2 cups frozen tater tots, optional
8 flour tortillas, burrito size
1 pound spicy ground sausage
12 eggs
2 cups shredded cheese, Mexican blend
1/2 cup salsa

Steps:

  • Make tater tots according to package directions, if using.
  • In a large skillet, cook sausage until crumbly and fully cooked. Remove cooked sausage and set aside.
  • In the same pan, scramble eggs and add salsa at the end and fully combine.
  • In a large bowl, combine egg/salsa mixture, cheese, sausage and mix together. Then fold in the cooked tater tots.
  • Divide equally among the 8 tortillas. Fold ends of tortillas in then roll to close. Wrap individually in aluminum foil that has been sprayed with non-stick spray and freeze.
  • Move from freezer to refrigerator the day before planning on eating.
  • Heat camp oven to 325 degrees or start camp grill or campfire. Heat for 20 minutes or until heated through.

My husband grew up in Mexico and prefers his food extra spicy. Special seasonings added to ordinary ground pork give a little life to standard sausage and eggs.

2 tablespoons vinegar
1 tablespoon chili powder
1 teaspoon dried oregano
1 teaspoon salt
1 garlic clove, minced
1 pound ground pork
6 eggs
1/4 cup milk
1 tablespoon vegetable oil
6 flour tortillas (8 inches), warmed
Taco sauce

Steps:

  • In a large bowl, combine the vinegar, chili powder, oregano, salt and garlic; crumble pork over mixture and mix well. Cover and chill overnight. , In a large skillet, cook pork mixture over medium heat until meat is no longer pink. Drain; set aside and keep warm. In a large bowl, whisk eggs and milk. In a another large skillet, heat oil until hot. Add egg mixture; cook and stir over medium heat until eggs are completely set. , Spoon about 1/4 cup pork mixture and 1/4 cup egg mixture down the center of each tortilla. Top with taco sauce and roll up.

Steps:

  • Assemble the burritos by microwaving the flour tortilla for 20 seconds, and begin to layer burrito starting with hash browns, followed by scrambled eggs, cooked breakfast sausage, and cheese.
  • Fold in the left and right sides of the tortilla and roll it up from the bottom, tucking the bottom edge under the filling. Wrap in parchment paper and label. Freeze up to 1 month.
  • To reheat from frozen, wrap the burrito in a damp paper towel and microwave for 2-3 minutes, flipping halfway or until the center is hot. Let stand 1 minute before eating.

1 tablespoon vegetable oil
2 cups diced potatoes (or substitute with cubed hash browns)
1/2 pound chorizo sausage
2 tablespoons unsalted butter (divided)
1/2 cup white onion (diced)
1 tablespoon jalapeños (fresh or pickled)
4 large eggs (beaten)
salt and pepper (to taste)
4 flour tortillas (large)
8 ounces Monterey Jack cheese (shredded)

Steps:

  • Heat a large skillet over medium heat. Add the oil, and potatoes in an even layer. Allow the potatoes to cook for 4 to 5 minutes undisturbed before using a spatula to flip. If they aren't crispy enough, cook for a few more minutes before turning. Continue cooking until the potatoes reach the desired consistency then remove from the pan. Set aside.
  • Adjust the heat to low to medium, and add the chorizo to the pan. Break up the sausage as it cooks, and cook until no raw pieces remain, about 7 to 8 minutes. Remove the chorizo to a waiting paper towel lined plate. Wipe any excess grease from the pan.
  • Keep the pan on low heat, and add 1 tablespoon of butter, onion, and jalapenos. Cook for 3 to 4 minutes or until the onions and jalapenos begin to soften. Pour in the eggs, salt, and pepper and use a wooden spoon or spatula to scramble with onions and jalapenos. Continue to scramble for 4 to 5 minutes or until the eggs are cooked through. Remove from the pan and wipe away any residual residue.
  • Take one tortilla and place ¼ of the potatoes in the center. Next to the potatoes, place ¼ of the chorizo and ¼ of the eggs. Top the ingredients with 2 ounces of shredded cheese. Roll the tortilla and tuck in both ends, so they're secure inside the burrito.
  • Optional Step: Melt half a tablespoon of butter in the hot pan, and add the burrito seam side down. Cook until browned then flip to the opposite side and cook until browned. Remove from the pan. Repeat with remaining tortillas and filling.
  • Serve hot. Refrigerate any leftovers for up to 3 days.

