THAI SHRIMP SALAD APPETIZER SPOONS
Steps:
- Cut the cucumber into batons and remove the seeds. Then chop the batons into small dice and place in a non-metallic bowl.
- Thinly slice the green onions and add them to the bowl.
- See and finely chop the red chlli, then add it to the bowl with the cucumber and onion.
- Mix the lime juice, fish sauce and sugar together and stir until the sugar has dissolved.
- Taste your dressing and adjust to your preference.
- Pour the dressing over the salad and stir to combine.
- Place a heaped teaspoon of the the cucumber mixture into each spoon and top with a shrimp (see note 1)
- Sprinkles over some roasted peanut, crispy onion and garnish with a cilantro leaf.

- 1. Preheat deep fryer to 320 degrees. Add moist shrimp to ingredient 2. Coat well. Deep fry for 1 ½ minutes or until shrimp begins to curl. Add grapeseed oil to a heated skillet. - Add all other ingredients to the food processor and mix until well blended.
- Remove the mixture to a bowl, have a plate ready to place the patties on. Roll the mixture into golf ball-sized patties.
- Heat a skillet on medium heat, add 2 Tbsp of oil, cook the shrimp cakes, 6 or so pieces at a time, until light golden brown (2-3 mins). Flip them over and cook for 2 minutes more and place them on a plate lined with a paper towel to let cool. Finish cooking the rest of the patties.

- Mix ingredients for the marinade in a large bowl. Add shrimp and toss to coat. If desired, allow to marinate in refrigerator for up to 4 hours. It's not necessary, but obviously the shrimp will be more saturated with the marinade.
- Heat 2 tablespoons of oil on medium in a large cast iron skillet [wok or non-stick skillets will work, too]. Add green onion and sauté until soft.
- Add shrimp and cook for 4-6 minutes until shrimp are cooked through. They should look white and start to curl up. Don't overcook - they will become rubbery and tough.

- Place the shrimp in a bowl with the dry sherry and salt and marinate for 30 minutes; toss every so often.
- Heat a large wok or 12-inch skillet until very hot. While the pan is heating, lay the shrimp out on paper towels and pat dry. Add 2 tablespoons of the peanut oil to the pan and heat until sizzling. - Shell the shrimp, leaving the tail on. Pat the shrimp very dry with a towel or paper towel. With a small knife, make three shallow, parallel slits along the inside curve of shrimp, just nicking the shrimp in place to "straighten" out the natural curve of shrimp. This will help keep the shrimp nice and straight when frying.
- Line up the shrimp on a plate, tails all facing one direction. We're going to marinate the shrimp, without getting the tails wet. Spoon the prepared Pad Thai sauce over the shrimp, avoiding the tails. Let marinate for a few minutes.
- In the meantime, let's prepare to wrap and roll. Cover the defrosted spring roll wrappers with damp towel. Have your water + cornstarch ready. Place a shrimp on the wrapper, add a sprinkle of peanuts and basil and roll the shrimp up in the wrapper (see pictures for rolling instructions). Keep the wrapped Firecrackers under plastic wrap while wrapping the rest to prevent drying.
- When ready to cook, heat oil in wok, deep fryer or pot to 375F. Carefully slide a few Firecracker Shrimp into the hot oil and fry until golden brown, about 3 minutes. Drain.
