Easy, spicy onion rings that can be made right to order. You can omit the spices if you'd like, or add your favorite!

4 large sweet onions, peeled and sliced into thick rings
1 cup egg substitute
1 cup all-purpose flour
2 cups bread crumbs
1 teaspoon salt
2 teaspoons ground black pepper
1 ½ teaspoons cayenne pepper
1 teaspoon dried oregano
1 teaspoon dried basil
2 teaspoons red pepper flakes
1 quart canola oil for frying

Steps:

  • Place the onions, egg substitute, and flour into separate shallow bowls. In another shallow bowl, stir together the bread crumbs, salt, pepper, cayenne, oregano, basil, and red pepper flakes.
  • Heat oil in a heavy skillet or deep-fryer to 365 degrees F (180 degrees C). Dip rings of onion into flour, then into the egg substitute, and then into the bread crumb mixture, shaking off any excess after each dip. Carefully drop each onion ring into the hot oil, and fry for about 30 seconds on each side, or until golden. Remove from hot oil to paper towels to drain. Serve hot with lots of ketchup.

1 large onion, cut into 1/4-inch slices
1 ¼ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 egg
1 cup milk, or as needed
¾ cup dry bread crumbs
seasoned salt to taste
1 quart oil for frying, or as needed

Steps:

  • Heat the oil in a deep-fryer to 365 degrees F (185 degrees C).
  • Separate the onion slices into rings, and set aside. In a small bowl, stir together the flour, baking powder and salt.
  • Dip the onion slices into the flour mixture until they are all coated; set aside. Whisk the egg and milk into the flour mixture using a fork. Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. The wire rack may be placed over a sheet of aluminum foil for easier clean up. Spread the bread crumbs out on a plate or shallow dish. Place rings one at a time into the crumbs, and scoop the crumbs up over the ring to coat. Give it a hard tap as you remove it from the crumbs. The coating should cling very well. Repeat with remaining rings.
  • Deep fry the rings a few at a time for 2 to 3 minutes, or until golden brown. Remove to paper towels to drain. Season with seasoning salt, and serve.

My mom used to make these when I was growing up. We rarely fry things in our house these days, but these are so yummy that we have to make them on occasion! These have just a slight spicy flavor...enough to make these onion rings unique!

vegetable oil (for frying)
1 large vidalia onion
2 cups any brand complete pancake mix
1 cup beer
1 teaspoon paprika
1 teaspoon chili powder
1/2 teaspoon ground cayenne pepper

Steps:

  • Heat approximately one inch vegetable oil over medium high heat.
  • Test the oil by putting a small cube of bread into the oil.
  • If it turns brown after half a minute, the oil is ready.
  • Cut the ends off the onion and peel the outer layers.
  • Cut the onion into 3/4 inch slices and separate into rings.
  • Mix together the pancake mix and beer.
  • Add the paprika, chili powder and cayenne pepper to the mix.
  • Take 5-6 of your "rings" and coat the rings of onion in the batter then fry for approx 5 minutes until both sides are golden brown.
  • Turn over once during the frying process so both sides are cooked.
  • Remove from oil and place on paper towels to drain.
  • Season the onion rights with salt while they are still hot.
  • Repeat until the rings are all fried.

Vegetable or canola oil for frying
2 large sweet Vidalia onions
2 cans evaporated milk, 5 ounces
1 cup all purpose flour
1/2 teaspoon dried mustard
1/2 teaspoon cayenne pepper
1 teaspoon sweet paprika, 1/3 palm full
Coarse salt
1 cup reduced fat sour cream, eyeball the amount
1/4 cup chili sauce, eyeball the amount
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cumin

Steps:

  • Heat 1 inch of vegetable or canola oil in a large frying pan over medium high heat.
  • Cut onions across into 1-inch rings and separate. Discard the outer layer of skin on your rings. Pour evaporated milk into a small, deep bowl. Mix flour with seasonings in a pie plate or shallow dish. Dip individual rings in milk, then coat in flour. And repeat for a double dip. Fry in a single layer in hot oil until golden brown. Remove to brown paper bag or paper towel lined surface to drain. Salt while hot, to your taste.
  • For dipping sauce, combine all ingredients in a bowl and stir.
  • Tip: refrigerate your onions and canned evaporated milk when you unpack from the grocery store. The colder the better for making onion rings!

PAT'S "OLD SCHOOL" ONION RINGS

Peanut oil, for deep-frying
2 medium Vidalia onions
2 cups buttermilk
1/4 teaspoon hot sauce
1 egg, beaten
1 cup all-purpose flour
1 cup cornmeal
2 teaspoons seasoned salt
1/4 teaspoon cayenne
Salt

Steps:

  • Preheat vegetable oil in a deep-fryer to 375 degrees F.
  • Slice the onions into 3/4-inch rings and separate. Add the buttermilk, hot sauce, and egg to a large casserole dish and whisk to combine. Stir in the onion slices and allow to soak for 3 to 5 minutes. Put the flour and cornmeal in a large brown paper bag and season with the season salt and cayenne. Add the onion rings, to the paper bag in batches, and shake until they are covered with the flour mixture. Make sure to get rid of the excess buttermilk before adding to the bag.
  • Add the onions in batches to the hot oil, being careful not to overcrowd the fryer. Fry until golden brown, about 2 minutes. Transfer to a serving platter and season with salt when they come out of the hot oil.

1 teaspoon garlic powder
1/2 teaspoon dried basil

1 cup all-purpose flour
1/2 cup cornmeal
3 large yellow onions, thinly sliced in rounds

Steps:

  • In a high-sided saucepan, heat the oil over medium heat until it reaches 350 degrees F.
  • Mix together the cayenne, paprika, garlic powder, basil, oregano, black pepper and sea salt in a small bowl.
  • Whisk together the flour and cornmeal in a medium bowl. Toss the onion rings in the flour mixture to coat. Deep-fry the onion rings in 2 batches until crispy and lightly golden, 3 to 5 minutes. Drain on a paper towel for 1 minute, and then transfer to a large bowl. Add a large pinch of the spice mixture, and toss the onion rings to evenly distribute the seasoning.
  • Season with more salt if desired, and serve immediately.

Steps:

  • Slice off ends of onions and peel off the skins. Slice into 1/2-inch rings. Place rings in a bowl of ice water and let sit. In separate bowl whisk together beer and flour. These are truly something different...an onion ring recipe calling for condensed milk & chipotle peppers! The original version in Southern Living magazine used 1/4 cup of jalapeños, but I like the slightly smoky flavor the chipotles add. Our family likes these served with ranch dressing.
