Sweet& Spicy BBQ Ribs image

Sweet, sticky and with a touch of spice, these bbq ribs will be the star of the show! (if the "show" is dinner, and the "venue" is your backyard). They are so tender they fall of the bone. Right into your mouth. Go ahead. Get some!

2 Tbs paprika (smoked)
1 1/2 Tbs dark brown sugar (packed)
1 Tbs garlic powder
1 Tbs prepared chili powder
1 Tbs kosher salt
1 1/2 tsp onion powder
1 1/2 tsp cracked pepper
1/2 tsp dried thyme
1/2 tsp cayenne pepper
2 Racks St Louis Style Ribs
1 cup ketchup
2/3 cup apple juice
1/3 cup apple cider vinegar
2 Tbs dark brown sugar ((packed))
2 Tbs unsulfured molasses
1 Tbs Worcestershire sauce
1 tsp prepared chili powder
1 tsp smoked paprika
1/2 tsp tsp cumin
1/4 tsp cracked pepper
1 cup apple juice
6 Tbs sauce (from above)
1/4 cup apple cider vinegar

Steps:

  • Take a dull knife, slide the tip under the membrane on the back of each rack, and loosen it. Take the corner of it and pry off the entire membrane from the back of the ribs.
  • Mix the rub ingredients together until well blended.
  • Rub evenly over the top side of the ribs, and massage into the meat. Set aside in the fridge for an hour or so, or overnight if you want even better flavor.
  • Preheat the oven to 300 degrees F. Place the ribs on a foil lined sheet pan, cover with foil and bake for an hour while you make the sauce and mop.
  • After an hour, mop the ribs, and continue to mop every 30-45 minutes or so. The ribs should be in the oven about 3 hours.
  • Remove the ribs from the oven, and baste them with some of the sauce.
  • Heat the grill to medium high and cook them for about 10 minutes, basting regularly with the sauce.
  • Take them off, baste some more and cover with foil. Rest for 30 minutes.

3.5 - 4 lb baby back ribs
1 cup hickory wood chips
3 teaspoons kosher salt
1 1/2 teaspoons pepper
1 1/2 tablespoons granulated garlic powder
3 tablespoons oregano
1 tablespoon chili powder
2 tablespoons brown sugar
2 cups Hot & Spicy Heinz Ketchup
1/4 cup Heinz white vinegar
1/2 cup water
1/4 cup brown sugar
2 tablespoons sugar
1/2 tablespoon ground black pepper
1/2 tablespoon ground mustard
1/2 tablespoon garlic powder
2 tablespoons Worcestershire sauce

Steps:

  • Pre-heat oven to 275 degrees. Add wood chips to the bottom of a roasting pan, add just enough water to barely cover the chips, place roasting rack in pan and set aside to let chips soak. Clean and prep ribs by removing the membrane off the back of the ribs and patting dry. In a small bowl combine all rub ingredients. Using all of the rub, coat ribs front and back. Place on prepared roasting rack. Cover tightly with aluminum foil, making sure to make a tight seal. Roast in oven for 2 hours. In a medium saucepan, combine all sauce ingredients. Bring mixture to a boil, reduce heat to simmer. Cook uncovered, stirring frequently, for 1 hour. Pull ribs from the oven and remove foil. Baste generously front and back with bbq sauce. Raise oven temperature to 350 degrees. Return ribs to the oven and roast another 30 minutes, basting again half way through. Raise the oven to broil. Keeping an eye on the ribs broil until sauce is bubbly and caramelizing, about 3 minutes. Transfer to cutting board, slice and serve.

DH found this recipe on the internet and, of course, he tweaked it a bit to his liking. You can control the amount of "heat" by adjusting the amount of Jamaican Jerk Rub, Hot Sauce and the type of Pepper Jelly used. We used Tabasco brand pepper jelly (red in color) which is not "smokin' hot". They do take a little time to cook, but they really are finger-licking good! The original recipe stated to cook covered for 2 hours, but after cooking that long covered the meat just fell off the bones. We suggest cutting the covered cooking time back to 1 hour and just test for tenderness. The broiling step is very important to get that crispy and crusty exterior that is so delicious. Also, removing the membrane from the back of ribs is a crucial step in achieving tender ribs - it can be a little tedious, but once you get the hang of it you'll never cook ribs again without removing it. Be sure to watch closely while broiling as it doesn't take too long to burn.