These are heavenly. I used extra jalapenos and a lot more cilantro than the recipe calls for because I don't think you can have enough cilantro, but I'll post the recipe as written. I skipped the cheese, sour cream, and salsa and still really loved this. I don't know why I never thought about making eggs with beans before--I'd pick this over sausage or bacon most days of the week. Serving size is estimated. YUM!

8 eggs
1 jalapeno pepper, minced
2 tablespoons water
salt, to taste

2 hatch chili peppers (roasted and chopped or use bell pepper)
8 slices bacon (cut into 1" pieces)
1 medium sweet onion (chopped)
1 cup Mexican cheese
8 large eggs
1 ½ tsp kosher salt (divided)
4 tbsp cilantro (chopped)
1 avocado (pitted and sliced)
1 tomato (chopped, optional)

Steps:

  • Preheat the pan to medium heat, add bacon and cook until crispy, about 3 mins. Remove bacon to a plate. Save bacon fat, remove 2 tablespoons of bacon fat for eggs.
  • In the remaining bacon fat, sauté the onions and ½ teaspoon of salt until translucent, about 3 mins. Add hatch chilies and cook for another 2 mins.
  • In a bowl add eggs, 1 teaspoon of salt, and 4 tablespoons of cold water, whisk until frothy. Add eggs to a pan with remaining bacon fat or use some butter to cook on low heat.
  • Add cheese to the eggs halfway while cooking. Using a rubber spatula, slowly scrape the pan across, back and forth, repeat this until the eggs are nice and fluffy and cheese is melted.
  • To assemble the burritos, add eggs to the shells, then bacon, onion, and hatch chilies, avocado, tomatoes, and cilantro.
  • Tightly wrap the burritos closed.

These simple black bean burritos are packed with my favourite Tex-Mex flavours, and they can be easily adapted to suit your preferences.

1 tbsp oil
1/2 onion, (sliced or diced)
400 g tin black beans, (drained (240g, or ~ 1 1/4 cups, when drained))
2 cloves garlic, (minced)
1 tbsp hot sauce
2 tsp smoked paprika
1/2 tsp ground cumin
Salt
Black pepper
1 medium tomato, (diced)
200 g (~ 1 cup) cooked rice (I used leftover white rice)
4 large flour tortillas
Your choice of additional fillings: grated cheese (lettuce, sour cream, etc. (see blog post for more ideas))

Steps:

  • Heat a dash of oil in a saucepan, and add the onion. Cook over a medium heat for a few minutes, until it is fairly soft. Add the next 7 ingredients (black beans through black pepper), and cook for a further 5 minutes, adding a small splash of water if necessary. Next, add the diced tomato, and cook for just a few minutes more, until the tomato has softened, but is still holding its shape.
  • Add the cooked rice, and mix to combine. Ensure the mixture is piping hot before assembling your burritos (again, you can add a splash of water if needed, to help you heat the mixture without it drying out).
  • To assemble, lay a large flour tortilla on a board, and heap about a quarter of the rice and bean mixture into the centre. Top with your choice of additional burrito fillings - I used grated cheese, lettuce, and sour cream.
  • Fold in the two ends of the burrito, then roll or fold to fully contain the fillings (see blog post for photos if needed!). Burritos are best eaten immediately, especially if you've mixed both warm and cold fillings.

Oh my goodness, these burritos turned out so good. I invented this recipe last night wanting to prepare breakfast burritos for my husband and grandson. It was getting late, so I wanted to fix something quick and easy but tasty. These filled the bill perfectly. I'd like to add here that I needed to prepare these without being spicy. If I'd been making them for me and my daughter, I would add some of several possibilites such as chopped green chilis, salsa, onion, garlic; any number of options you can think of. I'll write up this recipe as I prepared them, but add whatever you like - go wild! I believe these burritos would be perfect for OAMC.

