- PREP: Position a rack in the upper third of the oven and preheat the oven too 450ºF. Line a baking sheet with foil and spray with cooking spray (or brush with a little oil) and set aside. In a small bowl, combine the cayenne, onion powder, paprika, salt, and garlic powder.
- SALMON: Place the salmon on the prepared baking sheet, brush with melted butter, and sprinkle with the prepared seasoning. Bake the salmon for 8-10 minutes depending on the thickness of the salmon. Generally, you need to bake it about 4-5 minutes for every 1/2 inch of thickness. Remove from the oven, brush with the maple syrup and place back in the oven. Switch to the broiler setting and broil for 30 seconds to 1 minute or until bubbly and brown. Serve immediately with the salad.

- Preheat oven to 350 degrees F. Line a small baking sheet with parchment paper to prevent the glaze from burning. Place salmon filets 2 inches apart on parchment paper.
- In a small bowl, whisk together maple syrup, soy sauce, dijon mustard, chili powder, cayenne pepper and garlic. Pour or generously brush the glaze over the salmon, reserving 1 tablespoon for glazing once salmon is done. Bake for 15-20 minutes or until salmon is done and flakes with a fork. For every inch of salmon filet thickness, you'll need to bake for 15 minutes. Usually 18 minutes is perfect for me.
- Once salmon is done baking, remove from oven and pour remaining glaze on top. Enjoy! Serves 2.

SPICY-SWEET GLAZED SALMON
I looked for a recipe for glazed salmon and didn't find one that used the ingredients I had on hand. So I threw together what I had and came up with this tangy, spicy sweet marinade that adds flavor, but doesn't mask the flavor of the salmon. My kids and sister loved it. They said it was better than 'restaurant salmon' It's great served with wild rice and stir fried veggies.

- Place salmon in a shallow, flat dish, and set aside. Combine the vinegar, olive oil, soy sauce, water, lemon juice, red pepper flakes, onion powder, garlic powder, cilantro, and brown sugar in a blender. Blend until brown sugar dissolves. Pour the marinade over the salmon to cover evenly. Cover the dish, and refrigerate at least 2 hours.
- Line a broiling pan with foil. Remove salmon from marinade, and place on prepared broiling pan; season to taste with salt and pepper. Transfer remaining marinade to a saucepan.
- Turn on broiler to low.
- Broil salmon about 6 inches from the heat for 5 minutes; brush with remaining marinade. Broil an additional 5 to 10 minutes, brushing 2 or 3 more times with additional marinade. Salmon is done when fish is no longer bright red and can be flaked with a fork.
- Meanwhile, cook the remaining marinade over low heat until it thickens and reduces by one-third, 5 to 10 minutes. Use cooked marinade as a dipping sauce or drizzle over salmon just before serving.

- For the salmon, heat vegetable oil on medium-high in a cast-iron skillet.
- For the broccoli, fill a medium pot halfway with water. Add a dash of salt and start boiling water.
- In the meantime, whisk together maple syrup, orange juice, soy sauce, garlic, salt, and pepper in a medium bowl.
- Set aside 2 tablespoons for topping later.
- Place salmon fillets inside the bowl and make sure each side is covered with sauce.
- Sear the salmon 2-3 minutes on each side.
- Brush the tops with the sauce set aside.
- With the pot of water boiling, add the broccoli and cover lid. Blanch for 2 minutes.
- Drain under cold water to stop the cooking.
- In the drained pot of broccoli, stir in butter, soy sauce, red pepper flakes, some lemon zest, and garlic on low heat. Mix until broccoli is well-coated.
- On each plate, serve a filet of salmon and scoop of broccoli.
- Top with reserved marinade and sprinkle parsley for garnish.

- Combine the paprika, chili powder, ancho, cumin, garlic powder, and brown sugar.
- Place salmon on lightly sprayed baking dish or tray.

Rachael Ray's recipe for Chipotle Cashew Chicken inspired me to create this dish. Her recipe calls for chipotle peppers in adobo sauce. Having none on hand, I combined some smoky and hot spices to improvise. The maple glaze gives the salmon just the right balance of sweet and spicy. It is an easy, quick recipe that could be served any night of the week or is elegant enough to be served at a dinner party. I oven-roasted mine, but it would also be excellent grilled.

We don't have salmon often, but this looked so easy & yum that it inspired us to get down to the fishmongers. We used 2 salmon fillets but kept all the other measurements the same & added a handful of sugar-snap peas with the baby spinach. It's simple enough for a weeknight meal and impressive enough to serve guests. I found this recipe (originally printed in delicious magazine, in Australia - July 2007) on taste.com.au along with some helpful reviews: This is a sweet dish, so people suggested the addition of some lime juice. I liked the idea, and added some, but I'll leave it up to you :)

- Preheat the oven to 200°C (400°F).
- Line a baking tray with baking paper.

SARASOTA'S SPICY MAPLE, BROWN SUGAR AND BOURBON GLAZE
This is a simple glaze which has great flavor. I love this best over salmon, but it is just as good over pork and chicken. Try adding some fine chopped pecans to the sauce as well for a nice twist. - Roasted Pepper -- This is the first thing I make. Heat the oven to 450 and put the pepper right on the middle rack and roast until good and charred on all sides. Remove and wrap with a small piece of plastic wrap. After 5 minutes or so, remove the pepper, peel the skin off, remove the ribs and seeds and fine chop.
- Sauce -- To a small pot, add the butter and bring to medium heat. Add in the shallot, garlic and jalapeno (you can use 1/2 of the minced pepper if you don't want it too hot) but the roasted pepper has a mild flavor. Cook on medium just until the onion is translucent, you don't want to brown them. Then, deglaze the pan with the bourbon. Don't forget to remove the pot from the stove top when you add any alcohol. Return to the stove, reduce the heat to medium low/low and cook, 30 seconds if that. Add in the brown sugar, maple syrup, a pinch of the red pepper and a pinch of salt. Bring the sauce to a low boil (not rolling) and cook for about 5-6 minutes.
- Done -- The sauce will be thin, but will thicken upon cooling. When you remove the sauce from the heat, taste for any additional seasoning. Once it thickens, it will coat the back of a spoon. Make sure to use the glaze cooled.
- Options -- If you want, you can add in pecans at this point, but that is just an option. Just brush on the fish, meat or chicken as it bakes or grills. ENJOY!
