SPICY LAMB WITH WARM COUSCOUS
A spicy lamb and couscous meal in just 15 minutes

Steps:
- Heat grill to medium. Tip the couscous, chickpeas and lemon zest into a large bowl and pour over the hot stock. Cover with cling film and leave to stand for 10 mins, until all the stock has been absorbed.
- Smear 2 tsp harissa paste over the lamb chops, season to taste, then grill for 3-4 mins each side until crisp outside and medium rare in the middle. Cover, then rest for a few mins. Mix the remaining harissa into the yogurt, then season to taste.
- Fold the rocket through the warm couscous, breaking up any clumps with a fork. Serve with the chops and a drizzle of harrissa and yogurt dressing.

This recipe came from a friend (apparently from a slimmers recipe book). Its a fantastic side dish at BBQ's and get togethers or simply for your everyday meal.

Steps:
- Rub the lamb in the curry powder covering completely.
- Cook lamb in oil for approx 3 minutes on either side.
- Set lamb aside to cool.
- Boil water, add couscous, remove from heat, cover and stand for 2 minutes.
- Stir and let stand for a further 3 minutes.
- When cool transfer to bowl and add cucumber, spring onions and mint.
- Thinly slice cooled lamb and add to bowl.
- In a seperate bowl mix lemon juice, mango chutney and oil.
- Pour over couscous and season to taste with salt and pepper.
- Garnish with fresh mint.

STICKY FIG LAMB CUTLETS WITH WARM BEAN & COUSCOUS SALAD

- Heat a frying pan and bring a small saucepan of water to the boil. Put the couscous in a bowl, pour over 100ml boiling water from the kettle, cover with a tea towel and set aside. Cut between the lamb bones so you have 7 trimmed lamb cutlets. Rub a little of the oil and some seasoning onto each cutlet. Cook the green beans in the boiling water for 4 mins, then drain.
- Once the frying pan is hot, cook the lamb for 3 mins each side, brushing with the fig jam as they cook. Add the vinegar in the final 1 min of cooking, transfer the lamb to a plate and leave to rest. Bubble any remaining juices in the pan until sticky.
- Mix the couscous with a fork to fluff it up, add the beans, red onion, tomatoes, lemon zest and juice, the torn mint and the remaining oil. Season and mix well. Divide the salad between 2 plates and top with the lamb cutlets. Drizzle over the remaining sticky juices from the pan and scatter over a few whole mint leaves.

- Combine the couscous and raisins in a large bowl. Pour 1 1/4 cups boiling water over the mixture. Cover and let stand 5 minutes; fluff with a fork.
- In a bowl, whisk together the lemon juice, cumin, garlic, salt and pepper. Whisk in the olive oil.
- Add the lamb, chickpeas, tomatoes, feta, mint and scallions to the bowl of couscous. Pour the dressing over the mixture and toss well. Taste and add more lemon juice and salt if necessary.

SPICY LAMB WITH GARLIC COUSCOUS
A spicy Moroccan style dish. As the couscous has minimal cooking time the garlic flavour is quite strong, reduce the amount of garlic in the couscous or use some roasted garlic paste if you aren't keen on very garlicky food. This recipe came from the Home Beautiful magazine. The marinade also works well with chicken fillets.

- FOR THE LAMB.
- Trim off any fat.
- In a small bowl combine the chili, cumin, garlic and coriander.
- Rub the mix into the lamb, you can allow it to marinate for up to 4 hours but it isn't essential.
- Cook the lamb on a preheated, oiled grill plate until browned and cooked to your liking.
- Remove from grill, sprinkle with a little sea salt and cover to keep warm.
- FOR THE COUSCOUS.
- Combine the stock, garlic and peas in a medium saucepan and bring to the boil.
- Remove from the heat and stir in the couscous and oil.
- Cover and stand for about 5 minutes or until the liquid is absorbed.
- Fluff with a fork.
- TO SERVE.
- Slice the lamb, place on top of a mound of couscous and add a dollop of yoghurt.

- Remove fat from lamb. Cut lamb into 1 1/2-inch cubes. Mix remaining ingredients except couscous, mint and pepper sauce in glass or plastic bowl. Add lamb; stir to coat with marinade. Cover and refrigerate 4 hours.
- Set oven control to broil. Spray broiler pan rack with cooking spray. Remove lamb from marinade. Place lamb on rack in broiler pan. Broil with tops 5 inches from heat 6 minutes; turn. Spoon pan drippings over lamb. Broil about 7 minutes longer or until no longer pink in center.
- Mix couscous and mint. Serve lamb over couscous. Serve with pepper sauce.

- Preheat oven to 190 degrees celsius (375 F) and line an oven tray with baking paper. Arrange vegetables on tray, season with sea salt and pepper, add bbq seasoning and olive oil and toss to combine. Bake for 40-50 minutes (tossing half way) or until gorgeously golden and cooked.
- Meanwhile, place the couscous into a large heat proof bowl, season with sea salt and pepper, add lime zest, olive oil and boiling water. Cover for 5-10 minutes, or until the water is absorbed. Use a fork to fluff up the couscous until its light and fluffy. Set aside.
- Place lamb chops onto a large plate, season with sea salt and pepper, sprinkle over sumac and drizzle with olive oil. Rub to combine. Heat a frypan to medium-high heat, add lamb chops (there is no need for any oil as the lamb chops are smothered in olive oil) and cook 3-4 minutes (each side) or until golden and cooked to your liking. Place chops onto a plate to rest for ten minutes. Place the rested lamb chops onto a wooden board and slice across the grain to create thin slithers of perfectly pink pieces of luscious lamb. Set aside.
- To assemble: add the perfectly roasted vegetables to the couscous and gently toss to combine. Add the cucumber, spring onion and basil and toss to combine. Cover the base of a large serving dish with the couscous mixture. Top with lamb, crumbled feta and fresh basil leaves. Serve alongside a few wedges of fresh lime. Enjoy x
