LOADED BUTTERSCOTCH SAUCE SUNDAE

Steps:
- In a medium saucepan, melt the butter over medium heat. Add the sugar, cream and salt and whisk until combined. Bring to a boil, then reduce the heat and simmer, stirring occasionally, until smooth and thickened, 5 to 10 minutes. Remove from the heat and stir in the vanilla bean paste; the sauce will thicken as it cools.
- Scoop vanilla ice cream on top of the blondies, then top with the butterscotch sauce, cashews and whipped cream.
HAZELNUT ICE CREAM SUNDAE

- Take milk and warm up for about 30 to 40 seconds in the microwave. Foam the milk with a drink foamer. Take gelato, and place 2 scoops in 3 cups. Place biscotti in cup with gelato. Top with foamed warm milk, and dust top of sundae with cocoa powder. This dessert is wonderful when served with home made espresso.

- Melt 1 stick of butter in a medium saucepan over medium heat. Whisk in 1 cup each dark brown sugar and heavy cream and 1 teaspoon kosher salt. Bring to a boil, then reduce the heat and simmer, stirring, until thickened, 5 to 10 minutes. Remove from the heat and stir in 1 teaspoon vanilla bean paste. Make sundaes with blondies, rum raisin ice cream, the butterscotch sauce and chopped cashews.
ICE CREAM WITH BUTTERSCOTCH SAUCE

- Heat cream in a medium saucepan over medium-high heat until almost boiling. Stir in chopped candies, and reduce heat to medium. Continue to cook, stirring constantly, until candies have melted, about 5 minutes. Remove from heat; let sauce cool slightly.
- Divide ice cream among four serving bowls, and top with sauce. Garnish with additional crushed candies, if desired.

- Preheat oven to 350 degrees.
- Spread coconut on a rimmed baking sheet; toast, tossing occasionally, until brown and fragrant, about 10 minutes (store at room temperature up to 1 day).
- In a medium saucepan over medium-high heat, bring cream to a boil; remove from heat.
- Add chocolate, cinnamon and salt.
- Let stand 1-2 minutes.
- Whisk until chocolate is melted and mixture is shiny (cover and refrigerate up to 2 days; before serving, reheat in double boiler or the microwave).
- Remove ice cream from freezer 15 minutes before serving.
- Scoop into bowls; top with warm sauce, peanuts and coconut.
BUTTERSCOTCH-GINGER ICE CREAM SAUCE FOR TWO
This is a wonderful sauce to serve over French Vanilla ice cream. Definitely for ginger lovers only, though; although if you leave out the ground and crystallized ginger, you do have a terrific butterscotch sauce.

- In a two-cup glass measuring cup, combine the brown sugar, cornstarch and ground ginger; mix in honey, then stir in cream and butter.
- Microwave, uncovered, on High for 2 to 3 minutes or until thickened, stirring every minute.
- Stir in crystallized ginger.
- Serve warm over ice cream, preferably a french vanilla.
- If there are leftovers, keep them refrigerated.
