ANTI-INFLAMMATORY CHICKEN GINGER SOUP
Anti-Inflammatory Chicken Ginger Soup combines chicken breast with healthy vegetables, ginger, and several tasty spices including the medicinal Turmeric. This soup is filling, ultra healthy, and should be on your menu to kick off the new year.

Steps:
- In a large stock pot over medium-high heat, add olive oil, and then the chopped onion, carrots, celery, and cabbage. Cook until slightly softened, about 6-7 minutes.
- Add the garlic, ginger, and seasonings - salt, pepper, turmeric, onion powder, rosemary, and thyme. Cook for a couple of minutes, stirring constantly.
- Then add the chicken broth and bring to a boil. Season the chicken breast with salt and add it to the pot over medium heat. Cook until done, about 15 minutes. Remove chicken and set aside to cool slightly.
- Shred chicken with two forks, or add it to a standing mixer to shred. Add it back to the pot, along with the frozen peas. Continue simmering for about 10 minutes or until peas are warm.
- Check seasonings, and serve with some freshly ground black pepper.

- Pour chicken broth into a large pot. Add chicken carcass, sweet potato, mushrooms, green pepper, celery leaves, and green onions. Season with rosemary, parsley, oregano, sage, basil, marjoram, salt, curry powder, paprika, and pepper. Simmer until chicken meat starts to fall off the bone and sweet potato is tender, about 30 minutes. Pull off any remaining meat and discard bones.

- Cook the chicken thighs in about 4-5 cups of salted filtered water in a small cooking pot. In the meantime, chop the vegetables.
- When the water starts to boil add the onion, the potato, turmeric and mint. Let everything cook at medium-high with lid on.
- After about 20-30 minutes of cooking the chicken thighs should be done - it's time to take the meat off the bones. To do this take out the chicken thighs and put them into a small bowl with cool filtered water, so they can cool off. Take the meat off the bone, discard the bones and shredd the chicken into bite-sized pieces. I used my hands for this glamorous activity, but the chicken is hot, so be careful!). I took the chicken thighs out of the cooking pot one at a time and used a small bowl for this "fun" procedure.
