LAYERED BUFFALO CHICKEN DIP
This dip starts out warm, rich and spicy. Then it's topped with cool crunchy vegetables, tangy blue cheese dressing and bacon for a salty hit. Scoop it out with a spoon so you can get all of the layers in one bite.

- Preheat the oven to 350 degrees F.
- Combine the sour cream, hot sauce, milk and cream cheese in a food processor and process until smooth. Toss the chicken and hot sauce mixture together in a bowl and spread with a spatula in the bottom of a glass 8-inch square baking dish. Cover the baking dish with foil and bake until warmed through, 25 to 30 minutes.
- Meanwhile, heat the oil in a large nonstick skillet. Add the bacon and cook over medium heat, turning a few times, until evenly browned, 7 to 8 minutes. Transfer the bacon to a paper towel-lined plate to drain; let cool, then crumble.
- Let the baking dish sit at room temperature, 10 minutes. Uncover the baking dish and scatter over the celery, then the lettuce, then the carrots. Drizzle with the blue cheese dressing and sprinkle with the bacon and scallions. Serve with the tortilla chips.
SPICY CHEESE DIP
Steps:
- Puree stewed tomato juice only, garlic and 2 jalapenos in a blender or processor. Finely chop the onion, 1 jalapeno, 2 to 3 tablespoons of cilantro and 4 to 6 Roma tomatoes. Roughly chop the stewed tomatoes. Mix all these ingredients in a large bowl. Season with kosher salt, fresh ground pepper and lime juice.;
- Cook the ground beef, onion, jalapenos, garlic and dash of salt and pepper. Drain excess fat in a small bowl. Add the beef mixture to slow cooker and put on medium setting. Keep hot. Add cubes of cheese, cream of mushroom soup and milk and stir. Next add 2 cups of the salsa mixture to the cheese mixture. Can be kept warm for 1/2 hour or longer. Serve with chips.
HOMEMADE BBQ CHIPS AND BLUE CHEESE DIP

- Preheat the oven to 300 degrees F.
- For the dip: To a food processor, add the shallots, blue cheese, sour cream, and season with salt and pepper, to taste. Process to combine and pour into a serving dish. Garnish with more pepper and chives.
- For the chips: To a small bowl, add all the spices and toss to combine. Add the potato chips and the spice mix to a big brown bag and toss to combine. Pour out onto a baking sheet and place into the oven to warm through, about 5 minutes.
- When ready to serve, place into a serving dish and serve with Blue Cheese Dip.
BLUE CHEESE DIP
This is the dip recipe that goes with the Spicy Buffalo Onion rings from Zoom in Park City, UT. It truly is the perfect companion to the onion rings, but it was really good with raw veggies too.

BUFFALO ONION RINGS
From Zoom restaurant in Park City, Utah. I made this and they were so good and so addictive. It makes a LOT of onion rings, but they went fast.

Steps:
- Fill a large heavy saucepan with 2 to 3 inches of cooking oil and heat over medium-high heat.
- The oil temperature should be at 350 degrees F when you start frying.
- In a large bowl, mix the eggs and milk; then add the flour and baking powder and mix thoroughly with a hand-held mixer.
- Strain the mixture to remove any lumps.
- Add more milk if you want a thinner crust.
- In a small bowl, mix the Cajun spice mix, cayenne pepper, white pepper, black pepper, dry mustard, and salt.
- Add this spice mixture to the batter.
- Cut the onions into thick slabs, dunk them in the batter, and fry them, in batches, in the oil until golden brown.
- Serve the onion rings with Blue Cheese Dip, or dressing.
