½ cup Buffalo-style hot pepper sauce

2 cups chopped rotisserie chicken

Steps:

  • Preheat the oven to 375 degrees F.
  • Add the cream cheese, milk, wing sauce, and chicken base to a medium sized mixing bowl. Stir to incorporate. Add the chicken and mix well.
  • Spread the chicken mixture into an 11x7-inch baking dish. Sprinkle the chicken with the cracker crumbs. Place the baking dish directly into the oven and bake for 15 to 20 minutes or until the cracker crumbs are golden brown.
  • Carefully remove the baking dish from the oven and let cool for 5 minutes. Serve immediately with crackers or vegetables.

2 tablespoons butter
2 tablespoons olive oil
2 chicken breasts, cubed
1 small onion, diced
2 cloves garlic, minced
¾ cup heavy cream
½ cup Buffalo wing sauce (such as Frank's RedHot®)
½ cup shredded mozzarella cheese
½ cup shredded Gouda cheese
1 teaspoon potato starch
1 cup panko bread crumbs
3 tablespoons melted butter
¼ cup shredded Colby-Monterey Jack cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine at a boil until tender yet firm to the bite, about 8 minutes. Drain, rinse, and set aside.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease a baking pan.
  • Melt 2 tablespoons butter and warm olive oil together in medium saucepan over medium-high heat. Add cubed chicken, onion, and garlic and cook until chicken is heated through, 2 to 4 minutes. Pour in cream and buffalo sauce. Mix well and heat through.

6 tablespoons hot pepper sauce
⅓ cup olive oil
2 tablespoons garlic powder

2 pounds skinless, boneless chicken breast halves, cut into 1/2-inch cubes

Steps:

  • Preheat oven to 500 degrees F (260 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Heat hot pepper sauce, olive oil, garlic powder, black pepper, paprika, and salt in a large skillet over low heat, stirring until thoroughly combined. Turn off heat. Toss potatoes in batches with the hot pepper sauce mixture to coat and use a slotted spoon to transfer potatoes to the prepared baking dish. Leave remaining sauce in skillet. Nonstick cooking spray, for the baking sheet and football pan
2 slices provolone cheese
Two 11-ounce tubes refrigerated thin-crust pizza dough
1/2 cup Buffalo wing sauce
1/2 rotisserie chicken, skin and bones discarded, meat shredded
3 cups grated Swiss or mozzarella cheese
3 scallions, white and light green parts only, thinly sliced
1/2 cup crumbled blue cheese
Olive oil, for drizzling
Garlic salt, for sprinkling
Ranch dressing, for serving
Celery sticks, for serving

Steps:

  • Preheat the oven to 425 degrees F. Spray a baking sheet with nonstick cooking spray. Measure the imprinted stitching on an approximately 12-by-8-inch football-shaped baking pan and cut the provolone into 2 long strips and 7 shorter strips to imitate; set aside. Spray the football pan with the cooking spray.
  • Unroll 1 tube of dough and cut in half widthwise. Bake one of the halves on the prepared baking sheet until lightly done, about 8 minutes. (Reserve the other half of the dough.) Use a knife or kitchen shears to cut the baked dough into a football shape slightly smaller than the pan.
  • In a medium bowl, toss together the Buffalo sauce and shredded chicken.
  • Unroll the remaining tube of dough and drape into the prepared football pan, letting the extra dough hang over the sides. Fill with half of the chicken mixture, half of the grated Swiss or mozzarella and half of the scallions. Top with the football-shaped crust. Add the remaining chicken mixture, grated cheese and scallions. Add the blue cheese. Top with the reserved uncooked dough half. Use a knife to trim the excess edges of dough, leaving a little extra to pinch the 2 edges of dough together. Put the pan on a baking sheet.
  • Bake until the crust is just beginning to brown, about 15 minutes. Remove from the oven and invert the football pan onto the baking sheet to unmold the calzone. Drizzle the crust with olive oil and sprinkle with garlic salt. Continue to bake until golden brown, 5 to 10 minutes. Arrange the strips of provolone to mimic the football stitching; the heat of the calzone will slightly melt the cheese and adhere it to the football. Let stand 5 minutes.
  • Slice and serve with ranch dressing for dipping, and celery sticks on the side.

