pan
1 clove garlic, minced
1/2 jalapeno, minced
1 tablespoon ground cumin
Two 15.5-ounce cans black beans
Juice of 1/2 lime
Kosher salt and freshly ground black pepper
1/2 cup crumbled Cotija cheese
2 tablespoons chopped fresh cilantro

Steps:

  • Begin by removing the chorizo from their casings. Set a medium saucepan over medium heat and coat with a little canola oil. Add the chorizo and use a spoon to break up the pieces into smaller chunks. Add the garlic and jalapeno. Allow the chorizo to cook and render for 4 to 5 minutes. When the oil is fragrant and red from the chorizo spices, add the cumin and black beans (including the liquid from one of the cans). Add 1/2 cup water, bring to a simmer and cook for 15 minutes to allow the flavors to come together. Add the lime juice and season with salt and pepper.
  • Serve the beans in a large bowl garnished with crumbled Cotija cheese and chopped cilantro.

3 slices bacon (chopped)
1 medium onion (chopped)
2-3 jalapeno peppers (chopped (use serrano for extra heat))
4 cloves garlic (chopped)
1 pound dried pinto beans (soaked and drained)
14 ounce can fire roasted tomatoes (or use equivalent fresh tomatoes or canned diced tomatoes)
4 cups chicken broth (or use vegetable broth - or more as needed)
1 tablespoon chili powder
1 teaspoon cumin
1/2 teaspoon dried oregano
Salt and pepper to taste
FOR GARNISH: Chopped fresh cilantro (spicy red pepper flakes, crumbly white cheese)

Steps:

  • Heat a large pan or a pot to medium heat and add bacon. Cook for 5 minutes, or until the bacon starts to crisp up. Remove the bacon and set aside.
  • Drain excess bacon grease and add onion and jalapenos. Cook for 5 minutes to soften.
  • Add the garlic and cook another minute.
  • Add the reserved bacon, beans, tomatoes, chicken broth, chili powder, cumin, oregano and salt and pepper. Stir and reduce heat to simmer.
  • Cover and simmer for 60 minutes or longer, until the beans are tender to your preference. Check at 45 minutes. It could take up to 90 minutes, depending on your beans. If the beans are too dry and not tender enough, add in a bit more broth or water to the pan and continue to simmer.
  • Garnish with fresh chopped cilantro, chili flakes, crumbly white cheese and serve.

3 dried guajillo peppers, stems and seeds removed
9 cups water
1 ham hock
1 cup ketchup (I used spicy ketchup)
2 teaspoons cumin
2 teaspoons dry mustard

2 teaspoons oregano
2 teaspoons pepper
4 tablespoons apple cider vinegar
4 tablespoons Worcestershire sauce
¼ cup brown sugar, more if you like them sweeter

Steps:

  • Directions: 1. Clean and rinse the beans and cover them with cold water while you prep your ingredients. 2. Heat a large heavy dutch oven pot to medium heat. Add the bacon and cook until crisp. Add the chorizo and cook for another 5 minutes. Add all of the fresh peppers, garlic, whole guajillos. Cook for 6 to 8 minutes. 3. Drain the beans and add to the pot. Add all of the remaining ingredients to the pot, minus the salt. Stir well and bring to a boil. Reduce the heat to a simmer, covered ¾ of the way and continue cooking for 2 to 2½ hours or until the beans become tender. 4. I like to add the salt at the end because there are ingredients that already contain salt in the recipe. Remove the guajillo chile peppers before serving. Yields up to 8 servings. 3 garlic cloves , 1 crushed, 2 sliced
2 tbsp rapeseed oil
4 tsp smoked paprika
4 lean pork shoulder steaks (525g), trimmed of any fat
2 large onions (340g), halved and sliced
325g carrots (about 6), diced
2 tbsp sherry vinegar
2 red peppers , deseeded and chopped
1 tbsp vegetable bouillon powder , made up to 500ml with boiling water
3 rosemary sprigs , leaves picked and finely chopped
200g whole cherry tomatoes
2 tbsp tomato purée
2 x 400g cans butter beans , drained
⅓ x 30g pack parsley , chopped
squeeze of lemon (optional)

Steps:

  • Mix the crushed garlic, 1 tbsp of the oil and 1 tsp smoked paprika together in a shallow dish and turn the pork steaks over in the mix to coat them on both sides. Heat a large non-stick frying pan and fry the pork for about 4 mins on each side to part-cook and brown them, then remove them from the pan.
  • Add the rest of the oil to the pan and fry the onions, carrots and sliced garlic, stirring frequently for 10 mins until the veg starts to caramelise a little. Pour in the sherry vinegar, allowing it to sizzle in the heat, then add the peppers, bouillon, rosemary, any juices left in the dish from the pork, the cherry tomatoes, tomato purée, remaining 3 tsp paprika and beans.
  • Lay the pork steaks on top, then cover the pan and cook for 20 mins until the pork and vegetables are tender. The pork will be cooked and juicy, but not fall apart. Remove the pork from the pan, stir in the parsley and a squeeze of lemon juice, if using.
  • If you're following our Healthy Diet Plan, eat two portions of the pork and beans now and chill the rest for another day. Will keep for up to two days. To serve the second night, just reheat in a pan.

Pinto beans are simmered with onion, tomatoes, chili powder, cumin and garlic. I love making these beans just because they make the whole house smell so good, and the longer they simmer the better they taste. You could add 1/2 can of beer to make 'borracho' beans. I personally taste-test throughout the entire cooking process and add extra seasoning as I feel it needs it. These beans could simmer all day long; just make sure they have plenty of water to keep the beans covered.

2 tsp vegetable oil
½ red onion, chopped
2 tsp each smoked paprika and ground cumin
500g pack lean pork mince
300ml passata
5 tbsp barbecue sauce
400g can black bean, drained
small bunch coriander, chopped
8 taco shells
1 ripe avocado, peeled and sliced
½ iceberg lettuce, finely shredded
soured cream, to serve (optional)

Steps:

  • Heat the oil in a large frying pan, add the onion and cook for 5 mins until softened. Sprinkle over the spices and cook for 1 min more. Add the mince, breaking it up with the back of a wooden spoon, and stir until cooked through.
  • Stir the passata and barbecue sauce into the pan along with 4 tbsp water. Increase the heat and allow the sauce to bubble and reduce until it clings to the meat. Add the beans, season and cook for a further 2 mins, then stir in the coriander. Heat the tacos following pack instructions.
  • Use the pork and bean mix to fill the tacos, top with slices of avocado, shredded iceberg lettuce and a dollop of soured cream, if you like.