Steps:

  • Remove membrane from back of ribs.
  • Combine all ingredients for the rub except cooking spray.
  • Sprinkle the seasoning mixture evenly over ribs on all sides.
  • Line inside of large baking pan with foil.
  • Spray foil with nonstick cooking spray.
  • Bake ribs uncovered for 2 hours at 250 degrees.
  • Remove from oven and cover ribs with foil.
  • Seal tightly around edges so steam does not escape.
  • Return to oven and bake another hour or until ribs are tender.
  • While baking combine all glaze ingredients.
  • When ribs are tender remove from oven and pour off all juices that may have accumulated.
  • Cut ribs into individual pieces.
  • Turn broiler to high.
  • Brush glaze evenly on ribs on one side and place them back in the pan and put under broiler.
  • Watch ribs closely and as they get brown and sticky remove from oven, turn ribs and brush with glaze.
  • Repeat this process of brushing, turning and brushing until all the glaze has been used.

1 tablespoon kosher salt
2 teaspoons smoked paprika
2 racks pork baby back ribs (about 5 pounds total), membrane removed
1 tablespoon extra-virgin olive oil
1 small onion, diced
1 clove garlic, chopped
One 3-inch piece ginger, peeled and chopped
One 10-ounce bag frozen peaches, thawed
3/4 cup apple cider vinegar
1/2 cup packed light brown sugar
1/2 teaspoon kosher salt
1/2 teaspoon Calabrian chili paste

Steps:

  • For the ribs: Preheat the oven to 300 degrees F.
  • In a small bowl, mix together the sugar, salt and paprika. Place the ribs on 2 sheets of aluminum foil large enough to wrap around them and seal. Rub the ribs evenly on all sides with the sugar mixture. Bring the foil up and around the ribs and crimp closed. Place on a rimmed baking sheet. Bake until tender but not falling apart, about 3 1/2 hours. Allow to cool slightly, about 30 minutes.
  • For the sauce: Heat a medium saucepan over medium heat. Add the oil, onion, garlic and ginger to the pan and cook, stirring often with a wooden spoon, until the onions are soft and fragrant, about 4 minutes. Add the peaches and stir to coat with the flavors. Add the vinegar, sugar, salt and Calabrian chili and stir to combine. Bring to a simmer, then reduce the heat to low to maintain a gentle simmer. Add any dripping that may have accumulated on the baking sheet from the pork. Simmer until the peaches are very soft, about 30 minutes. Using an immersion blender, puree the sauce until it is as smooth or as chunky as you like.
  • Preheat the broiler to high heat. Spoon one-quarter of the sauce all over the ribs. Broil for 4 minutes. Remove and repeat the process another 2 times, until the sauce is thick, sticky and golden brown. Serve with more sauce on the side if desired.

1 tablespoon seasoning salt
2 tablespoons chili powder
1/2 teaspoon pepper

Steps:

  • Wash rack of ribs, remove membrane on back, and pat dry with paper towel. You can either leave as a rack and thread onto a spit or cut into 2-3 rib sections.
  • Mix all remaining ingredients until well blended. Rub the mix over both sides of ribs until it's all used up. I sometimes double the recipe to get a really good coating. You can either put in fridge overnight or grill at 350 F right away on bbq over indirect heat. The bbq acts more like an oven this way. The sugar will burn if you grill over direct flame.
  • They will take an hour to cook through.

