- Bring a large pot of water to a boil. Cook the macaroni according to the package instructions. Drain and set aside.
- Heat the butter in a large saucepan over medium heat. Add the crushed red pepper, jalapeno, garlic and onion and cook, stirring, until the veggies have softened, about 5 minutes. Add the milk and heat until starting to bubble around the edges. Add the processed cheese and stir until melted. Add the Monterey Jack and pepper jack cheeses, pepper, kosher salt, seasoned salt and hot sauce to taste. Stir until the cheese is melted. Taste and adjust the seasoning. Add a splash of milk if the sauce seems too thick. Fold in the cooked macaroni and serve.
- Reheating instructions: Preheat the oven to 350 degrees F. Put the mac and cheese in a baking dish, cover with foil and heat until warmed through, about 25 minutes.
SPICY MACARONI AND CHEESE

- Preheat the oven to 350 degrees F.
- In a large bowl, toss together the pasta with the cheese cubes and pour into the baking dish.
- In a large bowl, mix together the flour, salt, black pepper, cayenne pepper, dry mustard, nutmeg. Add the sour cream, egg, heavy cream, half-and-half and onions. Pour over the pasta and cover with the shredded Cheddar. Bake uncovered until the top is just beginning to brown, about 35 minutes.
- Meanwhile, cut the bread into crouton-size squares. In a skillet over medium heat, melt the butter, add the bread cubes and toast until golden. Sprinkle the bread cubes on top of the macaroni and cheese and bake until golden brown, about 10 minutes more.
SPICY MACARONI AND CHEESE

- In a large heavy saucepan cook the onion, the garlic, the jalapenos, or chipotle in butter over moderately low heat, stirring, until the onion is softened, stir in the flour, and cook the mixture, stirring, for 3 minutes. Add the milk in a stream, whisking constantly, and bring the liquid to a boil. Stir in the tomatoes. Simmer the mixture for 2 minutes. Add salt and pepper, to taste.
- In a kettle of boiling salted water cook the macaroni for 6 to 7 minutes, or until it is barely al dente, drain it well, and in a large bowl combine it with the tomato mixture. Stir in the Monterey Jack and the cheddar and transfer the mixture to a buttered 15 by 10-inch shallow baking dish or 3-quart gratin dish. In a bowl stir together the bread crumbs and the Parmesan, sprinkle the mixture evenly over the macaroni mixture. Bake the macaroni and cheese in the middle of a preheated 375 degree F oven for 20 to 25 minutes or until it is golden and bubbly.
SPICY MAC AND CHEESE

- Heat oven to 350° Fahrenheit.
- Cook pasta in very salty water until it's a few minutes less than al dente. (The pasta will continue to cook in the oven, so undercooking it during the boiling phase helps it hold up once baked!) Drain and set aside.
- Melt butter in a large saucepan over medium heat. Whisk in flour to form a roux and cook for 30 seconds to 1 minute, until fragrant.
- Whisk the milk into the roux a little at a time, making sure to work out all the clumps so you have a smooth sauce. Cook over medium heat, whisking occasionally, until milk has thickened, about 5 minutes.
- Whisk mustard powder, cayenne, paprika, salt, and black pepper into sauce.
- Turn off the heat. Add most of the cheddar cheese (reserve 1/2 cup for topping the mac later) and stir until melted.
- Stir cooked pasta into sauce.
- Pour pasta into an oven-safe baking dish (we used a cast iron skillet). Top with remaining cheese.
- Bake at 350° F for 15-25 minutes, or until cheese has melted and edges are crispy.
- Top with fresh chopped parsley and another pinch of spices (optional) and serve immediately.

I was running low on groceries and needed to use pantry staples to create a filling dinner for my family. I came up with this soup and now it's become a favorite in our home. For an even creamier consistency, I sometimes use a can of evaporated milk in place of the regular milk in the recipe. Leftover taco meat or shredded rotisserie chicken can be added to make it more hearty.

- Bring a large pot of lightly salted water to a boil and stir in macaroni from the packages, retaining cheese mix packets for later use. Cook macaroni at a rolling boil over medium heat, stirring occasionally, until tender but still slightly firm, 8 to 10 minutes. Drain and rinse macaroni with cold water. Return cooked macaroni to the pot.
- Mix butter, chicken broth, and tomatoes with macaroni and bring mixture to a simmer over medium heat; stir in garlic powder, cumin, dry mustard, pepper, and contents of cheese mix packets. Stir in milk and reduce heat to low; heat soup almost to a simmer. Do not boil.
- Serve soup in bowls and top each serving with about 2 tablespoons of sour cream.

I grew up on this recipe - it was a family favourite and I now make it for my husband and children and they all love it, too. We like things spicy, so I've added cayenne powder to my version.

- Cook and drain macaroni; rinse with cold water.
- Meanwhile, melt butter or margarine either in a pot on the stove or in a microwavable container in the microwave.
- Stir in flour.
- Add milk and cook, stirring frequently (5 - 6 minutes in the microwave, stirring every minute) until thickened.
- Add seasonings and continue cooking on stove or in microwave for 1 - 2 minutes longer.
- Add 1 1/2 cups cheese and stir until melted (may need to be cooked for 1 more minute to melt the cheese).
- Grease a large casserole dish and pour in macaroni noodles and cheese sauce, stirring to mix. My dad always layered the noodles and sauce, so that's an option, too.
- Sprinkle the breadcrumbs on top, followed by the remaining 1/2 cup cheese.
- Bake at 375 for 25 - 30 minutes, or until mixture is heated through and the cheese on top is completely melted.

MACARONI AND CHEESE FOR MOM AND DAD
I came up with this recipe for the Ready Steady Cook #11 contest. Macaroni and Cheese is near the top of most people's list of comfort food from when they were a child. This dish gives Mac & Cheese a chance to grow up and provide a lush meal. Perhaps even a romantic meal. The idea of putting in the sun dried tomatoes came from Amish Macaroni and Cheese that usually includes slices of tomatoes. I originally thought that this made enough for two big servings but a lot of people have commented that it makes more like four servings. Perhaps I wrote down the wrong amount of pasta that I used but it appears to be working with the larger serving amounts. I have also made this with low fat versions of the cheeses and it has worked well that way too and with fewer calories.

- Preheat oven to 350 degrees.
- Cook macaroni according to package directions, drain and set aside.
- Melt butter in saucepan.
- Add shallots, sun dried tomatoes and mushrooms and cook them for a minute or two until they are just tender.
- Stir in flour and mustard powder.
- Slowly add milk.
- Bring to a low boil and stir often until the sauce has thickened a bit.
- Stir in the cheese and the white wine. Stir constantly until the cheese has completely melted.
- Add the cooked macaroni to the pan with the sauce and stir until the all of the pasta is coated by the sauce.
- Transfer to an oven proof dish and bake in the oven for about 15 minutes.

SPICY MAC & CHEESE FOR MOM & DAD

- Prepare Kraft Mac & Cheese to box directions, using margarine & 2% milk. Cook, drain, rinse.
- In separate pot, melt butter & milk, salt and pepper (to taste) on very low heat. Whisk constantly. When warm, add flour, and continue to whisk. Add Kraft Colby Jack and White Cheddar Cheeses, scraping the sides.
- When combined, stir in prepared Kraft Mac & Cheese. Let rest (on low heat) for a few minutes. Stir again. Continue for 3 to 4 minutes.
- Remove from heat and serve with a few splashes of Louisiana Hot Sauce & Hot Pepper Flakes. Yum!
