SWEET 'N' SPICY ROASTED CORN
In Bryan, Texas, Erin Littlefield saves herself the trouble of husking those ears of sweet corn she brings to family picnics and get-togethers with this scrumptious grilling technique. "My husband came up with the sweet and spicy glaze," she confides. "It tastes really good, looks beautiful with the flecks of red pepper and requires much less butter than folks generally use."

- Carefully peel back corn husks to within 1 in. of bottom; remove silk. Rewrap corn in husks and secure with kitchen string. Soak corn in cold water for 1 hour., Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill corn, covered, over medium heat for 25-30 minutes or until tender, turning occasionally. Remove string before serving., Meanwhile, in a small saucepan, melt butter. Add the garlic, brown sugar, red pepper flakes and chili powder. Serve with grilled corn.

SPICY GRILLED CORN ON THE COB
This grilled corn on the cob is a real summertime treat. It's basted with a spicy butter blend and grilled to perfection in about 20 minutes. This recipe is easily doubled to serve a larger gathering. This recipe is part of our Juneteenth Family Cookout Menu.

Steps:
- Carefully pull back cornhusks, remove the silk and fold the husks back over the cobs. Soak the corn in a large bowl of water for at least 1 hour.
- Preheat grill to low heat (300°F). Combine butter, garlic powder, paprika, cayenne, salt and pepper in a small bowl.
- Remove the corn from the water and pat dry with a clean towel. Pull the husks back and brush the kernels with the butter mixture, then cover again with the husks. Grill the corn, turning a few times, until tender and slightly charred, 15 to 20 minutes. To serve, pull back the husks and tie them together with kitchen twine.

- Preheat the grill to medium heat.
- In a small bowl, mix the butter, paprika, red pepper flakes
- and salt and pepper to taste. Rub the spiced butter on the corn, coating
- completely.
- Wrap each ear of corn in aluminum foil and place on the
- grill. Cook 20 to 25 minutes, turning several times for even cooking. Carefully
- remove the foil before serving.
PARMESAN GARLIC GRILLED CORN
Steps:
- Preheat an outdoor grill or indoor grill pan to medium-high heat.
- Pulse the garlic in a food processor until very finely minced. Add the mustard, 1/2 teaspoon salt, 1/2 teaspoon pepper and 1/2 cup Parmesan and pulse until everything is well combined. Pour the olive oil slowly into the mixture while pulsing. Take 1/4 cup of the mixture and brush it over the ears of corn so that they are completely coated, then set aside the remaining mixture. Mix the remaining 1/2 cup Parmesan with the parsley in a small bowl and set aside.
- Add the corn to the grill and cook, turning halfway through, until the corn is charred and browned in spots, about 15 minutes. Remove the corn to a platter and brush it with the remaining garlic mixture, then sprinkle the corn with the parsley and cheese mixture. Serve immediately.
GRILLED CORN
Steps:
- Preheat grill. Peel away the outer husk without actually removing it, remove the inner silky threads, then wrap the outer husk back around the ear. Soak the ears in water for 10 minutes, place on the grill and grill for 15 to 20 minutes. Brush with butter and sprinkle with salt.

- Melt butter in small pan over medium heat. When melted, add garlic, chili powder, cumin, paprika, and cayenne and cook about 1 minute. Set aside.
- Prepare the corn by removing all but the innermost layer of the husk. The kernels should be covered but visible through the layer. Use scissors to snip off the silk ends.
- Grill the corn over medium-hot fire, turning corn every 2 minutes until the dark outlines of the kernels show through the husk and the husk is charred and beginning to peel away from the kernels, about 8-10 minutes.
- Transfer the corn to a platter. Remove and discard charred husk and silk. Using brush, brush each ear with butter mixture.

- Add Oil, Garlic, Red Pepper Flakes, and Paprika to the Butter, Take off heat immediatly, and let sit for 30 mintues.
- Add Butter Spice Mixture onto low heat for 1 1/2 mintues, then pour into large Ziplok Bag, add Corn, and zip the bag shut, and shake/roll around in your hand for about five mintues, then let sit for 30 mintues to an hour while you heat the charcoal for the grill.
- Take Corn out of Ziplok Bag and put on Grill. Cook till it is charred on all sides.
- Remove and let sit for 5-10 mintues.
