SINIGANG NA SALMON RECIPE

Sinigang is a soup or stew, usually cook with meat or seafood by boiling it with a sour base such as Tamarind, Guava, Calamansi, Kamias, Santol or Unripe Mango. It is a common dish of the Filipino culture.

1 Kilo Salmon (Belly or Head)
1 Tbsp. oil
1 small onion, peeled and sliced
1 to 2 cloves garlic, peeled and minced
2 medium tomatoes, chopped
1 Tbsp. fish sauce
4 cups water
2 cups kamias
1 banana chili
1 6-inch labanos (daikon radish), peeled and cut into chunks
½ bunch long beans (sitaw), ends trimmed and cut into 3-inch lengths
1 bunch bok choy
salt to taste

Steps:

  • In a pan, heat oil over medium heat.
  • Add onions and garlic and saute until soft.
  • Add tomatoes and saute until soft.
  • Add fish sauce and continue to cook for about 2 to 3 minutes.
  • Add water and bring to a boil.
  • Add kamias and banana chili.
  • Add radish and cook for about 2 to 3 minutes.
  • Add long beans and cook for another 1 to 2 minutes.
  • When vegetables are tender yet crisp, add salmon and continue to cook for about 5 to 7 minutes or until fish changes color and flakes easily.
  • Add bok choy and cook for another 1 to 2 minutes. Season with salt to taste. Serve hot.

How to make Sinigang! This Filipino Sour Soup with Salmon is bursting with umami flavor. Quick to throw together, loaded with veggies and completely delicious. Serve with rice if desired. Vegan adaptable and gluten free.

1 tablespoon coconut oil
1 small red onion, sliced
4 garlic cloves, finely chopped
2 teaspoons grated ginger
2 tablespoons tamarind puree (I used Glory Bee Organic)
2 tablespoons fish sauce
4 cups vegetable stock or water
1 1/2 cups eggplant cut into chunks
1 serrano chili
12 ounces fresh salmon filets, cut into large chunks (see notes on optional pre-searing if desired)
2 heads baby Bok Choy or 2 cups of greens; napa cabbage, spinach, Mizuna
1 cup fresh tomatoes (cherry tomatoes are nice), chopped
1 tablespoon white miso mixed with 1/4 cup water

Steps:

  • Saute' onion, garlic and ginger in coconut oil for 2 minutes.
  • Add broth, tamarind, fish sauce, eggplant and serrano chili. Bring to a low simmer for 10 minutes, or until eggplant is tender.
  • Add salmon (see notes), tomatoes and Bok Choy (if substituting spinach, wait and add just before serving), cook another 5 minutes or until salmon is just cooked through. Add miso water mixture.
  • Garnish and serve with rice if desired.

This is a very simple recipe I learned from a friend. Creamy yet tangy and sour it's best served with a side of white rice and garnished with lemon. The seasoning is derived from a soup mix that you can find at almost any oriental market.

1 (1 lb) salmon fillets or 2 (1/2 lb) salmon steak
mayonnaise
sinagang soup mix (Tamarind Soup Mix)
lemon (to garnish)

Steps:

  • Preheat the oven to 375°F.
  • Spread a thin layer of mayo over salmon.
  • Sprinkle Sinagang Soup Mix (Tamarind Soup Mix) over mayo (less is more).
  • Bake in oven for 20-25 minutes until fish is flaky and the top is slightly browned and bubbling.
