A dill tartar sauce with so much more flavor than store bought varieties. A must-have for any fish dinner.

1 tablespoon capers
½ cup mayonnaise
1 tablespoon chopped fresh dill
1 tablespoon chopped dill pickle
1 tablespoon lemon juice
salt and ground black pepper to taste

Steps:

  • Rinse capers in a strainer, pressing them lightly to squeeze out the brine.
  • Mince capers and place in a bowl with mayonnaise, dill, dill pickle, lemon juice, salt, and pepper. Mix until well combined.
  • Let sit for flavors to melt for 30 minutes before serving.

  • Stir together the mayonnaise, egg, onion, relish, cayenne pepper, and seasoned salt in a bowl. Cover and chill until ready to serve.

FRIED FISH WITH DILL TARTAR SAUCE



Fried Fish with Dill Tartar Sauce image

1 cup mayonnaise (I prefer Duke's)
2 to 3 tablespoons chopped dill pickles
1 tablespoon capers
1 tablespoon lemon juice
2 teaspoons chopped fresh dill
1 teaspoon sugar
Kosher salt and freshly cracked black pepper
Canola oil, for frying
6 whiting fish fillets
Kosher salt and freshly cracked black pepper
1/2 cup cornmeal
1/2 cup all-purpose flour
1 tablespoon Cajun seasoning
Juice of 1 lemon

Steps:

  • For the dill tartar sauce: Mix the mayonnaise, pickles, capers, lemon juice, dill and sugar in a bowl. Taste and add salt and pepper to your liking.
  • For the fried fish: Heat 1 1/2 inches of oil in a deep skillet (I use cast iron) on medium heat until the oil reaches about 375 degrees F.
  • Clean the fish with cold water and dry just a tad; the fish should be a little wet to help the cornmeal mixture stick to it. Sprinkle a little salt and pepper on the fish. Add the cornmeal and flour to a paper bag. Sprinkle in the Cajun seasoning. Add the fish to the flour mixture and coat each piece evenly. Transfer the breaded fish to a plate or cutting board.
  • Lay the fish into the oil in batches and fry until they start to float and are golden brown, 3 to 4 minutes. Rest them on a rack to let the extra oil run off. Squeeze a little lemon juice on top. Serve with the tartar sauce.

It's hard to find store bought tartar sauce that doesn't taste icky sweet to me. A friend and I experimented until we came up with this. Now this is my favorite. Plan ahead because if let set at least a couple hours in the fridge before serving the flavor really matures.

1/2 tbsp. dehydrated minced onion
1/2 tbsp. dried parsley
1/2 tsp Seasoned Salt

1 teaspoon chopped pickled hot peppers
1 teaspoon chopped parsley
1 cup unseasoned mayonnaise, homemade if possible
Cider vinegar to taste
Salt to taste
Cayenne pepper to taste

Steps:

  • Add pickles, shallots, hot peppers and parsley to mayonnaise. Let stand at least an hour. The vegetables will season the mixture.
  • Adjust seasoning with vinegar, salt and cayenne.

3/4 cup panko breadcrumbs (Japanese bread crumbs)
1/3 cup unsweetened dessicated coconut flakes
1/2 lb shrimp, peeled, deveined, but leave tails intact (12 shrimp 21-30 count)
2 beaten eggs
2 teaspoons sugar
oil, for deep-frying
1/2 cup mayonnaise
1/2 tablespoon chili sauce (to taste)
1/2 tablespoon finely minced onion
1/2 tablespoon finely chopped celery
1 dash lemon juice

Steps:

  • Mix the panko and coconut flakes in a shallow bowl. In another shallow bowl beat the eggs and stir in the sugar. Set aside.
  • Prepare the Spicy Tartar Sauce by combining all the ingredients together. Stir to mix well. Set aside.
  • Heat up your deep fryer to 350°F.
  • Pat dry the shrimp with paper towels and dip each shrimp into the egg mixture, and immediately roll the shrimp in the panko and coconut flakes. Shake off the excess, place the shrimp on a plate lined with parchment paper.
  • When the deep fryer is ready, drop each shrimp gently into the oil, don't overcrowd. Fry until both sides turn golden brown, turn once to ensure even cooking. Transfer the shrimp out with a slotted spoon, onto a serving ware lined with paper towels.
  • Serve immediately with the Spicy Tartar Sauce.
