CHARRED CREAMED CORN

24 ounces frozen corn
2 tablespoons unsalted butter
1 shallot, finely diced
2 teaspoons smoked paprika
3 tablespoons all-purpose flour
1 1/2 cups whole milk
4 ounces cream cheese
2 tablespoons sugar
Kosher salt and freshly ground black pepper
2 tablespoons chopped fresh parsley, optional

Steps:

  • Preheat a cast-iron pan over medium-high heat. Add the corn and allow the corn to char, stirring just often enough so that the char marks are even and the bottom of the pan does not burn, until evenly charred all over, about 8 minutes. Remove from the heat and set aside.
  • Melt the butter in a medium skillet over medium heat. Add the shallot and saute until translucent, about 3 minutes. Add the smoked paprika and stir to combine. Add the flour and stir until combined evenly, then cook until the flour is cooked and the roux is blond, about 2 minutes. Add half the milk in a slow stream, whisking constantly, until combined. Then add the remaining milk in a slow stream and whisk constantly until smooth. Add the cream cheese and sugar and continue to whisk until smooth and thick, about 2 minutes. Add about 3/4 cup corn and smash into the cream mixture using a wooden spoon or spatula. Stir to combine, then fold in the remaining corn. Turn heat to low and allow to simmer gently until flavors are rich, about 10 minutes. Season with salt and pepper. Remove from the heat and garnish with parsley if desired.

When I make this recipe I put lots and lots of Parmesan cheese in it and I do not put it under the broiler. I even make it the night before serving. Excellent. This is from a wonderful restaurant in Fullerton, California who gives out the recipe on postcards. Everyone asks for the recipe when I bring it to dinners.

1 lb frozen kernel corn
12 ounces whipping cream
1 1/2 tablespoons melted butter
1 1/2 tablespoons flour
1/2 teaspoon salt
2 tablespoons sugar
1 pinch white pepper
3 tablespoons parmesan cheese

Steps:

  • Combine corn, cream, salt, sugar and white pepper in a pot and bring to a boil.
  • Simmer 5 minutes.
  • Make a roux from butter and flour, add to corn, mix well and remove from heat.
  • Transfer corn mixture to casserole.
  • Sprinkle with Parmesan cheese and brown under broiler.

2 Tbsp. flour
1/4 tsp. white pepper
2 cups half-and-half
2 tsp. sugar
2 pkg. (10 oz. each) frozen corn
1 tub (8 oz.) PHILADELPHIA Chipotle Cream Cheese Spread
1/2 cup POLLY-O Shaved Parmesan Cheese

Steps:

  • Heat broiler.
  • Melt butter in large saucepan on low heat. Add flour and pepper; mix well. Cook 2 min. or until bubbly, stirring constantly. Gradually stir in half-and-half, sugar and corn. Bring to boil on medium heat, stirring constantly; cook 3 to 5 min. or until thickened.
  • Whisk in cream cheese spread until melted. Pour mixture into 2-qt. baking dish sprayed with cooking spray; top with Parmesan.
  • Broil, 4 inches from heat, 5 min. or until cheese turns golden brown.

4 ears corn, kernels scraped from cob
2 large cloves garlic, finely chopped
Salt and freshly ground black pepper
1/2 cup heavy cream
Freshly grated nutmeg, to taste
2 bundles fresh farm spinach, about 1/2 pound trimmed weight, chopped

Steps:

  • Heat a large skillet over medium heat and add the butter. When the butter is hot, stir in the corn and the starchy liquid scraped from the cobs. Cook for 5 minutes, then stir in the garlic and season with salt and pepper, to taste. Cook for 2 to 3 minutes more, then add the cream and nutmeg, stirring occasionally, until very creamy, about 15 minutes. Add the spinach and stir until wilted. Season with salt and pepper, if needed. Transfer to a serving bowl and serve.

3 tablespoons unsalted butter, melted, plus more for the baking dish
6 to 8 ears of corn, kernels removed (about 4 cups) and juices scraped from the cobs and reserved
1 1/2 cups heavy cream
1/4 cup chopped pickled jalapenos
1 tablespoon sauce from canned chipotle in adobo
1/2 cup roughly chopped cilantro leaves
Kosher salt
1 cup crushed tortilla chips (about 2 1/4 ounces; crushed to pea-size)
1/3 cup all-purpose flour
1/2 teaspoon sugar
1/2 cup crumbled Cotija cheese (about 2 1/4 ounces)
Lime wedges, for serving

Steps:

  • Preheat the oven to 375 degrees F. Butter a 2-quart baking dish.
  • Toss the corn kernels with their juices and heavy cream together in a large bowl and mix to combine. Transfer 1 cup of the corn mixture to a food processor and puree until very smooth, then add back to the bowl. Fold in the jalapenos, chipotle sauce, 1/4 cup cilantro, and 1 1/2 teaspoons salt. Spread the corn mixture evenly into the prepared baking dish.
  • Mix the crushed tortilla chips, flour, sugar and 1/2 teaspoon salt in a medium bowl. Drizzle in the melted butter and toss together with a fork until clumps start to form. Sprinkle evenly over the corn filling.
  • Bake until the top is light golden brown and the corn filling is bubbling up the sides, 35 to 40 minutes. Let sit for 10 minutes. Sprinkle with the Cotija and remaining 1/4 cup cilantro. Serve with lime wedges on the side.

  • Grill corn to desired doneness, I like mine charred a little. And cut from cob.
  • Melt butter in skillet and brown onion, bell pepper, jalapeno and half of basil.

6 bacon slices, chopped
1/3 cup all purpose flour
1 large red onion, thinly sliced into rounds
1/2 cup (or more) vegetable oil
10 green onions, chopped
2 tablespoons (1/4 stick) butter
1 large onion, chopped
8 cups frozen corn kernels (about 2 pounds 6 ounces)
2 cups whole milk
1 cup whipping cream
3 tablespoons quick-cooking grits
1/4 teaspoon cayenne pepper
1 cup (packed) coarsely grated Monterey Jack cheese (about 4 ounces)

Steps:

  • Preheat oven to 350°F. Spread breadcrumbs on rimmed baking sheet. Bake until lightly toasted, about 10 minutes.
  • Sauté bacon in large skillet over medium heat until crisp. Using slotted spoon, transfer bacon to paper towels. Transfer 2 tablespoons bacon drippings to heavy large pot; reserve for creamed corn. Discard remaining drippings.
  • Place flour in medium bowl. Sprinkle with salt and pepper. Separate red onion slices into rings and toss in flour to coat lightly. Heat 1/2 cup oil in same large skillet over medium-high heat. Working in batches, add onion rings to skillet and cook until golden brown, adding more oil as needed, about 2 minutes per side. Transfer onion rings to paper towels. Mix breadcrumbs, bacon, onion rings, and half of green onions in clean medium bowl. Sprinkle topping with salt and pepper.
  • Butter 13x9x2-inch glass baking dish. Add butter to pot with reserved bacon drippings; melt over medium-high heat. Add chopped onion; sauté until light golden and beginning to soften, about 6 minutes. Add frozen corn; sauté 5 minutes. Add milk and cream; bring to boil. Gradually stir in grits and cayenne pepper. Reduce heat and simmer until mixture thickens slightly, about 3 minutes. Remove from heat. Stir in cheese and remaining green onions. Season with salt and pepper. Transfer creamed corn to prepared dish. (Topping and corn can be made 1 day ahead. Cover separately and chill.)
  • Preheat oven to 350°F. Bake gratin uncovered 25 minutes. Sprinkle topping over; bake until topping is slightly crisp and creamed corn thickens and is heated through, about 20 minutes longer.
