SLIGHTLY SPICY VEGETABLE CURRY

Slightly Spicy Vegetable Curry image

Like all curries, this one is spicy for those that can't handle any spicy food. However, if you love hot spicy food this one may be a little mild, but you can spice it up even hotter by adding additional cayenne pepper to it. This is wonderful serve with Nans and Dahl. Try adding different vegetables or omit any that you don't happen to care for. Another recipe by one of the Micheff Sisters, Brenda Walsh.

EASY SPICY VEGETABLE CURRY

Easy Spicy Vegetable Curry image

This is a variation of a recipe I got from the food columnist at the Fayetteville Flyer. She was bemoaning the fact that Fayetteville has no Indian restaurants and the ones within driving distance to the north were mediocre at best. I have not had any decent Indian food since moving here from Dallas. I have very fond memories of Indian food from our trips to London. London is a great food town! There was a Pakistani restaurant that opened in an old Pizza Hut here this year that did not last long. I have no idea if the food was good but can't help wondering if maybe they had called it Kashmiri or Himalayan cuisine it might have been more successful. And of course that whole abandoned Pizza Hut thing can be risky.

SPEEDY SPICY VEGETABLE CURRY

Speedy Spicy Vegetable Curry image

Vegetarian curries are a great way to get the whole family to eat their five-a-day. You can use almost any veg, so add all their favourites. As well as the protein and iron in the lentils, the vitamin C in the veg helps the body absorb the iron. This is very simple to prepare - but you can make it even easier by using frozen veg.

FRUIT AND VEGETABLE CURRY

Fruit and Vegetable Curry image

The influences of colonial powers and immigrants from Malaysia and the Indies can be tasted in this curry from Southern Africa. This is a Moosewood recipe.

Provided by MsBindy

Categories     Curries

Time 1h20m

Yield 6 serving(s)

Number Of Ingredients 25

4 cups coarsely chopped onions
2 tablespoons peanut oil or 2 tablespoons vegetable oil
2 garlic cloves, minced
1 teaspoon grated peeled fresh gingerroot
1 1/2 tablespoons ground cumin
1 1/2 tablespoons ground coriander
1 1/2 teaspoons cinnamon
1 teaspoon turmeric
1/2 teaspoon cayenne
1/2 teaspoon ground fennel
1/4 teaspoon ground cardamom
1/4 teaspoon ground cloves
2 medium zucchini, quartered lengthwise and sliced
1 1/2 cups water
1 cup cut green beans
2 firm tart green pears or 2 apples, cored and cubed
1/2 red bell pepper, coarsely chopped
1 cup chopped dried apricot
1/2 cup currants or 1/2 cup raisins
1/2 cup apricot preserves
fresh lemon juice (optional)
garam masala (optional)
6 cups cooked brown rice
1 cup raw peanuts or 1 cup roasted peanuts
2 bananas

Steps:

  • Saute the onions in the peanut oil for 10 minutes.
  • Stir in the garlic, ginger root, and spices and continue to saute, stirring constantly for about 3 minutes.
  • Add the zucchini and water and stire well so that the spices won't stick to the bottom of the pan.
  • Cover the pan and simmer for 10 minutes.
  • Mix in the green beans, pears, red bell peppers, and dried apricots.
  • Simmer gently, covered, for about 30 minutes.
  • Stir occasionally and add a little more water if needed to prevent sticking.
  • When the fruit and vegetables are quite tender, stir in the currants and the apricot preserves.
  • Taste the curry and adjust the flavor to your liking. Add cayenne or Garam Masala if it's not spicy enough, lemon juice if you'd like more tartness, or more apicot preserves to intensify the sweetness.
  • Keep the curry warm on a heat diffuser, to prevent scorching, until ready to serve.
  • Serve on a bed of rice, topped with peanuts and sliced bananas.

FRUITY TURKEY CURRY

Fruity Turkey Curry image

Leftover turkey shines in this make-ahead curry. I often reduce the amount of curry powder as my family doesn't like it, but feel free to spice this how you please. I use fresh pineapple but it works well with the canned.

Provided by Lennie

Categories     Curries

Time P1DT30m

Yield 6 serving(s)

Number Of Ingredients 14

2 medium onions, peeled and chopped
1 celery rib, sliced
2 granny smith apples, with peel on,cored and thinly sliced
6 tablespoons butter or 6 tablespoons margarine
1/4 cup all-purpose flour
4 teaspoons curry powder
1 1/2 teaspoons salt
1 teaspoon freshly ground black pepper
1/2 teaspoon dry mustard
1 bay leaf
3 cups chicken broth, or turkey if you have it
2 cups canned pineapple chunks, or fresh
1 cup half-and-half (whipping cream is too heavy) or 1 cup 10% cream (whipping cream is too heavy)
4 cups cooked turkey meat, , white and dark,in bite size pieces

Steps:

  • Here's something different to help use up leftover holiday turkey.
  • Make this entire dish the night before, or first thing in the morning and then refrigerate all day; it tastes much better when reheated.
  • In a large saucepan over medium heat, melt butter and saute onions, celery and apple slices until tender, but do not let brown.
  • Sprinkle with the flour and curry powder and cook for 3 minutes, whisking occasionally.
  • Add salt, pepper, dry mustard and bay leaf, then slowly pour in the chicken stock (or turkey stock if you were ambitious and made some).
  • Turn the heat up and bring to a boil, then turn heat back down and simmer for 15 minutes, stirring occasionally.
  • Remove bay leaf and add pineapple chunks and cream and cook for 2 minutes.
  • Remove from heat, cover, and refrigerate; pour into a storage container if you don't want to refrigerate your pot too.
  • Just before serving, return curry mixture to a large pot and stir in turkey meat.
  • Cook over medium heat until completely heated through.
  • Serve with rice.
  • If you happen to have leftover cranberry sauce, goose it up with some raisins that have been plumped in hot water (or warm brandy) and some freshly grated ginger-- a sort of cheater chutney that uses up the cranberry sauce.
