1 kg sweet corn (fresh or frozen)
1 tbsp olive oil
1 red onion (finely chopped)
1-2 red chilli (finely chopped (taste and adjust to your preference))
1 cup coriander / cilantro (finely chopped)
1 cup feta cheese (crumbled)
1/3 cup Hellmann's mayonnaise
1/3 cup sour cream
1-2 tbsp lemon/lime juice (taste and adjust )
salt (to taste)
pepper (to taste )

Steps:

  • If using frozen corn, thaw and drain.
  • Heat the oil in a large frying pan then add the corn.
  • Cook the corn until golden brown and toasted.
  • Allow to cool then combine with all the other ingredients and mix well.
  • Serve the Mexican street corn dip with tortilla/corn chips and extra lime for squeezing.

1 can (11 ounces) yellow and white whole kernel corn, drained
1 can (11 ounces) Mexicorn, drained
4 ounces pepper Jack cheese, shredded
1/4 cup chopped green onions
1 can (4 ounces) chopped green chilies
1 jalapeno pepper, seeded and chopped
3/4 cup mayonnaise
3/4 cup sour cream
1/8 teaspoon sugar
Additional chopped green onions, optional
Tortilla or corn chips

Steps:

  • In a large bowl, combine the first seven ingredients. In a small bowl, combine the mayonnaise, sour cream and sugar; stir into corn mixture. Cover and refrigerate overnight. Sprinkle with additional green onions. Serve with chips.

1/2 cup mayonnaise

2 teaspoons smoked paprika
1/2-2 teaspoons cayenne pepper, to your taste
2 tablespoons extra virgin olive oil
1 yellow onion, chopped
2 cups corn ((3-4 raw))
2 cloves garlic, chopped
kosher salt and black pepper
6 ounces cream cheese, at room temperature
1/3 cup sour cream
4 tablespoon salted butter
1/3 cup olive oil mayo (or use plain Greek yogurt)
2 tablespoons fresh lime juice
3/4 cup crumbled cotija cheese
1 ear grilled corn, kernels removed from the cob
1/4 cup fresh cilantro, chopped

Steps:

  • 1. Mix the spices. In a bowl, combine the chili powder, paprika, cayenne, and a pinch of salt. 2. Heat the olive oil in a skillet over medium-high heat. Add the onion and cook until soft, 5 minutes. Add the corn, garlic, 1 teaspoon of the spice mix, and season with salt and pepper. Cook until the corn is softened, 5 minutes. 3. Reduce the heat to low. Mix in the cream cheese until melted and creamy. Stir in the sour cream. Cook until warmed throughout. If desired, thin the dip with milk.4. In a separate skillet, melt the butter until golden. Mix in 3 teaspoons of the spice mix, plus a pinch of chili flakes and salt. Cook another minute, then remove from the heat. 5. Mix the mayo and lime juice with a pinch of salt. 6. Spoon the dip into a wide serving bowl. Top with grilled corn and drizzle the mayo and spicy butter over the corn. Sprinkle on the cheese and cilantro. Serve with lots of chips for scooping!

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Combine corn, cream cheese, Mexican-blend cheese, and jalapeno peppers in a bowl; mix until thoroughly combined. Transfer to the prepared baking dish.

1 tablespoon canola oil, plus more for brushing
1 medium red onion, diced
1 red bell pepper, seeded and diced
1 poblano pepper, seeded and diced
2 scallions, thinly sliced, white and light green parts separated from dark green parts
3 cloves garlic, roughly chopped
1 bottle Frank's® Buffalo Ranch Thick Sauce, divided
1 can green chile, diced
8 oz shredded pepper jack cheese
8 oz shredded mozzarella cheese, divided
1 teaspoon McCormick® chili powder
tortilla chip, for serving

Steps:

  • Preheat a large heavy-bottomed pan over high heat.
  • Brush the corn with canola oil and cook in the pan, turning frequently with tongs, until lightly charred on all sides, 10-15 minutes. Transfer to a cutting board to cool, then cut the corn kernels off the cobs.
  • While the corn cooks, preheat the oven to 350°F (180°C).
  • Heat 1 tablespoon canola oil in a large, oven-proof pan over medium-high heat. When the oil is shimmering, add the red onion, bell pepper, poblano, and the white and light green scallions. Cook, stirring frequently, until the vegetables are beginning to soften, 4-5 minutes. Add the garlic and continue cooking until fragrant, 2-3 minutes more.