2 1/2 lbs pinto beans, canned, rinsed and drained (40 oz. can)
12 eggs
4 teaspoons chicken bouillon granules
water, as needed
12 flour tortillas, burrito-size (approximately 8-10 inches)
8 ounces monterey jack cheese, grated
black pepper

Steps:

  • Rinse and drain pinto beans.
  • Add to large skillet and mash.
  • Heat over medium to medium-low heat.
  • Add chicken bouillon.
  • Add water to bring to the consistency you desire.
  • Once beans are simmering, add eggs.
  • Break eggs and gently fold into beans.
  • Continue to cook and fold eggs into beans. Do not beat eggs into beans.
  • Cook until eggs are set to your liking.
  • Remove from heat.
  • Heat flour tortillas on a comal or heavy skillet, between 1 and 2 minutes per side until brown spots appear.
  • Remove tortilla to a sheet of waxed paper.
  • Add about 1/3 to 1/2 cup of egg/bean mixture to tortilla.
  • Sprinkle with ground pepper.
  • Add grated cheese.
  • Fold burrito style.
  • Serve immediately or package for breakfasts or lunches.

  • Taco Bell — Grande Toasted Breakfast Burrito (Steak) Calories: 560. This is the highest I’ve ever ranked anything from Taco Bell. My editor is a huge Taco Bell stan, we go back and forth about Taco Bell all the time and while I’m not a fan of the Bell, I understand its appeal.
  • Qdoba — Breakfast Burrito. I had a lot of trouble with this one. I really feel like it should be ranked higher. The eggs look and taste like fresh scrambled eggs out of your kitchen, they’re perfectly fluffy but not so cooked to the point that they no longer have any moisture in them.
  • Sonic — Ultimate Meat & Cheese Breakfast Burrito. Calories: 840. I rarely like anything from Sonic and the chain often inhabits the low end of our other fast food rankings, but they sure know how to make a delicious and decadent breakfast burrito.
  • Chick-fil-A — Hash Brown Scramble Burrito. Calories: 700. Here we are in the top five and we’ve finally now taken a giant leap ahead in terms of flavor.
  • Burger King — Egg-Normous Breakfast Burrito. Calories: 805. We consistently hate on Burger King in our fast food rankings, so I’m always secretly rooting for them to do something well.
  • Jack in the Box — Meat Lover’s Burrito. Calories: 810. Beware! Jack in the Box’s Meat Lover’s Burrito is so greasy that your bag will be wet with grease by the time you get from the drive-thru to wherever it is you’re going to scarf this thing down.
  • Carl’s Jr. — Loaded Breakfast Burrito. Calories: 760. For Carl’s Jr, I was a little torn between deciding to include the Loaded Breakfast Burrito, which features sausage, ham, bacon bits, egg, hash browns, cheddar cheese and pico de gallo or the Big Country Breakfast Burrito, which is the same thing but swaps out the pico de gallo for sausage gravy — a nice bit of fast food innovation.
  • Wendy’s — Sausage, Egg & Cheese Burrito. Calories: 340. I’m a huge Wendy’s head and the chain often ranks on the higher end of our fast food rankings, so it’s a bit of a surprise for us to see it ranked so low.

  • Start by peeling 2 garlic cloves and roughly chopping 1/2 onion. Cook the onion and garlic in a glug of oil over medium heat (you can leave the garlic cloves whole).
  • Once the onion is starting to brown, approximately 5-8 minutes, add 1 can beans (drained and rinsed), 3-4 chipotles in adobo, 1 tablespoon adobo sauce from the can, 1/2 teaspoon cumin, 1/4 teaspoon salt, freshly cracked black pepper, and 1/2 cup stock (or water). Let simmer for a few minutes until heated through and then add everything to a blender, combining well. For a milder batch start with a single chipotle.
  • Take a taste for heat and seasoning. To increase the heat simply add more chipotle. Note: 1/4 teaspoon of salt is the bare minimum for these beans as they usually prefer 1/2 teaspoon of salt. But I underseasoned the beans and eggs in this recipe knowing that there will plenty of salt in the cheese as well.
  • For the eggs, start by finely chopping 1/8 onion and a single de-stemmed jalapeno -- this should give you approximatley 2-3 tablespoons of each. Cook the onion and jalapeno in some oil over medium heat. Once the onion is softened you can add 12 whisked eggs along with a pinch of salt. Cook the eggs over medium heat until cooked through, stirring regularly.


EASY BREAKFAST BURRITOS - ISABEL EATS
Cook for 2-3 minutes, or until the eggs are cooked through. Transfer the scrambled eggs to a plate and set aside. Wipe the skillet clean with a paper towel and set aside. Assemble the burritos: To each tortilla, add in 1/8th of the sausage, 1/8th of the scrambled eggs, 1 tablespoon of chunky salsa, and 1 tablespoon of shredded cheese.
