Grilled Fish on Pineapple Planks with Spicy Pineapple Salsa image

This elegant yet incredibly easy preparation uses almost all the parts of a pineapple to yield tasty fillets of bass or snapper. The pineapple's peel acts as a buffer against the direct heat of the grill, preventing overcooking and keeping the fish moist, and its flesh becomes a tasty salsa that brings home the island flavors. The plating of the fish, right on the pineapple "planks," is dramatic and fun.

1 ripe pineapple
One 2-inch piece fresh ginger, peeled
1/2 cup coarsely chopped fresh cilantro
2 tablespoons vegetable oil, plus more for brushing
2 ripe plum tomatoes, seeded and diced
1 small orange bell pepper, finely chopped
1 medium jalapeno, chopped (seeded, for less heat, if desired)
Juice of 1 lime
1/2 small red onion, finely chopped
Kosher salt
2 tablespoons soy sauce
1 tablespoon honey
Four 6-ounce skinless fillets bass or snapper

Steps:

  • Prepare a grill for medium-high heat. Cut the top from the pineapple and discard. Cut the sides off to make 4 flat planks. Finely dice the pineapple flesh (discard the core) and put it in a medium bowl.
  • Finely grate the ginger and add half to the bowl with the pineapple; reserve the rest. Add the cilantro, oil, tomatoes, bell pepper, jalapeno, lime juice and onion to the diced pineapple. Season with 1/4 teaspoon salt, then toss well and refrigerate while you make the fish.
  • Stir the soy sauce and honey together with the remaining ginger in a small bowl. Brush the fish with oil and sprinkle lightly with salt. Brush the tops (the flesh side) of the pineapple planks with some of the soy sauce mixture and place the fish fillets on top of the planks. Brush the remaining soy sauce mixture on the tops of the fillets, folding the thinner part of the fillets under if needed to fit on the plank.
  • Place the pineapple planks on the grill, cover and cook until the fish is just cooked through, 15 to 20 minutes. Serve the fish on the planks topped with some of the salsa. Serve the remaining salsa on the side or reserve to serve with chips.

Brushed with sweet and spicy chili sauce and served with a simple pineapple salsa, these are packed with big, bold flavor. These also make unique burrito bowls. 10 Skewers ((for grilling))
8 oz Pineapple, finely diced
1/2 Red Bell Pepper, finely diced
2 tsp Rice Vinegar
2 tsp Cilantro, chopped
1/2 Lime Zest, divided
1 lb Shrimp, peeled and deveined ((use medium to large sized shrimp))
1/2 cup Thai Sweet Chili Sauce

Steps:

  • If using wooden / bamboo skewers, soak them in water for about 10 minutes before grilling. This will prevent them from burning on the hot grill.
  • Prep your grill. It's a good idea to use high heat (400 F or higher). The shrimp will be most tender and juicy if cooked very fast over very high heat.
  • Make salsa: Combine pineapple, bell peppers, rice vinegar, cilantro and 1/4 tsp lime zest. Season the salsa with a pinch of salt and refrigerate until ready to serve.
  • Thread shrimp through skewers.
  • Divide sweet chili sauce, placing 1/4 cup of sauce in each of two small bowls. Whisk in 1/8 tsp lime zest into each bowl. Set one bowl aside.
  • Just before grilling, pat shrimp dry with paper towels. Season on both sides with salt and pepper. Place shrimp skewers over the hottest part of the grill, turning them to get grill marks on both sides, until pink and cooked through, 2 to 4 minutes total. In the last minute of cooking, use one bowl of sweet chili sauce to liberally brush both sides of the shrimp skewers. (The sauce should start to caramelize and blacken in spots on the hot grill, so watch closely to prevent burning.)
  • When shrimp are cooked through, transfer to a serving platter and brush with the remaining bowl of sweet chili sauce.
  • Serve shrimp and pineapple salsa over rice, other grains, or to top salads.

  • In a large saucepan, bring 8 cups water to a boil. Add tomatoes, a few at a time; boil 30 seconds. Drain and immediately place tomatoes in ice water. Drain and pat dry; peel and chop., In a stockpot, combine remaining ingredients. Stir in tomatoes. Bring to a boil over medium-high heat. Reduce heat; simmer, uncovered, 15-20 minutes or to desired thickness., Carefully ladle hot mixture into seven hot 1-pint jars, leaving 1/2-in. headspace. 3 medium poblano peppers (sliced in half)
1 long red fingerling pepper - or an equivalent sized red bell pepper
2 serrano peppers
1 large white onion (sliced into thick rings)
2 1 " thick sliced pineapple rings (rinds removed - you will core them later)
1 large lime (sliced in half)
1 medium tomato (chopped)
Salt to taste
Olive oil

Steps:

  • Heat your grill to medium heat and lightly oil the grates.
  • Set the peppers, onion slices, pineapple rings and lime halves (flesh side down) onto the grill and grill them until nicely charred. The limes will only need a few minutes. The pepper skins will puff up and blacken.
  • Remove from heat as needed and let cool slightly.
  • Peel off the pepper skins and remove the innards.
  • Slice the pineapple rings to remove the tough inner core and discard it.
  • Transfer the grilled ingredients to a food processor and squeeze in the juice from the limes.
  • Add the chopped tomato.
  • Add a bit of salt and process until nice and chunky.
  • Adjust for salt to your preference. Serve with chips!

1 cup pineapple, chopped
1/2 lemon, juiced
1 small tomato, diced
1/2 cup olive oil
1 small red onion, chopped

  • Peel shrimp and devein. Set aside. In bowl combine lemon juice, 1/4 cup olive oil, minced garlic, and red pepper flakes. Add shrimp and stir to coat. Let sit for 20 minutes. Meanwhile, in separate bowl combine pineapple, tomato, and onion and parsley. Drizzle on remaining oil and mix together.   • Prepare salsa ingredients. Peel, core and slice pineapple into thick round or long slices. Small dice red onion and chop cilantro. In a wide bowl, add red onion, 2 tbsp of lime juice with generous pinch of salt. Mix and set aside to marinate.