1 stick (8 tablespoons) unsalted butter, at room temperature, plus more for the baking dish
1 rotisserie chicken, shredded (about 4 cups)
1 pound grated Monterey Jack cheese (about 4 cups)
2 cups mild red enchilada sauce
3/4 cup hot sauce, preferably Frank's Red Hot
Eight 10-inch flour tortillas
1/2 head iceberg lettuce, finely shredded
1/2 cup Ranch Dressing, recipe follows
1/2 cup blue cheese crumbles
1 cup mayonnaise
1/2 cup buttermilk
2 tablespoons minced fresh chives
2 tablespoons minced fresh flat-leaf parsley
1/4 teaspoon garlic powder
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch baking dish.
  • Add the chicken and 2 1/2 cups of the Monterey Jack cheese to a large bowl and toss together. Set aside.
  • Heat the butter, enchilada sauce and hot sauce and in a small saucepan over medium heat until the butter melts. Remove from the heat. Transfer 1 cup of the sauce to the bowl with the chicken. Toss to fully coat.
  • Ladle 1/2 cup of the sauce into the bottom of the prepared baking dish. Spread a heaping 1/2 cup of the chicken mixture evenly onto a tortilla, then roll it up. If you'd like, trim the round ends of the tortilla that are unfilled and reserve for another use. Cut the rolled tortilla into 6 pinwheels. Place each pinwheel cut-side down in the baking dish. Repeat with the remaining tortillas and chicken mixture. Pour the remaining sauce over the tortillas and sprinkle the remaining Monterey Jack cheese on top.
  • Bake until the cheese is melted and bubbling, 15 to 20 minutes.
  • Meanwhile, toss the lettuce with the ranch dressing in a large bowl.
  • Sprinkle the blue cheese crumbles on top of the enchiladas. Serve immediately with the salad.
  • Combine the mayonnaise, buttermilk, chives, parsley, garlic powder, 1/4 teaspoon salt and 1/4 teaspoon pepper in a medium bowl. Refrigerate until ready to serve.

1/4 pound blue cheese
Kosher salt
Freshly ground black pepper
2 tablespoons olive oil
1 stick unsalted butter
2 tablespoons hot sauce (recommended: Frank's Hot Sauce)
2 tablespoons white vinegar
Celery, sliced thin, to serve

Steps:

  • Heat the oven to 350 degrees F.
  • Using a sharp knife, cut a pocket into each chicken breast. Stuff 1/4 of the blue cheese into each breast. Secure the openings with toothpicks and season with salt and pepper. Heat the oil in a nonstick, oven-proof skillet over medium heat and sear the chicken on both sides until browned, about 3 to 4 minutes per side. Put the chicken into the oven until it is cooked through, about 8 to 10 minutes.
  • In a small pot, add the butter, hot sauce, and white vinegar and cook over medium heat until bubbling. Pour half the sauce over the hot chicken and cook over medium heat for 1 minute. Remove the toothpicks and serve with extra sauce garnished with sliced celery.

1 teaspoon paprika
1 teaspoon salt
2 tablespoons butter, melted
1 tablespoon hot pepper sauce, like tabasco
1 tablespoon apple cider vinegar

Steps:

  • Preheat oven to 350 degrees.
  • Sprinkle chicken with salt and paprika. Place on rack in a roasting pan.
  • Chicken should roast for 2 to 2 1/2 hours until a meat thermometer registers 180 degrees when inserted in the thickest part of the thigh. Avoid touching the thigh bone when checking the temperature.

2/3 cup franks red hot pepper sauce
1 tablespoon cooking oil
4 boneless skinless chicken breast halves
1/4 cup ranch dressing or 1/4 cup bleu cheese salad dressing
1 cup shredded lettuce

4 10-inch flour tortillas (warmed)
1 teaspoon garlic powder, to taste

Steps:

  • Pre season chicken with garlic powder, salt and black pepper to taste.
  • Combine 1/3 cup of hot sauce and 1 tbsp of cooking oil in a large plastic storage bag.
  • Add the chicken and shake a bit to ensure chicken is evenly coated with marinade.
  • Marinade chicken at least 30 minutes.
  • Grill chicken until done.
  • Slice chicken into strips.
  • Place chicken in bowl and add 1/3 cup of hot sauce and dressing and cheese, mix well.
  • Place chicken mixture and lettuce down the center of the tortilla.
  • Roll tortilla in same fashion as a burrito.
  • Cut in half.

I like the inclusion of crispy carrots and celery to this sandwich -- a good way to get some extra veggies! This recipe includes the usual blue cheese dressing, which I personally do not like, so I would substitute ranch dressing, and shredded parmesan or swiss cheese for the blue cheese crumbles. You can also used grilled or roasted chicken strips to avoid the 'fried stuff' -- still delicious.
