BAKED FISH WITH TOMATO-OLIVE SAUCE

- Preheat the oven to 425˚. Heat 1 tablespoon olive oil in a medium saucepan over medium-high heat. Add the onion and cilantro stems and cook, stirring, until softened, 3 to 4 minutes. Add the rice and stir to coat. Add 1 1/2 cups water, 1/2 teaspoon salt and a few grinds of pepper and bring to a boil. Cover and reduce the heat to low. Cook until the liquid is absorbed and the rice is tender, about 15 minutes. Remove from the heat and let stand, covered, 5 minutes. Fluff with a fork.
- Meanwhile, pour the tomatoes into a 9-by-13-inch baking dish and roughly crush them with your hands. Mix in the remaining 3 tablespoons olive oil, chopped cilantro, olives, garlic, 1/2 teaspoon salt and a few grinds of pepper. Chop 1 pickled jalapeño and stir it into the sauce. Season the fish with salt, pepper and the chili powder. Place skin-side down in the dish and spoon some of the sauce on top.
- Bake until the fish is cooked through and the sauce is bubbling, 15 to 20 minutes. Divide the rice and fish among plates. Serve with lime wedges and the remaining pickled jalapeños and carrots.

If you are looking for a different way to cook fish, you are going to love this easy one-dish fish and rice bake. Succulent white fish fillets are nestled on a bed of rice, and oven-baked in a spicy tomato sauce. Just put it in the oven and then relax while it cooks itself!

- Pre-heat the oven to 190°C / 375°F
- Peel the onions and chop into 1cm pieces.
- Cut the tomatoes and peppers into 1cm pieces
- Heat 2 tablespoons olive oil in a saucepan and saute the vegetables gently until the onions are translucent and the peppers have started to soften
- Make the stock by dissolving 1 vegetable stock cube in 1¼ cups of boiling water
- Add ½teaspoon chilli paste (or crushed chilli), ½ teaspoon salt, 1 teaspoon paprika and 2 tablespoons tomato puree to the stock and stir to combine
- Place the rice in a 7" x 9" baking dish
- Pour the stock over the rice
- Mix in the vegetables
- Submerge the fish in the stock/rice mixture
- Cover with a sheet of tinfoil
- Place in the pre-heated oven and bake for 30 minutes
- Remove from the oven and serve with rice and a fresh green salad

- In a large saucepan, combine the broth, rice, Italian seasoning and garlic powder, bring to a boil. Transfer to a greased 11x7-in. baking dish. Cover and bake at 375° for 10 minutes. Add the broccoli, Parmesan cheese and half of the onions. Top with fish fillets; sprinkle with paprika., Cover and bake 20-25 minutes longer or until the fish flakes easily with a fork. Uncover; sprinkle with cheddar cheese and remaining onions. Return to the oven for 3 minutes or until cheese is melted.

- Preheat oven to 375°F.
- Oil a baking pan.
- Season fish with salt and pepper and arrange in baking pan.
- Combine tomato sauce, wine and oregano and pour over fish.
- Cover with foil and bake 10-15 or until fillet centers turn opaque.
- Squeeze 1/2 lemon over the fish.
- Slice the other half into 4 wedges and serve with the fillets.

CATFISH IN SPICY TOMATO SAUCE
Steps:
- Put oven rack in middle position and preheat oven to 400°F.
- Purée tomatoes with their juice in a blender. Heat oil in a 12-inch heavy skillet over moderate heat until hot but not smoking, then cook garlic, spices, and 3/4 teaspoon salt, stirring, until garlic is golden, about 1 minute. Add tomato purée and sugar and briskly simmer, uncovered, stirring occasionally, until slightly thickened, 6 to 8 minutes.
- Pour sauce into a 13- by 9-inch baking dish. Pat fish dry and sprinkle with remaining 1/2 teaspoon salt. Arrange fillets in 1 layer on sauce, tucking each tail end under if necessary to fit, and bake until fish is just cooked through, 10 to 12 minutes. Serve sprinkled with parsley.
SPICY FISH BALLS IN TOMATO SAUCE
I adapted this one from a great cookbook called 'The Fish Cookbook'. A good all year round recipe, I like to serve this with roast potatoes and a green vegetable.

Steps:
- Wash the fish, pat dry with kitchen paper and cut into small pieces.
- Place into the bowl of a food processor with the coriander, salt, pepper, eggs, cream or yoghurt, half the breadcrumbs and the lemon juice and process for 45 seconds until the mixture is smooth and creamy.
- Chill the mixture for an hour.
- Whizz all the sauce ingredients together in a food processor or blender to make a smooth sauce.
- When you are ready to cook the fish balls, pre-heat the oven to gas mark 6, 400F (200C).
- Heat a little oil in a heavy frying pan.
- Using your hands, form the fish mixture into snooker sized balls, roll them in the remaining breadcrumbs and fry them gently, turning them occasionally until they are an even golden brown.
- Place the cooked fish balls in a shallow baking dish and pour over the sauce.
- Bake in the oven for 20 minutes until bubbling.

- Heat the olive oil in a large skillet. Saute the onion, tomatoes, bell pepper, jalapeno pepper and garlic until limp.
- Stir in the ginger, pepper, salt and cinnamon and saute for 3 minutes. Add the V8 juice and cook for 10 minutes, stirring often.
- Add the fish to the skillet. If there is not enough sauce, add just a little water or white wine. Cover and simmer for 8 - 12 minutes.
