2 tablespoons Cabot Unsalted Butter 2 tablespoons King Arthur All-Purpose Flour 1¼ cups fat-free or regular milk ¼ teaspoon salt ¼ teaspoon pepper (white pepper if desired) ¼ teaspoon garlic powder 6 ounces of Cabot Habanero Cheddar
shredded (about 1½ cups) 1½ teaspoons smoked paprika

Steps:

  • MELT butter in a medium saucepan over medium heat. Add flour, and stir to make a roux. WHISK in milk, and whisk until smooth, scraping roux out of the corners of the saucepan with a heat-proof spatula if necessary. Add salt, pepper and garlic powder and increase heat to medium high. Bring to a simmer, stirring constantly until the mixture thickens, 2 to 4 minutes. REMOVE from heat and stir in cheese and smoked paprika. Stir until smooth. Try this over mashed potatoes and pork chops. *To make a less fiery version of this sauce, try using ¾ cup of Habanero Cheddar and ¾ cup of Seriously Sharp Cheddar.

500ml milk
4 tbsp plain flour
50g butter
100g grated strong cheddar (or 50g grated cheddar, 50g crumbled blue cheese)

Steps:

  • Pour 500ml milk into a large saucepan and add 4 tbsp plain flour and 50g butter.
  • Turn on the heat to medium and start to whisk the mixture. Keep whisking fast as the butter melts and the mixture comes to the boil - the flour will disappear and the sauce will begin to thicken.
  • Whisk for another 2 mins while the sauce bubbles then stir in 100g grated strong cheddar cheese (or 50g grated cheddar, 50g crumbled blue cheese) until melted.

  • Melt butter in a saucepan over low heat. Blend in flour and cook until mixture is smooth and bubbly, 2 to 3 minutes. The chopped cheese sandwich originated in New York City. It is not spicy and is traditionally made on a flat top grill. I do not have a flat top and also wanted to incorporate some heat so here is my not so traditional version.

1 tablespoon butter
¼ cup chopped onions
12 ounces lean ground beef
1 tablespoon Sriracha sauce
salt and freshly ground black pepper to taste
3 slices American cheese
2 hoagie buns, split and toasted
1 cup shredded lettuce
1 roma tomato, thinly sliced

Steps:

  • Melt butter in a small skillet over medium-high heat. Add onions and cook until onions are soft and starting to caramelize, about 5 minutes. Remove from heat and set aside.
  • In a large bowl combine ground beef and Sriracha sauce. Mix well unto Sriracha is evenly distributed. Form mixture into two patties and season with salt and pepper.
  • Heat a large cast iron skillet over medium-high heat. Add hamburger patties and cook 5 minutes or until a crust forms on the bottom. Flip patties over and cook 3 minutes.
  • Using a wide spatula, break patties up into large pieces. Sprinkle cooked onion in between the spaces of the hamburger pieces. Layer cheese over the beef, and cook 2 minutes or until cheese is melted.
  • Divide meat mixture evenly between the toasted hoagie rolls. Top each with shredded lettuce and sliced tomato.

Three 8-ounce packages cream cheese, softened
3 cups shredded aged Cheddar
1 cup grated romano
3/4 cup sour cream
1 teaspoon hot sauce
1 teaspoon Worcestershire sauce
Salt and freshly ground black pepper

3 cups toasted pecans, finely chopped in a food processor
1 cup dried cranberries, chopped in a food processor
Sriracha sauce
Chips, veggies or hunks of crusty French bread, for serving

Steps:

  • Combine the cream cheese, Cheddar, romano, sour cream, hot sauce and Worcestershire in a bowl. Using a handheld mixer, whip until combined. Adjust the seasoning with salt and pepper if necessary.
  • Plop the cheese mixture onto a parchment-lined baking sheet and cover in plastic wrap. Using your hands, mold the cheese into a football shape. Remove the plastic, cover evenly with the nuts and cranberries and, using Sriracha, draw football laces on top. Set in the fridge for at least 30 minutes to firm up.
  • Serve with chips, veggies or hunks of crusty French bread.

2 slices sourdough bread
2 tablespoons mayonnaise
1 cup Jalapeno Pimento Cheese, recipe follows
4 ounces cream cheese, softened
1/2 cup mayonnaise
2 tablespoons adobo sauce from canned chipotles
1 tablespoon Dijon mustard
1/2 teaspoon freshly ground black pepper
Pinch of cayenne or dash of hot sauce
Pinch kosher salt
2 cups grated sharp Cheddar
2 cups grated smoked Gouda
4 ounces sliced pimentos
1/2 cup jarred sliced jalapenos, finely chopped
2 teaspoons chopped fresh dill
Crackers, for serving
1 cup Castelvetrano olives, for serving

Steps:

  • Heat a nonstick skillet over medium heat. Spread each slice of bread with 1 tablespoon of the mayonnaise. Place one piece of bread, mayonnaise-side down, into the skillet. Top with the Jalapeno Pimento Cheese. Place the second slice of bread, mayonnaise-side up, onto the cheese. Using a spatula, press together and cook until golden, about 2 minutes per side. Slice and serve.
  • Combine the cream cheese, mayonnaise, adobo sauce, Dijon mustard, black pepper, cayenne or hot sauce and salt in the bowl of a food processor. Process until combined. Add almost all of the Cheddar and Gouda, reserving about 2 tablespoons of each in a bowl, and pulse until well combined again. Add the contents of the blender to the reserved cheese and stir to combine. Fold in the pimentos, jalapenos and dill, then chill before serving.
  • Serve as a dip with crackers and olives.

1/3 cup buttermilk
1/2 cup cornmeal
1/2 cup dry breadcrumbs
1/2 teaspoon salt
2 teaspoons paprika
1 tablespoon chili powder
1 tablespoon garlic powder
1/3 cup ricotta cheese
1/3 cup cottage cheese
1/4 cup plain yogurt
1 tablespoon crumbled blue cheese
1 tablespoon minced green onion
salt and pepper

Steps:

  • Cut chicken into strips.
  • Put chicken and buttermilk in plastic bag.
  • Shake well, refrigerate for 15 minutes.
  • Heat oven to 400°.
  • Line a lg baking sheet with foil.
  • Put dry ingredients in another plastic bag.
  • Add chicken, shake to coat well.
  • Place chicken on baking sheet.
  • Spray the chicken with cooking spray.
  • Bake for 30 minutes, until chicken is done and crisp.
  • Sauce: In blender, puree the riccota, cottage cheese, yogurt and half the blue cheese.
  • Stir in the remaining blue cheese and the onions.
