SAUTEED SPINACH WITH BACON AND ONIONS

Steps:
- In a large saute pan, melt the bacon grease over medium heat. Add the onion and garlic and stir to cook until the onions are very soft, about 5 minutes. Add the vinegar, crushed red pepper flakes, salt and pepper and stir; add the spinach and toss it around, cooking until it's just wilted, 1 to 2 minutes. Serve immediately so the spinach is wilted but not soggy.
HEALTHY/SPICY BARBECUE BAKED BEANS AND SPINACH
I originally got this recipe from Eating Well magazine. It was a baked beans and sausage dish. We were making bbq chicken on the grill, so I figured why not try it without the sausage. My bf said it was way better than the original recipe, so I thought I should post it. Feel free to experiment with the beans. I have made it with white kidneys beans and it is still yummy. If you are watching your weight this is a great, easy to prepare side dish for the summer months! Note: Make sure to rinse the beans it will cut down the sodium in this dish, so don't be afraid of the nutrition facts. I don't think recipezaar takes into account rinsing the beans when it figures the nutrition information.

- Heat olive oil on medium high heat in a deep skillet or large sauce pan.
- Add spinach, garlic and jalapeno and cook until spinach is wilted (3-4 minutes).
- Meanwhile, whisk together sauce, water, paste, molasses, salt and pepper.
- Add sauce, bacon, and beans to pan.
- Cover. Reduce heat to low and simmer for ten to fifteen minutes.

- Cook pasta according to package directions.
- Drain, reserving 1/2 cup cooking water.
- In a large skillet over medium heat, cook bacon until crisp.
- Remove and drain on paper towels.
- Drain drippings but do not clean pan.
- In same pan over medium heat, heat olive oil 1 minute.
- Increase heat to medium-high and add spinach, wine and reserved cooking water.
- Cook and stir until heated through.
- Toss pasta and cheese with sauce.
- Season with pepper to taste.
- Crumble bacon over pasta.
SPICY BACON AND SPINACH QUESO BURGER

- Heat greased grill to medium-high heat.
- Mix meat, spinach, bacon, garlic powder and 2 Tbsp. tomatoes just until blended; shape into 8 balls.
- Cut 1/2 lb. VELVEETA into 16 cubes. Press 2 VELVEETA cubes into center of each meatball; flatten to 1/2-inch-thick patty.
- Grill 5 to 6 min. on each side or until done (160ºF). Meanwhile, cut remaining VELVEETA into 1/2-inch cubes; place in medium microwaveable bowl. Add remaining tomatoes; stir. Microwave on HIGH 3 min. or until VELVEETA is completely melted and sauce is well blended, stirring after 2 min.
- Place burgers on bottom halves of buns. Drizzle with half the VELVEETA sauce; cover with tops of buns. Cool remaining VELVEETA sauce, then refrigerate for another use. (See tip.)

- Preheat the oven to 300 degrees Fahrenheit.
- Mix the chili powder and brown sugar in a shallow bowl.
- Fit a sheet of parchment paper onto a jelly-roll pan.
- Bury each slice of bacon in the chili and sugar mixture; rub both sides to assure the mixture adheres.
- Lay the bacon strips on the prepared pan.
- The bacon strips may be left flat or twisted two or three times by holding each end to make a candied "stick".
- Bake for 30 minutes without turning.
- Always transfer candied bacon using tongs; the hot sugar can easily burn your fingers.
