- Heat a large skillet over medium-high heat. Cook and stir sausage and beef in the hot skillet until browned and crumbly, 7 to 10 minutes; drain and discard grease.
- Stir diced tomatoes, onion, tomato paste, vinegar, chili powder, salt, and red pepper flakes into the sausage mixture; add cabbage and fold into the mixture. Reduce heat to medium-low and cook, stirring occasionally, until the cabbage is tender, 20 to 25 minutes.

I threw this together one night when I was craving a Cajun chicken pasta dish I used to make. I've missed it since going low-carb. This dish was a perfect substitute! Great texture and a very, very mild vegetable flavor. Mostly just Cajun yumminess! Adjust the spices to your taste.

Steps:
- Combine chili powder, thyme, smoked paprika, oregano, cayenne pepper, cumin, onion powder, and salt in a bowl.
- Melt butter in a large skillet over medium heat; cook and stir onion in hot butter until translucent, about 5 minutes. Add garlic and cook until soft, about 2 minutes; stir shredded cabbage into onion and garlic. Cook and stir cabbage mixture until cabbage starts to soften, about 5 more minutes.
- Stir spices into cabbage mixture and cook, stirring often, until spices are evenly mixed in and cabbage is tender, 3 more minutes.

- Cook cabbage in boiling water just until outer leaves pull away easily from head. Set aside 10 large leaves for rolls. (Refrigerate remaining cabbage for another use.) Meanwhile, in a large bowl, combine the barley, garlic, onion, soy sauce, ketchup, brown sugar, ginger, salt and pepper. Crumble pork over mixture and mix well. , Cut out the thick vein from the bottom of each leaf, making a V-shaped cut. Place about 1/2 cup pork mixture on a cabbage leaf; overlap cut ends of leaf. Fold in sides. Beginning from the cut end, roll up. Repeat. Place rolls, seam side down in a greased 13-in. x 9-in. baking dish. , In a small saucepan over medium heat, combine the sauce ingredients; cook and stir until smooth. Pour over rolls. Cover and bake at 350° for 80-90 minutes or a thermometer reads 160°.

- Preheat oven to 350 degrees F. Lightly grease a 2-quart casserole dish.
- Coarsely chop the cabbage. Melt butter in a large nonstick pan. Add cabbage and onion and cook 8 to 10 minutes, stirring frequently, or until it is partially cooked down. Season to taste with salt and pepper.
- Transfer cabbage mixture to prepared baking dish.
- In a small bowl, stir together soup and mayonnaise. Spread mixture over cabbage.
- In a bowl, stir together melted butter, cheese, and cracker crumbs. Sprinkle over casserole.
- Bake for 30 minutes or until topping is browned.

EASY CABBAGE CASSEROLE - TASTES LIKE CABBAGE ROLLS
This is a great recession meal. Very inexpensive yet HEALTHY and filling! You just do not find that very often. So many recipes that are quick and easy... one pan wonders... etc.. are high in fat and calories and lack much nutrition. I like to hide more veggies in here too! Think carrots, celery, etc,, grated, diced, chopped whatever. If you like spicy foods try Hot & Spicy V8 here and you can even add some cayenne if you like. There is just something we like about spicy mixed with sweet- so the hint of sweetness in the sauce is fantastic. At my house, whoever finds the bay leaf is the lucky one! Just do not eat it Hope you enjoy this comforting casserole!

- Saute onion and garlic in a large skillet for about a minute. Add meat and cook, stirring often, until meat is no longer pink. Drain well and let cool to room temperature. When meat has cooled add egg, milk and rice.
- Meanwhile, remove tough outer leaves from cabbage & remove core. Shred cabbage if not using a bag of shredded cabbage. Saute the cabbage in the same skillet used before.
- In a large bowl mix all the sauce ingredients together. Place some of this mixture in the bottom of a sprayed 10x13 casserole dish so you have a nice layer of sauce. Try not to use more than half though.
- Layer half the cabbage on top of the sauce. Layer all the meat on top of the cabbage. Top with remaining cabbage and then finish by pouring all the remaining sauce on top.
- Bake at 350 degrees F for 30 minutes or until everything is hot and bubbly.
- Garnish with a dollop of sour cream if desired. Remember- whoever finds the bay leaf is the lucky one! Just do not eat it!

- Preheat the oven to 160 ºC (325 ºF).
- Spray a fairly large ovenproof dish with non-stick spray.
- Fry the beef cubes in oil until golden brown.
- Season with salt and black pepper to taste.
- Transfer to the dish.
- Fry the onions in a little oil until soft and translucent.
- Add the tomatoes.
- Season with sugar, cinnamon, ginger and turmeric and stir-fry for a few minutes Add to the meat and mix.
- Mix all the ingredients for the sauce and pour over the meat mixture.
- Mix, cover and bake in an ovenfor about 1 1/2 to 2 hours or until the meat is tender.

- Preheat oven to 350°F. Coat an 8-inch-square baking dish with cooking spray. Melt 2 tablespoons butter in a large Dutch oven over medium-high heat. Add cabbage, onion and celery; stir to coat well. Cover and cook, stirring occasionally, until the cabbage is tender-crisp, 15 to 18 minutes.