6 sheets (40 inches x 18 inches) heavy-duty foil

Steps:

  • In a small bowl, combine the sugar and seasonings. Rub all of it onto both sides of ribs. Make two stacks the three sheets of foil and place half the ribs in the center of each stack. Bring opposite long edges of foil together; fold down several times. Fold the short edges toward the food and crimp tightly to prevent leaks. Refrigerate overnight. Remove from refrigerator 30 minutes before grilling., Prepare grill for indirect heat. Place foil packets over indirect medium heat. Grill, covered, for 1-1/2 hours or until tender, turning foil packets over after 45 minutes. Remove ribs from foil; place over direct heat. ½ cup packed brown sugar
2 tablespoons chili powder

1 teaspoon ground cinnamon
1 teaspoon jalapeno seasoning salt

¾ cup apple cider vinegar

1 jalapeno pepper, finely chopped

Steps:

  • In a medium bowl, mix together the brown sugar, chili powder, paprika, black pepper, 2 tablespoons garlic powder, 2 teaspoons onion powder, kosher salt, cumin, cinnamon, jalapeno seasoning, and cayenne pepper. Rub generously onto the pork spareribs. Cover, and refrigerate for at least 4 hours, or overnight.
  • Prepare an outdoor grill for indirect heat, or preheat a smoker to 250 degrees F (120 degrees C). Soak wood chips (apple or cherry are our favorites).
  • While the grill heats up, prepare the mop sauce. In a medium bowl, stir together the apple cider, apple cider vinegar, 1 tablespoon onion powder, 1 tablespoon garlic powder, lemon juice, jalapeno, hot pepper sauce, salt and pepper.
  • When the coals are gray and ashed over, place 2 handfuls of soaked woodchips directly on them. Place the ribs on the grill grate bone-side down. Cover, and cook for 3 1/2 to 4 hours. Add more coals as needed. Baste with the mop sauce, and throw handfuls of soaked woodchips onto the coals every hour. Keep the temperature of the grill or smoker from going below 225 degrees F (110 degrees C). Ribs are done when the rub has created a wonderful crispy blackened 'bark', and the meat has pulled away from the bone. Discard any leftover mop sauce.

1/2 cup cider vinegar

Steps:

  • Whisk together brown sugar, salt, and spices in a small bowl.
  • Line a 17- by 12- by 1-inch heavy-duty baking pan with a double layer of foil, then oil foil.
  • Pat ribs dry and arrange in baking pan. Rub ribs all over with spice mixture and marinate, meaty sides up, covered and chilled, 2 1/2 hours.
  • Bring ribs to room temperature, about 30 minutes.
  • Put oven rack in middle position and preheat oven to 350°F.
  • Cover pan tightly with foil; bake 1 1/4 hours. Remove foil.
  • Make sauce while ribs bake:

1/2 cup (1 stick) unsalted butter
1/2 cup apple cider vinegar

Steps:

  • Preheat oven to 325°F. Combine brown sugar, paprika, cayenne, garlic powder, and 3 tablespoons salt in a small bowl; set aside 1/4 cup spice mixture.
  • Pat ribs dry with paper towels and rub with remaining spice mixture, massaging into crevices. Wrap each rack in a double layer of foil, crimping edges to seal tightly. Place each foil packet on a rimmed baking sheet and bake until meat is fork-tender at the thickest part but not falling off the bone, 2-3 hours. Let cool.
  • Tear open a corner of each foil packet and carefully pour juices from ribs into a large heatproof measuring cup. Let juices settle, then spoon fat from surface and discard.
  • Heat butter in a medium saucepan over medium, stirring often, until it foams, then browns (do not burn), 5-8 minutes. Add juices from ribs and 1/4 cup reserved spice mixture and bring to a simmer. Cook until reduced by one-third, 15-20 minutes. Remove sauce from heat, add vinegar, and season with salt.
  • Prepare grill for medium-high heat; oil grate. Remove ribs from foil and grill, basting with sauce and turning occasionally, until charred in spots, 5-7 minutes. Transfer to a cutting board and let rest 10 minutes. Slice between ribs and serve with remaining sauce.

  • Ribs can be baked 1 day ahead; let cool in foil, then chill. Bring to room temperature before grilling. Sauce can be made 1 day ahead; cover and chill. Reheat over low.
